Thank you! The way he is, I am sure he will have some kind of accident! Hmmm, shepherds pie...that sounds so good! I havent made it in a while. Do you use a recipe? I have one but like to try different things...TIA!

No standard recipe, I just google it and wing it!
 

Ellen, yes, I am still ovenless. I have decided to make a challnege out of it and see how long I can go without it! I do have a working gas range, a grill, and a Breville smart oven (tabletop), plus a microwave, so I am not completely without supplies. Plus, if I want to bake something, I have been borrowing my Mom's oven. Here is a picture of some Zuni bread I baked in her oven on Saturday:

I always give her half of what I bake (if she wants any of it), and so far she has not complained. :laughing:

Princess in Oz, I hope you feel better soon! Chicken soup is good when you are sick.

Aimee, I think I said something on facebook, but I am really impressed with your Alice in Wonderland table! I LOVE Alice in Wonderland. I have quite the collection of Alice stuff. I don't collect any of the Disney Alice--there is just too much of it, I stick to things based on the original illustrations, and books published pre-1950.

Last night I made a tuna nicoise salad using up the rest of the grilled tuna from Saturday. It was easy and good:

WFD: not sure yet. I thought I was going to make grilled (chicken) sausage and pepper subs, but John kind of turned up his nose at that idea this morning. We'll see what the afternoon brings.
 
Marilyn, you are such a good Aunt! But I agree, you are going to need a vacation soon! How about food and wine?

I got a vacation just not the good kind. I have a stomach bug. :sick: I got the whine part, but only toast, tea and chicken broth for the food. :rotfl:

After my marathon weekend I got a bad stomachache Sunday night. I was going to just take half a day off yesterday but I started feeling worse so took the whole day off. Feeling much better today so I may go in later today just to check on things. Registration started yesterday. :headache: What a time to get sick.

Good morning. Another beautiful day on tap here!

The PW cauliflower soup was not as good as I wanted it to be. It just didn't thicken as much as I wanted, and the flavor was good, but not what I expected. I'd love to have Becky's recipe.

I have scouts this afternoon. We get to teach how to build campfires, how to cook over a campfire, and how to put out fires. I should come home smelling like smoke! Oh well, at least this year it's only 3 boys, not 10 like last year.

Dinner tonight will be tuna salad.

I doesnt help that I have to look up to him now...he is 6' now! :rolleyes:

Ok sweetie, I will let you in on a little secret - Matthew is 6'4" and when he was 15 he hit the 6' mark. I would always make him sit on a chair when I was talking to him. Something about shaking my finger looking "UP" at him never worked. :rotfl:

Kat ~ not long now my dear friend. I am so excited for y'all!!! I am so glad to hear Kyle is happy - that is all that matters with our boys!!!!!

Becky ~ you just amaze me. Here is my cheese biscuit recipe. It was my Momma's so believe me it is nothing fancy, but we love them. They sort of remind me of Red Lobster's - kinda! Sorry it took me so long, I kept forgetting to bring it to work with me.

Cheese Biscuits

1 lb. American cheese
1/4 lb. butter
1/3 cup cool water
1 1/2 cups flour
1/2 tsp. salt
1/4 tsp red pepper
1/2 tsp baking powder
1/4 tsp paprika

Cream cheese and butter. Add water. Add dry ingredients sifted together. Let stand in refrigerator for two hours. Roll out thin, cut, and bake in 450* oven about 10 -12 minutes. Makes about 20 small bisuits.

Glynis ~ I have no doubt that Katie will pull it out in the end. You have very responsible kids- they know what needs to be done.


I ended up fixing myself a hamburger last night. Really hit the spot.

Another glorious day. I really do think spring has sprung. Suppose to be nice and in the high 60's/low 70's all week - PERFECT!!!

I just went and looked at PW's recipe and it is really different from the one I use. Here is mine, recreated from memory. If I get home and check it and notice I left something important out, I will come back and correct this one! :laughing:

Roasted Cauliflower-Cheese Soup

1 large head cauliflower, separated into florets
1 large onion, peeled and roughly chopped
2 cloves garlic, peeled and left whole
1 tbsp. olive oil
Salt and pepper to taste

2 tbsp. butter
2 tbsp. flour
½ tsp. cumin
1 bay leaf

1/3 cup dry white wine (optional)
3 cups chicken stock, more if needed
1 yukon gold potato, peeled and chopped

1 cup cream
1 cup grated sharp cheddar or gruyere cheese


Mix cauliflower, onion, garlic, olive oil, and salt and pepper together in large bowl, making sure to season well. Spread onto large rimmed baking sheet and roast at 400 degrees for about 25 minutes, until vegetables are fairly tender and browned in spots.

Melt the butter in a soup pot and stir in the flour. Cook over low heat until the flour is lightly golden—about 5 minutes. Stir in the cumin and cook for two minutes longer, stirring. If you are using the wine, add it now, and cook until it is absorbed into the flour. Add the bay leaf and chicken stock and bring to a simmer.

Scrape the roasted vegetables into the soup pot along with the raw potato. Cook at a low simmer until all of the vegetables are very tender—about 20 minutes. If you don’t want a completely smooth soup, scoop some of the vegetables out of the soup pot with a slotted spoon before continuing.

Remove the bay leaf, add the cream and puree the soup with a stick blender if you have one, or in batches in a regular blender. Add the reserved vegetables (if you are making a chunky soup) back into the pot. Gently reheat the soup (don’t let it boil) and then remove from the heat and add the grated cheese. Stir until the cheese is just melted.

Taste and correct for seasoning as needed. If the soup is too thick, add a little more chicken stock. Suggested garnishes: crumbled bacon, chopped chives, and/or a drizzle of hot sauce.

That soup sounds soo good.

I just ordered my Mom's gift a ice cream maker. I have been wanting one for a while now. I had a gift card left over from christmas :thumbsup2

Sorry to hear about that some of us are sick. I am not feeling the best today I had a small migrane last night. I am having a wonderful lunch of crackers and tea,my tummy always hates me after a migrane:upsidedow

Just realized I haven't posted in several days... time has gotten away from me.

Had a good couple of days, not too much cooking just baking. Had DD's birthday dinner with Grandma and Grandpa at Olive Garden Sunday, DD went out to dinner with girlfriends last night (her real birthday). DS has tech week for Hairspray so eats dinner there, DH and I went to the Prickly Pear for a beer and mexican food. We all gathered for Boston Cream Pie and gifts around 9:30.

Tonight I am volunteering at the tech dinner and bringing a double batch of brownies which are in the oven right now. After I think DH and I will go to Panera for dinner. DD back at college to finish her exams.

Got my menu all worked out for my in-law visit, lots of good food ahead. Hope everyone has a good week if I don't get back until next week.

Janice- A couple of years ago we gave our daughter an ice cream maker for her birthday, it's so much fun. If you like coffee ice cream I can highly recommend Barefoot Contessa Espresso ice cream recipe.

Marilyn- Hope your feeling better soon. This is my husband's busiest time of year and he always pushes himself to far and ends up sick.

Ellen- I love your advice to have the kids sit down when you talk/yell at them! I am definatly tucking that one away. My daughter is 10 and is so close to being taller than me (not yet though!) I'm sure (and hoping) that she'll be at least 6 inches taller than me, her dad is a foot and a half taller than me.

Becky- That bread looks like so much fun to make! Good luck with your oven challange. I did that one year with our dryer, I think I made it around 6 months. Of course everyone complained about the stiff towels, but I said it was exfoliating.

Princess- Feel better.

Lauren- I'll never forget when I got my wisdom teeth out. I was 16 or 17 and my mom decided on the way home she wanted me to teach her how to pump gas. It's probably a good think I couldn't talk.

Glynis- I know Katie's grades are important, but so are all the extra things she does. Most people can get good grades, but not everyone does the extra activities. I'm sure she'll have no problem bringing them back up and I think even the good kids have had enough of school this time of year. Do your kids get out in May or June?

Tonight we are having chicken with peanut dipping sauce, broccoli, and rice. Have a great day all.

Thanks for this reminder! Sometimes I think I do put too much weight on her grades. She is a well rounded young lady, and I have to remember that! I do think, though, that she is taking her studies seriously, now. She's talked to all her teachers and we have a plan in place that will allow her to catch up, stay in control of her studies and still have time for the extracurriculars! If only she can motivate herself to stay organized! Her father and I told her that we would not worry about her bedroom, as long as she keeps her mess confined to her room we won't nag her about it until summer!

We grabbed a burger tonight while running errands. My poor blog has been dark since Easter, I think! I would be really bad at maintaining a blog if my income depended on it :laughing:

Good morning everyone! I have been in kind of a funk the last few days and haven't been on the boards. I think I'm just worn out and actually took a nap on Sunday. I haven't done that in a very long time, but I think it helped some.

Dinner tonight is probably pasta with a Turkey sausage.
