The What's For Dinner Thread - March '11 (recipe index in OP)

Doing a quick check in.

WFD is burgers and the onion jam Aimee posted the other day. I bought catfish for tomorrow's dinner I have my shopping done for Easter I think. I have to go through everything to make sure.

We are supposed to have more heavy rain and possibly storms tomorrow.Not a happy person here. My hands have been so swollen the last couple of days. Don't worry it is only my arthritis.
 
Nancy -- I am sorry to hear about Buddy's mom. I hope everything works out.

after watching DIY network enough times, my daughter can't wait to help tile the bathrooms.

I love picturing you and Caili going to Liam's practice in your jammies. Good for you, but please don't have a flat tire or something.

No flat tire. I actually woke up early today because there was this bright yellow light shining in my window...oh yeah, the sun! My hair was not dry, but I was showered and dressed. Caili was in her pajamas...by choice. My kids think Applebees is the greatest. We have only eaten there once, but the one time was when we were in an unfamiliar environment, we were all starving and out of the darkness, the Applebees sign shone like a beacon.

Princess -- Our family dinner is always Sunday. The food looks great. I wouldn't want to miss it either.

Janice-- I hope your hands feel better.

I woke up today with a sore eye. I think some sinus fluid drained into the area under my left eye. Gross, I know! I think I am going to look like I have a black eye by tomorrow. Excellent...especially since I have a baby shower to attend on Saturday.

Dinner tonight was burgers, sweet potato fries and pickles.
 
OH OH OH I am so dern mad - Guess WHAT!! It is snowing out. :eek: We are to get - GET THIS - 4 -6" of the D@$^ stuff. Sorry can ya tell I am not liking this!!!!! Oh and I just heard Thunder - what is up with that???

I saw that on the Weather Channel, this weather is downright crazy. It was 87 yesterday here and in the 60's today. :sad2:

Marilyn- I don't know much about cameras either (or getting taxes back!), but have fun with it. I do love not having to worry about wasting film anymore.

Me too. Especially when I am trying to take a picture of birds through wire mesh. :rotfl:

Congrats on the new camera!! I have been dying for an SLR...

It's great. Took some really cool pictures while riding down the road. I was able to get a really nice one of a barn and silo with a tractor in front of them. Really nice since we were doing about 80 at the time. :rotfl:

Where did you get those racks from? I have been trying to find something like that for the inside of our pantry and have only been able to find single shelf ones.

Buddy's Mom is in the hospital again adn we got a frantic call from his nephew.

I probably missed a lot. Still recovering from my "vacation". :rotfl: Got back from my DB's Tuesday around 4:30. Laid down on the couch and slept 3 hours, got up, had dinner, went back to bed about 12 and slept until 10am yesterday.

Didn't sleep much the night before as my DN decided she didn't want to sleep with my DM and slept with my DSis and I. The hotel we stayed in was booked solid and all they had left were two rooms with king size beds. DN didn't stay still the whole night. :dance3:At one point I thought I was going to fall out of the bed. :headache:

Yesterday I took the two girls and my godson to the DC zoo. It was hot and crowded but a pretty nice day otherwise. Didn't get home until 9:30 last night.

Will post pictures as soon as I can on FB. Dinner tonight will be whatever takes the least amount of time and does not involve the drive-thru. :thumbsup2

Gretchen – Thanks for the offer to send me some family.:laughing: How is your sweet Mama doing?

Robin – With each passing day I’m less sad about not hosting Easter dinner. I usually cook for two days for just the three of us and am exhausted by Sunday. Looking forward to having a big Easter feast with all of the boys and their families and not having to cook or clean!!!!!

Ellen – Johnny & I actually prefer sitting at the bar in some restaurants. No wait and the bartender is close by.;)

Janice - I’m sorry you’re suffering from the arthritis. Hopefully the storms will not pass through.:hug:

Laura – That eye situation sounds painful, take care.:hug:

Target. I think they were around $15 each. There are two of them mounted side by side in that picture. I did not mount them myself. Anytime I want to do something involving power tools, I just send my brother a facebook message to let him know I am thinking about various repairs using power tools. He comes banging on my door within 15 minutes to do it "his way." What a coincidence ;)

Here was dinner--potato-vidalia onion hash brown cake topped with bacon and poached egg. This was a dinner idea that Laura came up with on the phone tonight, I just executed it :laughing:

I'll have to look there again. I've tried a couple kitchen stores and couldn't find something with more than one or two shelves to it.
 
Vic- I used to work at an inn and when reservations were taken dietary restrictions were noted. Well I can't tell you how many people said they were vegetarians, until they saw bacon was on the breakfast menu.

Gretchen ~ Enjoy that new house with all of your family this weekend. You so deserve it lady. I bet Hailey is loving the playroom as well as her Momma.

Thank you. She is and so is Amanda and her friends when Hailey isn't having therapy in it. It's not finished yet, but we've run out of $$$ to finish all the projects we want. We're doing it a bit at the time and hopefully I'll live long enough to see it finished. :laughing:

I didn't even know you had an arthritis problem. :hug: It runs in my Dad's family and several members have had it, some quite severe. I know his was fairly mild but he took medication for it from about age 50. Take care of it and see a specialist.

I've never heard of that and I have horrible sinus/allergy troubles. I won't ever complain of my swollen sinuses making me look like Frankenberry again. I hope that goes away soon. :hug:

Welcome back. I'm glad you were able to catch up on your rest. Kids don't generally make good sleeping partners. I went through something similar with my youngest niece in CA. She wanted to sleep with me several nights and at least one of them I woke with her foot in my face. :laughing:

Mama is doing just fine. She will be spending this weekend with her fiancee. His family isn't doing an Easter dinner but he and Mom will be spending the weekend getting things done on the house they are building. I think they have to select and purchase the light fixtures and other stuff this weekend. She is now to the stage where she wants it over. They are planning on being married after the house is done, so it looks close.

I'm glad you're ok about Easter dinner, but I can still ship a family member (or five) there if you change your mind. ;)

Dinner tonight is pizza, pepperoni for the kids and shrimp and proscuitto for Kenny and I. I am having to revamp my Easter menu a little because I just last night received the information on BIL's dietary restrictions. I have been asking for this information for over two weeks, but I guess better late than never. So I either need to change several dishes or make separate things for him. I'm not sure yet which way to go. Kat, are you sure you don't want some extra family for the weekend? :rolleyes1

Janice ~ We woke up last night to violent storms. The lightening was awful!! One went through around 2:30 a.m. then an hour later a worse one went through. You should be getting them about now. Sorry!! But if it's any consolation the sun is shining now and 65. I so hope it calms down so your hands feel better.

Laura ~ Oh sweetie you eye sounds so painful. Don't worry about what others think - just get better and enjoy your weekend.

Gretchen ~ I totally understand doing projects a little at a time. I have lived on the farm for almost 20 years and really just now getting things updated. Seems one of the kids always needed someting about the time I had a couple of nickels or we needed to go to Disney. ;) I've always said that I could have bought and paid for a new house but we traveled the world with our kids. Those are memories you can't put a price tag on. You'll get there!!


Well we have finally made it to Good Friday. YEA!!! All bulletins are finished, sanctuary has been stripped, and Easter Lilies are all ready to be placed after services tonight. Now all I have to do is sit back and enjoy the weekend.

Matthew is on his way home right after his last class. He will be home in time for dinner and then services. We are so excited!! This will be the 4th time he has been home since last August. That is way too long. We are so looking forward to having him home for a bit. He posted on his FB page yesterday "Matthew Cunningham ------ Is homesick, can't wait to head west tomorrow". Oh my, darn near broke my heart.

We will have 18 at our house for Easter Dinner. Everyone is bringing something so I don't have all of it to do. The house is clean so I really do intend on just enjoying my weekend as soon as Noon comes and I can get out of here.

I probably won't be on again until next Monday, So Easter Blessing to you all.

Home stretch! This is actually a pretty slow week for me but my close friend, who is the pastor's assistant, is on the verge of a breakdown this week. The three back to back services, combined with the daily noonday stuff, has the pastoral office crazy busy.


I think we're going to just go out to eat with some friends after the service tonight.

EXACTLY!!! That is how I feel right now. And I am the ONLY office staff.
 
Becky – That egg dish looks awesome!!!!! How did you make the hash brown cake?

For four large cakes, I boiled three peeled and chopped russet potatoes until just tender, then drained and tossed with a very large chopped vidalia onion. Seasoned with lots of salt and pepper, then cooked in a skillet with some butter for about 30-40 minutes, until really well browned. I didn't form them into cakes until the potatoes were almost finished cooking, so that all sides of the potatoes could brown. Then I moved the cakes to a baking sheet fitted with a rack and blasted them in a hot oven for about 10 more minutes, to get the extra grease to drip off. Blotted with paper towels and that's it!

Thanks for all the well wishes. My eye is feeling much better today, although still a little sore. It doesn't look bad though.

Dinner tonight is quesadillas for Liam, a sandwich for Caili and pan-seared sole for me. I am trying to get away from the three different meals thing, but I don't want quesadillas and Caili won't eat them.

I probably won't get back here again until Sunday evening, so happy Easter, my friends!

Awww, that is so sweet what your DS posted on FB. I always love to read when my college DD posts something positive about coming home or us coming up for dinner. I hope you have a great weekend with him and all your other many guests!

My DD and roommate arrive home tonight in time for dinner. Bringing laundy and homework as they have finals in just one more week. DD has a job lined up for the summer and is registered for 2 classes at a local college so that is all set.

I already have done a boat load of cleaning today and baked a turkey breast to serve with my ham Sunday.

WFDT = grilled veggie kebobs, grilled chicken breasts (for those who eat/want meat), rice pilaf, fresh fruit and rolls. Dessert is either Girl Scout cookies or Dove ice cream bars. I am baking 2 cakes for Easter so not baking anything else this weekend!
 
I had to go back to the store today for carrots for the carrot cake. What a goof I am. How could I forget carrots.:confused3 So $27.00 later I think I am all set now.:lmao:


Wfd is blackened catfish with dirty rice and broccoli.
 
Thank you ladiesfor all of your kind words. Buddy isreally freakin grouchy today adn I know that it is because he has no idea what is going to happen. I cannot get into the rehab to see her because I have two full days ofcommitments that I made. This evening I am sitting at Welby's so they can go out to dinner. THank goodnessthat Marisa came by with Kady and her friend, they all make Easter decorations and then we had Mickey D's for dinner.

Nancy I always blame the keyboard for any and all mistakes. ;) I am praying for guidance and minimal trouble for Buddy. I am sorry to say I think he is going to need all the help he can get. :hug: Families can be a blessing and a curse.

Dinner tonight was really good. It is amazing that I can cook with a idea and it turns out sooo good. Yes I think I hurt my arm patting myself on the back.
Kitchen is all put back in order and ready for baking tomorrow.
 
Just in case you haven't seen it on FB, yet: Wendie's grandmother passed away tonight. I know she could use our prayers, etc.


Nancy - Our dinner was McD's, too! Too busy dyeing 4 dozen eggs to cook anything else, besides, the faint smell of sulphur was getting to me!
