The What's For Dinner Thread - March '11 (recipe index in OP)

Sign me up to the extremely confused club. WTH!

WFD is ravioli with a low cal alfredo sauce(?) with spinach and arugula mix that I had to use up. OH of course garlic bread (not low cal):rotfl2:

I havent seen a lot of the court case with being way ower here but I have tried to keep up.....and I'm sorry, but even with my limited intelligence I could see she was guilty as sin.

As my Na Na used to say " whats fur ye 'ill no go bye ye ".....she will get hers, either here or in the burny fire.

I agree with your Na Na! She may have gotten away with it here, but she still has to face the Ultimate Judge, and I would NOT want to be in her shoes! Until that happens, I picture that baby being held in heavenly arms, given all the love that she was never shown in life.

Yesterday ended up being quite fun! We took the kids to breakfast. I was thinking IHOP, but they chose Burger King???? Oh well, it was something we could eat on the run. Then we took them to a place called Trafalga Fun Center. They rock climbed, they rode some rides, they played laser tag, and they took a spin in the bumper boats, and all ended up soaking wet!

Alan left for work at noon, and the kids and I shopped for our bbq with my sister and her family. I felt really bad not cooking like I usually do, but I just couldn't heat up the house any more!

At 3:00 we went to my sister's house, and had fun making skewers of shrimp, chicken, lemon, peppers, mushrooms and pineapple. The kids had hot dogs! My niece and I prepared some shirts for our Disneyland trip. We're tie dying them this weekend, and I'm a bit nervous about it! While we were waiting for it to get dark, we showed them the documentary that we had made, and they were really complementary! Alan surprised us all and showed up in time for fireworks! He wasn't supposed to get off work until midnight, but it was slow, so they sent him home! We watched several spectacular displays and then drove home. As we were driving home, a storm blew in, and it rained quite a bit. We were glad we had left all the windows open at home, as it lowered the temperature quite a bit!

Today hasn't been as hot, but I'll still be glad when the A/C is fixed! Dinner tonight is sandwiches and leftover potato salad and chips.

Mango Cucumber Wine Cooler
makes 6 drinks

1.5 tbsp. sugar
1.5 tbsp. hot water
1 mango, peeled and chopped
1 cucumber, peeled and sliced
6 sprigs mint, stems discarded, plus extra for garnish
1 bottle dry white wine such as sauvignon blanc
1 cup ginger ale

Combine the sugar and hot water in pitcher and stir until sugar melts.
Add mango, cucumber, and mint. Mash with a spoon a little bit.
Pour in wine and chill at least three hours.
Stir in ginger ale, and pour into wine glasses that are filled with ice.
Garnish with extra mint.

Mmm... that wine cooler looks delish.

Glynis, glad you had a good holiday - even if it was hot! YAY that tomorrow is the AC man day!! :cool1:

My crepes worked great, after a few tries

Homemade Italian Dressing (I used on a pasta salad)
1 tablespoon garlic salt
1 tablespoon onion powder
1 tablespoon white sugar
2 tablespoons dried oregano
1 teaspoon ground black pepper
1/4 teaspoon dried thyme
1 teaspoon dried basil
1 tablespoon dried parsley
1/4 teaspoon celery salt

In a small bowl, mix together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.

To prepare dressing, whisk together 1/4 cup white vinegar, 2/3 cup canola oil, 2 tablespoons water and 2 tablespoons of the dry mix.

My new FAVORITE iced tea recipe - an Aarti recipe:
dinner+024.jpg

Kuwaiti Cinnamon-Orange Iced Tea
For the Tea:
2 large pieces orange peel, plus orange slices for garnish (optional)
1 cinnamon stick, plus more for garnish (optional)
8 black tea bags

For the Syrup:
1 cup sugar
6 quarter-size coins peeled ginger, chopped
6 sprigs fresh mint

Make the tea: Combine 8 cups water, the orange peel and cinnamon stick in a saucepan over low heat and bring to a boil. Add the tea bags and turn off the heat. Let the tea steep for about 5 minutes (no more or else it will be bitter), then remove the tea bags and chill the tea; don't remove the cinnamon stick or the orange peel yet.

Meanwhile, make the syrup: Combine 1 cup water, the sugar and ginger in a small saucepan over low heat and bring to a boil without stirring. Once boiling, turn off the heat. Rip the mint leaves and stalks into pieces and drop into the syrup. Let cool to room temperature, about 20 minutes. Strain the syrup, discarding the mint and ginger.

Strain the tea into a pitcher. Add the mint syrup according to your taste and stir. Serve in tall glasses over ice and garnish with orange slices and cinnamon sticks, if you like.

This is the most delicious pork tenderloin I've ever had:
dinner+030.jpg

Honey-Ginger Pork Tenderloin
¼ cup honey
¼ cup soy sauce
¼ cup oyster sauce
2 tablespoons packed brown sugar
1 tablespoon plus 1 teaspoon minced peeled fresh gingerroot
1 tablespoon minced garlic
1 tablespoon ketchup
¼ teaspoon onion powder
¼ teaspoon cayenne
¼ teaspoon cinnamon
two ¾-pound pork tenderloins, trimmed of silver skin

In a small bowl, whisk together all of the ingredients except the pork. Add the pork and the marinade to a gallon-size zipper-top bag and refrigerate for at least 8 hours or up to 1 day.

Prepare a medium-hot grill. (You should be able to hold your hands 5 inches above the grate for 3 to 4 seconds.) Remove the pork from the marinade, reserving the marinade.

Grill the pork, basting with the reserved marinade, for 12 minutes, turning a quarter turn every 3 minutes. Discard marinade. Continue to cook pork, turning every minute or so, until an instant-read thermometer inserted into the thickest part of the tenderloin measures 145 degrees or the meat is slightly pink at the center. Let the pork rest 5 minutes before slicing.

Grilled Polenta with Corn and Parmesan
1 tablespoon olive oil
1 small onion, finely chopped
1 garlic cloves, minced
1 cup corn kernels
3 cups water, divided
1 teaspoon salt
1 cup stone-ground cornmeal
Additional olive oil
1/2 cup freshly grated Parmesan cheese

Heat 1 tablespoon oil in medium skillet over medium heat. Add onion; sauté 5 minutes. Add garlic; sauté 1 minute. Add corn; sauté until heated through, about 3 minutes. Remove from heat.

Bring 2 cups water and 1 teaspoon salt to boil in medium saucepan over medium heat. Whisk cornmeal and 1 cup water in medium bowl to blend. Whisk cornmeal-water mixture into boiling water; return to boil. Cook until polenta is smooth and thick, stirring often, about 30 minutes. Stir in corn mixture.

Brush 11x7x2-inch dish with oil. Spread polenta in dish. Cool completely. (This can be made 1 day ahead- just cover and chill).

Prepare barbecue (medium-high heat). Brush grill with oil. Cut polenta into 12 squares. Brush both sides with oil. Place on grill; cover grill. Grill until polenta is golden brown, about 3 minutes per side, sprinkling with cheese during last minute. Serve hot.

Princess- years ago, when my kids were little I used to love having dinner on a Friday night at my Mom's. My Aunt used to spend months at a time there and she would make crepes for dinner. My Mom was a one pot comfort food woman and my son is still telling me how much he misses coming home to my Mom's beef stew or her "bubbaloo" (American chop suey) Enjoy your meals at your Mum's :goodvibes

Ellen- July 28 is so far away, I hope you find out today!

Well shoot - we are going to have to wait till at least Aug 3, that is her next appt. They weren't able to see anything. But we have some really neat 3D pictures of the little scoot. On one of them she (I keep hoping) has her little hands up by her eyes. You can see her legs, arms and fingers. So neat - I cried!! Sort of made it really real - I hope that makes sence.

I am loving all of your food porn ladies. I realize I am a BORING cook. I really need to branch out.

Glynis ~ I hope you are all nice and cool today.

We got hammered with rain, lightening and wind last night. The roof was fine - no water anywhere! Woohoo!! But there are branches and leaves everywhere. The radio is saying parts of the county got 4 -5" of rain.

WFDT ~ Grilled Tiliapa with fresh mango salsa (thanks Laura), arugula salad with a tomato vinegarette, sliced cucumbers and black raspberries for dessert.

Make it a great day my friends.

Whe I had the boy almost 11 years ago it was still the old school scans. You could see the arms and legs but that was about it.
I had to get lots of scans done because of how he was lying and I had one done about a month before he was born.
The nurse put the camera thingy on my tummy and we both jumped in shock because it was obviously right on his wee face.....it was unbelieveable,so clear.
When he was born I remember lookin down and seeing the face I remembered,it was like I had met him before.,it was so cool.

Now I've not told DH or anyone this but we never knew if I has havin a boy or a girl and after that scan I prayed to god I was having a boy because if if it was a girl she wasnae very bonny !!

 :rotfl2:

The last part of my post sounds bad,I want to clarify that my boy is and always has been gorgeous but he has always looked like a wee boy....:)

I knew what you meant, made me laugh! ;)

Dinner tonight will be fish and roasted veggies. Brought home 4 zucchini and 1 yellow squash from my cousins and also have lots of beets still.

Hey y'all! Of course I went awol again. :guilty: Just rarely can find a spare minute to get here.

Ellen, Your going to be a GrandMother again?!!! Woohoo! Congratulations!

Jude's Christening was wonderful!:cloud9: Everything went off like clockwork. Jude did well especially for such a long day.

We had family over for the 4th. BIL did all of the grilling, so it was nice. I was just really wiped out & hurting Monday evening. Can't wait to get an injection next week.

Haven't been doing a whole lot of cooking, mostly different kinds of salads.

Vickie, Your right your lad is all boy, but sure is a very good looking boy!!!

Dinner tonight will either be salad or take out. DD is working late plus this morning she tells me that "WE" have started to try to get Jude to self-soothe! i.e. put him in his bed to sleep, if he cries, let him cry, I can go in & talk to him & pat him, but no picking him up nor giving him his pacifier!!!

Tried twice now, after 10 mins, then 15 mins. of screams, I picked him up. He had worn himself out crying & both times almost immediately fell asleep. Nana isn't liking this "new style" parenting very much at all!

Ellen, glad your roof survived the latest deluge!
Lauri, hoping that your Dad gets some answers. Sorry you are not feeling well.

WFD: asian noodle soup with tat soi.

Edited to say that Aimee, all your food looks good! I am going to make the iced tea recipe--John's been really into iced tea lately.
