Winner Winner Chicken Dinner!

So here's my take on the Roasted Chicken.

I peppered my bird first, then laid strips of bacon on top. I didn't use any salt since I figured the bacon would take care of the saltiness.



I set it in the oven on a 40 minute delay bake (because I had to drive Darcy home and that takes about an hour). I set the oven to 350 degrees Fahrenheit. At 30 minutes into cooking, I basted it with some Beef Stock.



Overall it cooked for about an hour an a half. I checked it with an instant read thermometer until it was 165 inside.



On the plate, I covered it with aluminum foil and let it sit for 15-20 minutes while the zucchini boats finished cooking. Meanwhile I thickened the pan juices with a little slurry and made a brown gravy. Since we didn't have any potatoes (I was just too tired) we dipped the chicken in the sauce.

The best part about roasting a whole chicken. Chicken salad sandwiches for brunch, served here with Chips (or crisps depending on what country you're from) and a pickle.

For me it was fine. I'm supposed to be on a lower sodium diet for Blood Pressure. Fran on the other hand asked for the salt shaker.

Pasta might be a good one for the last weekend in May. Let's see what the others think.

Pasta is fine with me let's just narrow the parameters. Such as Spaghetti Bolognese (everyone's variation on sauce), or lasagna, or baked noodles (perhaps agree on the noodles), or seafood and pasta, or even a stuffed kind of pasta. I'm just thinking there are so many variations on pasta we should all be cooking from the same chapter of the pasta book and see hiw our recipes differ. If we don't narrow the parameters we could all be cooking something completely different and in no way similar. I like seeing the variations on a theme, in everyone's reicpes. Did we ever get Kimmar's pepper recipe?
 
Amd BTW, your chicken looked really good PIO. We don't normally do breasts around here. I prefer the dark meat so I'm a thigh girl, but I might try that preparation next time we do thighs.

That isn't memorial weekend is it? Our entire family is coming in for the weekend to celebrate my BIL's college graduation and DD's first birthday! We'll be having 4 or 5 big meals! I'm so hoping for good weather!

But anytime before or after that I'm definitely down for pasta. It is delicious! :goodvibes

The last day of May is 31 May....a Saturday. So the last full weekend in May IS the 24/25th May; which puts it as Memorial weekend.

We could pick the 31 May/1 June as the weekend for the "pasta" 2D sharing dinner.

No! :worried: I was hoping we would do the full weekend before! I see that's a problem for memorial day weekend folks, but I'm at WDW! I don't think I could do a WFD Pasta thing at WDW!

Well whatever, which weekend we pick, if it is the 24/25 I will play if it is 31/June 1 I will be out....
 
The May 31/June 1 weekend works for me...our church has their annual carnival the weekend before, and I will be stuck in the ticket booth for four days, so cooked meals around here will be scarce...everyone will pretty much be on their own.

I'm not going to Epcot. I'm going to DHS for SWW. We have a VIP package booked for Friday and since we might get most everything done Friday, Saturday might just be for getting character pictures, but we're thinking DTD later to see Maleficent.

....and, while we're at it, why don't we pick baked ziti? Or, some kind of ziti dish?

We could either weekend. I am planning on having a big ziti dinner one of the nights and/or going out for Italian food.

WFDT: PF Changs! We ordered take out online so we're having the sriacha shrimp app, lo mein, orange peel chicken and I need to pick up a bottle of wine. ;)
 
How about we aim for the 31 May/1 June for most of us?

Alison can cook her pasta on the weekend before and post before she heads to the Universe Far Far Away weekend.

Seems like we are settling on Baked Ziti as the recipe/dish of choice.
Alison - the alternative will be lasagna or a baked pasta dish; with meat.

Hopefully Ellen will check in and we can see if Doug is happy to eat that. ;)

Anyone else in?
 
I think I'll pass on the dinner this next month. I just realized that there is only weekend in May that I will be home, and that's the weekend.

First weekend we are on the road trip, second weekend we are still on the roadtrip.

Third weekend we fly up to the Bay Area Saturday for a tour of Pixar Studios, spend the night at my parents house and fly back Sunday afternoon.

So we have one weekend at home, the fourth weekend.

Then Wednesday we fly out to WDW for the next week or so! :scared1: I didn't realize that I had booked myself so tightly!
