The What's For Dinner Thread - March '11 (recipe index in OP)

Ladies, I have some good stuff I want to ask a favor for but I cannot on a public message board. I am posting on our FB thread.

It's Monday here in Oz, a typical autumn day. Cold and rainy in the morning and the sun is now just shining through for what will be a glorious afternoon.

Aimee - that is a beautiful looking table!


Dinner from last night.

Chickpea Curry

My Starting ingredients:

  • Oil, 2 tablespoon
  • Onions, 2 – I slice one into slivers and dice the other.
  • Garlic, 4 cloves
  • Ginger, sliced.
  • Chickpea, 2 tins of 440g
  • Tomato, 1 tin of 420g
  • Chili powder, 1 teaspoon
  • Salt, 1 teaspoon
  • Tumeric, 1 teaspoon
  • Paprika, 1 teaspoon
  • Ground Cumin, 1 tablespoon
  • Ground Coriander, 1 tablespoon
  • Garam Masala, 1 teaspoon
  • Curry leaves (optional)


Heat the oil in a pot and add the diced onions, garlic and ginger.

Cook on a medium/low heat to caramelize the onions. You’ll need to keep stirring so that the onions and garlic doesn’t burn. When the diced onions start to colour, add the sliced onion to the pot and turn the heat to medium.

Cook for about a minute and then add the chili powder, salt, tumeric, paprika, cumin and coriander to the pot. Keep stirring and frying for another minute.

Add the curry leaves (if you have them, if you don't the dish will still turn out great)…

….and the tinned tomatoes. Stir and allow to cook for 1 – 2 minutes.

Add the drained chickpea…

….and simmer on a low heat for 15 – 20 minutes.

Add the garam masala and simmer for another 5 – 10 minutes.

My dinner, which I served with some Paratha!

Whilst DH and I are having Chickpea curry with Paratha (Indian bread), DS is having Chicken casserole – Asian style, as I learnt in my mother’s kitchen - with the paratha.

My Starting ingredients:

  • Onion, 1 sliced into half-rings
  • Garlic, 2 – 3 cloves
  • Chicken thigh fillet, 5 pieces. You can cook this with chicken pieces as well.
  • Potatoes, 2
  • Dark thick Soya Sauce, 1 tablespoon
  • Light soya sauce, 1 tablespoon
  • Oyster sauce, 1 tablespoon
  • Hoisin sauce, 1 tablespoon
  • Sugar to taste (about ½ tablespoon)
  • Star anise, 1 piece
  • Cinnamon stick, about ½ inch


In a pot, fry the onion, star anise and garlic, until the onion wilts. You’ll need to keep stirring so that the star anise doesn’t burn.

Add the potatoes and continue to fry for 2 – 3 minutes. You’ll need to stir continuously to stop the potato from sticking to the bottom of the pot.

Add the chicken to the pot…

Add water to just barely (under) cover the chicken and potatoes. Add the cinnamon stick at this stage and stir in.

Simmer for about 10 – 15 minutes (longer if you are using chicken pieces).

Remove star anise and cinnamon before serving.

I'll look forward to finding out if you liked it. It is a little on the spicy side...so if you don't like it hot, add less chili powder. And I used sweet paprika.
 
Good morning! It's going to be a gorgeous day here... FINALLY!!! This week we are finally getting Spring! I can't wait!!!

Just getting the kids off to school, and then I'll be off to the store with Timothy! We ran out of so much this weekend, that it's time to stock up, again.

I'm not sure what's for dinner. It will depend on the sales at the stores. I'm in the mood for something light, so if I don't find anything really good at the store, I'm making tuna salad.
 
It's 45 degrees and pouring rain. Absolutely miserable. Snow flurries this morning, supposedly. SNOW! IN TEXAS! IN MAY! WTH?!

I'm over this cold front. I want to be in my PJs at home and in bed but I had an early meeting today =(

Dinner is whatever we can find/buy.

Aimee- SNOW :scared1: It is clammy here but we'll take it!

I took brats out of the freezer and will have some fried onions, salad, beets and whatever starch i can make without going to the store.
 
Yikes, Aimee! I can sympathize, however, since last Saturday, we woke up to 3 inches of snow. Luckily, today, it seems like Spring has finally come!

My dinner menu has changed. I just realized that I have 2 heads of cauliflower that need to be used up. Anyone got a really good cauliflower soup recipe? If nothing else, I'll use PW's recipe. I thought I'd make soup and biscuits. Tuna salad tomorrow.
 
Aimee- 57 and sunny here!!!!!!!!!!!! (let me brag this one time.) The pictures from you tea look awsome, it must have been a lot of fun.

Princess- I think I'll make that this week, but with chicken. I have everything in the house for it except curry leaves, and something tells me I wouldn't find those no matter how hard I looked.

Nancy- I'm sorry I'm not on facebook to share in your good news, so I'm hoping "congratulations" is the right thing to say. I'm glad you were able to help Gail out. Today we began cleaning out my grandmother's house, it's been a year and half now so it's time.

Tonight is something with chicken, that's as far as I've got.

Glynis, I have a recipe for cauliflower-cheese soup that is quite good, but I don't have access to it until I get home. I can type it in for another time once I have it in hand if you would like.

My heart just goes out to you and you SIL. What a wonderful legacy Mike has left. Prayers continue.

Our weekend was a blast but went way to fast. Why is that?? When we got home last night as we were going down the road, Doug remarked that the house was really dark, even the yard light was out. Sure enough when we got home - no electricity. It had been off since Friday evening. So finally after 1am the Dawson guys left and we started warming the house, and freezing the freezer. UGH!!!! Not a great way to end a great weekend. I am sort of tired and crabby this morning. I need a nap!!

Golf league starts tonight - Doug is so excited!! I have zumba so I have no idea when we will even see each other.

WFDT ~ YOYO Doug will probably eat at the Country Club and I will grab a sandwich.

Aimee -- Your tea table looked great! I can tell you put a lot of work into it. I hope the cold front moves out soon. It sounds like we are going to see one of those this week, but no one has said snow.

Princess -- The curry sounds good!

Liam has a baseball game tonight. He pitched in the game Saturday, and he did well. The team lost 11-6, but I think most of the runs came in before Liam did. Most importantly, he only walked two in four innings, so that was good to see. He also got a hit in the game, so I owe him a quesadilla dinner tonight. He needs a few days off, so he won't pitch this game. Dinner is quesadillas for Liam, chicken, corn and rice for Caili, and I have some leftovers from yesterday for me.
 
Glynis – Glad to hear y’all are finally having a touch of spring.

Aimee – I can’t believe the weather y’all are having, it’s been an insane weather year so far.

Ellen – I’m glad to hear you had a great weekend but so sorry you came home to a house with no power.

Laura – I’m sorry the team lost but it sounds like Liam had a good game. Two walks in four innings is great!!!!!
 
Becky - I would love the recipe for the cauliflower/cheese soup, when you get a minute! I made PW's recipe, and so far it smells really good! Alan made whole wheat bread yesterday, so I'm going to make some cheese toast to go with the soup.

Laura - Yay, Liam!!! Sounds like he's improving and still enjoying it! Way to go!!!

Ellen - Sorry about the electricity! That is just rotten! I hope things are ok now!

I'm off to run Katie back to the school for closing night of "Oliver!" She is in the pit orchestra and has had the time of her life. I, for one, am glad that it's about over. Time to focus on her grades. She's not doing so well in half of her classes, and the school year is almost over. She's going to have to bust her bottom to pull things up!

All I did was trim off the top stuff a couple of garlic cloves inside sprinkle generously with olive oil salt and pepper. Wrap it in foil and stick in oven for about 1 hour. Wow that was hard recipe and clean up was horrible too:rotfl2:

WFD was turkey sausages fingerling potatoes and salad.

Good Morning! Hope everyone is doing well! I really have to get on here at least once a day to check in. Not really sure why I cannot do it...I am going to try and catch up today...

Dinner tonight will be chicken, broccoli and pasta along with a tossed salad.

Well, Tom had a wisdom tooth taken out and he is still complaining. I guess the doctor broke another tooth while getting it out...he keeps saying, I think the dr broke my jaw! :rolleyes1 Thank you to everyone for the good wishes. Becky, the dr did not give him any restriction so he was OK with the hot soup...when I had mine out, I had a whole list of things not to eat or do. :confused3

Aimee, Your table was very nice and looked like the affair was going to be so much fun!

Laura/Gretchen, I have to try and keep Andrew busy too. I am hoping that the 3 weeks he is going to NJ and the week we go to FL will be enough.

My DD comes home tomorrow for a couple of days then back to school for her last two finals then home for good. My in-laws are coming on Thursday after a several year absence :rolleyes1 this should be an interesting mother's day. It is opening weekend for my DS's school play too so it will be crazy.

I've already baked lemon bars and pumpkin muffins ahead for their visit. I need to bake a boston cream pie tomorrow for DD's birthday dessert :lovestruc tomorrow we are having dinner with my parents at Olive Garden for the birthday.

yum to homemade pizza. We need better weather here too. It has been yucky for weeks! Rainy...

I helped Gail this morniong host a breakfast. She always invites a group of bikers to her home for breakfast before the CCMC miracle ride but this year she invited a large group in memory of Mike. A friend was taking his bike to ride one last time :sad1::sad1:. I have no idea how Gail is so strong, I am in awe. My SIS Il and I were holding back tears while she followed his bike out. Mike never missed a chance to ride for kids.

What a nice thing for Gail and all of you to do. Hugs.

Glad she had fun! I also see Andrew's grades going down when he has stuff going on. I had a rough year with him but he has such good teachers and guidance councelor that they are working with him. It does not help that he is going through puberty big time. Oy! I doesnt help that I have to look up to him now...he is 6' now! :rolleyes:
