The What's For Dinner Thread - March '11 (recipe index in OP)

The fact that he thought the awards banquet was boring also made me laugh.

The funniest thing was he was saying we should skip it next year, but then he said he was going to be on the travel team, so he really should go. He might get an award. :laughing:

Liam had Beck and I crying today. Have any of you seen the Friday video on YouTube? Liam saw it in school this week (?? They didn't have anything better to do??) and his comments were hysterical. He couldn't believe she was singing about cereal, but his funniest comment was about the rapper in the middle. "Um, the guy is like 50 years old and hanging around the bus stop. Call the cops!" :laughing: (The rapper is younger than I am, so I wonder what age Liam thinks I am...)

This week will finally be my last week at the old job, looking forward to a fresh start in April.

Dinner was roast beef, gravy, roasted potatoes, spinach gratin and green beans. It was good.

Laura Never ask Liam how old he thinks you are!:eek: I remember as a teen one of my cousins ask at my birthday party how old I was. I told him and he said WOW you are almost as old as grandma. Needless to say my grandmother was not in her 40's or even 50's.

Marilyn I have been at Joe's in years I used to love that place.

Ok it is offical I am soo tired of winter I could scream. They are talking about more of the s stuff for this week. I want warm weather so I can have my windows open and sit without my parka on my deck.
 
Happy Monday! It sounds like a lot of us are in the same weather boat. We are supposed to get more snow, too.

Dinner yesterday was inside out egg rolls, and pot stickers. Yum!!!

I have no idea what's for dinner. I'm still sleepy and haven't visited the refrigerator, yet, to see what we have. Off the top of my head, I'm thinking we'll have turkey with mashed potatoes and gravy. But, that could change.

Vic - Love the tile!!! The mosaic tile looks like the same tile my dad used. It's so gorgeous!!! You are going to love it once it's completely done!

Laura - Liam cracks me up! Katie showed me that Youtube video this weekend. My kids couldn't believe that she was singing about cereal, etc. It was funny!

Becky - How do you make your meyer lemon gnocchi? I've done ricotta gnocchi, but I am a sucker for lemon!!!

Aimee - Your brownies looked delicious! I love brownies. To me, they are the ultimate comfort dessert!

Gotta run get the kids out the door!
 

I'm sorry for those of you who are supposed to get more snow. My fingers are crossed that we are done.

Vic- I couldn't figure out why everyone was saying they liked your tile so much, it was covered with a dropcloth. Took me a while to figure out it was the backsplash and not the floor! It looks great.

Ann- So good to see you here, wish you could stay and play. Congratulations on the promation. Glad you had a good time with Maria, hope she's doing well.

Becky- I made the onion tart for lunch yesterday and we were disappointed, half of it ended up in the garbage. I should have cooked the onions longer, but I was worried they would burn in the oven. It looked nice though.

That is good to know, I will not make it.

Glynis, the gnocchi is potato based. I will post the recipe when I get home. It is easy but as you know gnocchi is a little time consuming since you have to roll them over a fork one at a time.

To give Liam a little credit, Laura did ask him if he thought she was older than the rapper and he said no. of course then my dad asked if Liam thought he was younger than the rapper and Liam said "Um, NO!" :laughing:

Isn’t it wonderful to finally meet someone you’ve grown so close to? I’ll never forget the first time I met Lauren, it brings tears to my eyes just thinking about it.

We had way too much good food (and drink ;)) this weekend. At Sheryl's Nana shower we had goat cheese fritters, portobello fries, guac & chips, lobster salad and Sangria. Yesterday we met Lauri D and her DH for lunch with Bethany, Sheryl & Bob and had Bloody Mary's, Margarita's, chargrilled oysters, fried oysters, gumbo, soft shell crabs.....I need to head to the gym and get back on track!:scared1: It was great to finally meet Lauri, she and her hubby were so much fun. Hopefully they will be joining us in October at F&W!

WFD - White beans & rice, grilled Cajun sausages and a salad.

What a great day!!!!!! The kids are as beautiful as you can imagine and so sweet, fun and playful. They did my heart good!
Ann, is all I knew she would be plus so much more. I felt like we were friends forever!!!!
My Mom said Saturday night that great friends are a blessing and Lord knows she is right!!!!

I have a doctors appointment this afternoon and then will be posting some photos for all on FB!

Sheryl - Tell Alexis that something magical happens when a baby is born. Grandma's hearts grow bigger and bigger so that Alexis's place in your heart stays exactly the same size, but now there is a new part that the baby will get. Hearts are magical that way!

Seriously, Katie was the same way when the twins were born. She was only 2 when Jacob was born, so she didn't really know enough to be jealous. But with the twins, she was 5. We had "birthday" presents to Katie (and Jacob) from the twins that she got to open at the hospital. That helped a lot. Alan also took both her and Jacob for some special bonding time while I was in the hospital with the twins.

Hi Ladies. So now I feel bad. John went to the doctor yesterday and he does not have a MOLD, he is really sick! The doctor is not sure if it is just a sinus infection or sinus infection coupled with strep, we are waiting for labs to come back. He has to take 3,000 mg of amoxicillin every day! I have never heard of taking that much before. Hopefully he will feel better soon.

So of course for my misdiagnosis I have been pampering him :laughing: Last night he just wanted pasta because his throat was so sore. I made a really simple spaghetti with parmesean, peas, and black pepper:

Well Doctor Becky :lmao::lmao: I am sorry to laugh:rotfl2:. At least you and your patient will be eating well. Of course in your defense if John was feeling worse instead of better after a few days he should have taken himself into the doctor sooner.

I tried my grandmothers remedy for a ead cold and I seem to be getting better. She would have us breath in some steam from either the shower or a warm pot of boiling water. It was her version of a netty pot. I manged to scrap enough energy to do 2 loads of wash, clean the floors and the bath rooms. Actually that is mroe energy then I usually have:rotfl:

We had Shery's Nana shower today. It was so much fun and we managed to surprise her!:goodvibes

That is great news! Congratulations to him. I hope this is the start of a greater role on the team. Liam was funny about the awards banquet. As we were leaving (an hour earlier than they said we would) Caili was complaining about how boring it was. I was trying to tell her we were only there for an hour and we were supposed to be there longer and it wasn't that boring. Then Liam chipped in, "No, Mom, it was REALLY boring." Okay, it was pretty boring, but the pizza wasn't bad.

Liam had baseball tryouts today and he is convinced he is getting selected in the first round of the draft. The kid does not lack for ego. :laughing:

We had dinner with my parents and Beck and John. We had halibut over baby spinach with a lemon sauce, asparagus and lemon gnocchi. It was delicious.

Sorry that Liam's banquet was so "boring"!! at least the pizza was good. That dinner sounds wonderful!

Today there are two different meals going on for Sunday linner. Mom Dad Laura and Bob are having roast beef, with I am not sure what. John didn't want beef so we are having seared tuna with both red and green thai curry sauces, and apple-ginger wontons.

Okay now I think you need to quit spoiling that man!!! Otherwise he is going to get "REALLY SICK" all the time!;):laughing:

I really want that gnocchi!!

Kathy is right! We had too much good food & drink this weekend!! But what fun!:yay: Those girls really surprised me on Saturday! Another friend picked me up & when we got there, the waiter asked if we were there for the baby shower. I told the boy, No it's just a big group of friends! Then when I saw baby gifts, I was even more confused!!! I am so blessed to have friends like this in my life!!! :cloud9:

Then on Sunday, we were able to have lunch with Lauri D. & her sweet hubby!:yay: Really nice people!! We had a great time! And we convinced Lauri & Bethany to try chargrilled oysters! They both liked them!

But I really did eat too much rich but yummy foods this weekend. Haven't decided on dinner, but it will have to be healthy & light!

I saw the video; I couldn't believe that girl is only 13! I felt bad for all the public comment she got; she is terrible, and the song was terrible, but she's just a kid! I heard someone signed her already :sad2:

I am making Thai Basil Chicken over jasmine rice tonight. Except with turkey instead of chicken. Which I guess is Thai Basil Turkey but that doesn't sound as appealing.
 
Hi everyone! It's so good to finally be back. I've caught up on my work just in time to take a quick vacation to see my sister in CA. Mom and I will fly out at dark-thirty Wednesday morning and will be gone for an entire week. Kenny is staying home with the girls. He encouraged me to go and I'm really looking forward to the break. I know I'll miss him and the kids a whole lot, but I do need a break for myself.

I see we've added at least one more regular poster. Vicb - your kitchen is looking good. I know you will be happy when it is finally done. We had to redo the kitchen floor in my old house and I thought I would go insane before it was finished and the mess was gone.

Sheryl - I'm so glad the party went well. Kat told me about it on Friday and I've been dying to hear about it since. I've never heard of a grandmother shower but I think it is a fantastic idea. It will certainly keep the tired new mother from having to bring everything but the kitchen sink when she comes to visit.

Kat - I saw you got some rain this weekend. Hope it helped your drought conditions. We got a decent downpour on Saturday and it wasn't very long, but at least it washed some of the pollen away.

Laura - I've told you woman. Only admit to the kids that you are 34. Every single year. They think we are old as dirt anyway, don't give them any more ideas. ;) Hope you and the kids are doing well.

Aimee - I didn't have to look at FB for your oven. My Mom has the same kind. She hasn't used the convection feature yet and has never used more than one at the time, but she doesn't really cook much. I have a double convection oven and I love mine. :cloud9: I'm sure you'll enjoy yours once you feel better.

Becky - Yours was one of the few FB news feeds I received. I have been praying as requested and will now add your sick husband to the list. That does sound like a large dose of an antibiotic. Have you gotten your new oven yet?

Ellen - I can't imagine your Pastor taking off during Lent. That must mean that you have everything under control while she is gone. So that only means that you musn't be so efficient from now on and you won't be doing it by yourself any more. ;)

Janice - Driving! :scared1: Honey that does call for a drink in my book. I shudder to think of it myself. I think that will most certainly be a Daddy job. I don't think my nerves could take it.

Robin - Did you start on your remodel? I thought I remembered you saying you were trying to finalize the plans.

Thank you to everyone for the prayers for Paige. She is having a difficult time, but I still think she is doing quite well all things considered. I can't imagine losing my mother at such a young age, but she is a very strong young woman.

Dinner tonight will be the leftover meatloaf and roasted green beans from last night so I can do a final couple loads of wash and pack. I'm trying to leave plenty of clean clothes and frozen meals so Kenny and the kids won't go dirty or hungry.

Not much new to report in the kitchen, tomorrow for sure dishwasher and disposal will be functioning as well as the return of the electrician. Today was tile sealing. I do have water so I can cook. It is sunny but cold (30's) so I think we will grill steaks, bake potatoes and do something with a cucumber. Not too exciting but better than another meal out.
 
I started a multi-quote post on Friday. Lots of multi-quotes and comments. I worked on it a little more on Saturday but fell asleep, then I tried to finish it Sunday but never did. I gave up and started over. :rolleyes:

I think I am all caught up with reading.

This weekend was busy but fun. I need to post some pictures of "down the road". We were planting cypress tree saplings in the wetlands in the Mississippi River delta. I was about 2 hours south of New Orleans, but there was still more river left south of where we were. You can Google "Pilottown" for an interesting read and do an image search of it.

Sunday I gave Lauri the 4-Hour New Orleans Overview Tour. We went to Cafe du Monde, the French Quarter, saw the Mississippi River, went to City Park, Lake Pontchartrain, and Acme Oyster House for lunch with Kathy, Sheryl, and their husbands!

I had not heard about the Friday video. I had to Google it. What in the world?! :eek: It sounds like a mediocre school writing assignment put to song. "I woke up at 7:00. I went downstairs. I had cereal. I went to the bus stop. I saw my friends. I had to pick a seat. I was sitting next to my friend. We went to school. We had a party. Tomorrow is Saturday...." :scared1:

Thai Basil Chicken
2 cups basil leaves, packed
3 cloves garlic
1/2 teaspoon chili garlic sauce
2 tablespoons fish sauce
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 tablespoon sugar
1 tsp white vinegar
1 1/2 lbs ground chicken
2 tablespoons olive oil
1 medium onion, chopped

Place garlic, 1 cup fresh basil leaves and the chili garlic sauce in a food processor (I used my mini chopper). Pulse until finely chopped, scraping bowl one time. Transfer 1 tablespoon of this mixture to a small bowl with 1 tablespoon fish sauce, oyster sauce, soy sauce, sugar, and vinegar. Stir and set aside.

Place the remaining garlic/basil mixture into a cold 12" skillet and set aside.

Place the ground chicken in a bowl with the remaining 1 tablespoon fish sauce and refrigerate for 5-10 minutes.

In the cold skillet with the garlic/basil mixture, add 2 tablespoons olive oil and onions to the pan. Saute over medium low heat and allow herbs and onion to soften.

Once onion is softened, add the chilled ground chicken, and stirring constantly, breaking the chicken up as it cooks. Continue stirring until chicken is no longer pink.

Add garlic/basil sauce mixture that you made previously. Cook about 1 min.

Meanwhile, chiffonade the remaining cup of basil leaves and add to the pan to cook 1 additional minute or so, until the basil wilts. Serve over rice.

I can't believe the rain missed you! I could have sworn the weather people were showing y'all in a severe weather pattern this weekend. Guess I better leave the weather stuff to Kenny from now on.

I'm getting more and more excited about going. This will be my first flight on Southwest so I'm curious to see what everyone's been talking about. Paige is staying home for this trip but is already going on and on about what she wants to do in Disney in October. She missed the last two Disney trips and she's dying to get back, especially for food and wine.

That's what drove me nuts during our remodel. I got so sick of take out. :guilty: But in my small town there aren't many options, so you may have fared better.

My real worry is how Hailey is going to take my absence. She doesn't really have a concept of time so it isn't like Kenny can tell her I'll be back in xxx days and have her understand it. I'm just hoping that if I come back with enough lollypops from See's candy that she'll forgive me anyway. ;)

Tonight's dinner is a pork tenderloin with rice pilaf and squash. Hopefully there will be leftovers for them for tomorrow night. I have a few last minute things to do tonight but for the most part I'm ready to go.

Kenny always laughs at me because anytime I leave him and the kids overnight for any reason, I'm always reminding him where Hailey's Trust documents are and where the wills are, etc. I know that sounds nuts but that is one of the habits I picked up from my parents. Everytime they would leave us for a trip, they would plan like they weren't going to make it back. I remember thinking how crazy they were for doing that and well, here I am. :laughing: I guess it goes to show that if we live long enough we do become our parents. :scared1:
 
Does anyone have a favorite lemon cake recipe they would like to share??

I am thinking ahead to Easter dinner which I am hosting and thinking it will be around 10 guests. I just bought a new bundt pan and would like to make a lemon bundt cake (with glaze?) and a chocolate bundt cake for my desserts. I have a good chocolate recipe but not a lemon one.
