The What's for Dinner Thread- June 2012 (recipe index in OP)


Remember our Pepper cook-off? I think it might have been Ellen's DH asking what we were cooking next month....


....so we did a quick whip around for what to cook and decided that a roast chicken dinner on the last weekend of the month might be in order. Are you in?


We might need to work out what we cook for the last weekend in May soon. :rotfl:

That's the beauty of it all. All you have to do is a (roast) chicken dinner. You get to cook it how you want. :thumbsup2

It's Good Friday today and I really must remember not to have any meat today. We're "meeting" friends for breakfast so as long as there as I remember to not order ham or bacon, I'll be fine.

I got some seafood mix from the supermarket last night so I'll be planning a seafood pasta for lunch.

WFDT? We'll be having fish and chips.

He's wanting to go to New England Institute of Technology for Electrical. He's been taking electrical for the past 4 years in high school (he goes to a tech HS). And he'd like to continue his studies in this field. It's close to home (East Greenwich/Warwick RI) maybe a 45 mins drive. We're all excited. Can't believe he's at this point in his life already. I mean I DID just give birth to him right??? Man, time flies.

WFDT? I have NO CLUE!!! I usually plan my meals out for the week and I had grilled chicken, baked potatoes, veggie down for today but now my oldest is working and my youngest is going camping at a friend's house overnight so it's just the two of us. (I don't usually like to cook a whole meal if it's just us for some reason, who knows) But if he still wants chicken, then I'll make that. If not, we just might order out.

I am off today at noon (Good Friday) and Doug and I are taking Ethan out to lunch - his pick. He picked Taco John's - Yuck!! But we will make the best of it and have a great time. They don't eat out much so this is a real treat for him. Then I am going to go get a pedicure - oh my do I need it.

We are going to Stephanie and Marty's for Easter and I have an Easter egg hunt ready for the Grand babies. Got their Easter baskets all ready last night. As you can tell - I love Easter!!

I want to wish all of you a Blessed Easter. ENJOY!!

Sounds good but the nearest one is over an hour away. So I think I'll pass. DH and DS18 just ordered something, so maybe I'm off the hook for dinner :thumbsup2

We have two near us....less than a mile or two away....

Pasta Marinara


Seafood for Good Friday!


My starting ingredients:




  • Penne pasta, 400 g
  • Olive oil, 2 tbs
  • Minced garlic, 1 tsp
  • Marinara seafood mix (fish, calamari, prawns and mussels), 650 g
  • Parsley leaves, chopped
  • Red Chilli, 2, sliced
  • Stock and/or white wine, 100 ml or so
  • Butter, 50 g
  • Salt and black pepper to taste




Cook the penne in a large saucepan of boiling salted water as per instructions until al dente.

Meanwhile, heat the oil in a large frying pan, cook the seafood (in batches) for a couple of minutes on each side until just cooked. Transfer to a separate plate.






After the seafood has been cooked, add the garlic and sliced chilli. Fry for 2 minutes.






Pour in the stock and/or white wine and bring to boil.






Add the seafood mix and butter, then cook for 2 - 3 minutes.







Add the drained pasta and parsley to the pan and stir well to combine.







Season with salt and black pepper to taste.

I might not be able to play, unless it's something I can make from my Villa at WDW. :cool1:

I had to get over that when it was just me. It helped me really get over my divorce to realize that I, me, myself was worth my cooking dinner. Eventually the kids will leave the nest and unless you want to eat take out, fast food, and frozen meals once the kids are gone, realize that you and the hubby are important enough that you can make something for the two of you. :goodvibes

Tonight we are having Philly Cheesesteaks with our leftover Prime Rib from last week. Unfortunately we had a late lunch at Souplantation and neither of us are very hungry, however, my hunger is finally starting to grow.
 
We ate out tonight. Just DH and me. DS? Who's that? Oh wait....he's at school camp. :rotfl:
