PIO - My Birthday was last Friday, can I come and eat dinner?

Last night was stir fry, cabbage, snow peas, carrot and broccoli...

PIO ~ Oh.my.goodness. That meal might be simple by your terms but it looks absolutely delicious.

Brandi ~ Happy belated Birthday.

Well when Doug went out to do chores this morning he came back in completely drenched. He looked like a drowned rat - I just laughed. It was raining - ALOT!! But as I am sitting here at my desk it has started snowing. Each time I look out it is worse. I can hardly see the houses across the street. The snowflakes are huge and heavy. It is suppose to do this all day until later tonight. The last time we got snow like this we were out of electricity for 3 weeks. It was awful!!

WFDT ~ Baked pork chops, creamed lima beans, and avocado salad.

Ellen - I don't know if there is kangaroo bacon or not. I highly doubt it. It's just Kimmar's and my joke about the type of bacon we have here.
Hope that it stops snowing soon and that Doug is fine from the drenching.

Friday night. So ready for this weekend. 3D life has been busy so far. :faint:
 

Friday already?.......This week has just flown.

I just can't believe it is Friday already. Where does the time go anymore? I sure could use a few good thoughts and/or prayers for tomorrow. The funeral will fill the church and then some. We are preparing for 250 for lunch. And this is one that there will be every bit of that here. We are kind of worried if the Church will hold everyone. I will just be glad when it is over. I think this will be my last year of being Chairperson for the Courtesy Committees. I just don't have time anymore.

The snow quit about 2:00 and it is all gone. The sun came out and the temps went up to 40. I can handle storms like that. Plus we got quite a bit of moisture so that was great.

WFDT ~ Butternut squash soup and grilled cheese sandwiches.

Make it a great day and a wonderful weekend.

No peppers for me tonight. We're going out to dinner. And not really a fun one, but I'll take it if I don't have to cook. Tomorrow is peppers.

Here's that Meatloaf Recipe that I promised you.

Meatloaf

1 lb ground beef
1 lb ground pork
½ green pepper chopped
½ onion chopped
½ cup crackers crumbled
8 oz cheddar cheese cubed
6 oz spicy V8 juice
2 eggs
Salt and Pepper to Taste
Dash or two of tabasco sauce
Chili sauce

Preheat oven to 350F. Combine first 10 ingredients in a mixing bowl. (Everything but the Chili Sauce). Place meat mixture on a cookie sheet with a lip and form into a loaf. Bake in preheated oven for 35-40 minutes. Top with Chili Sauce and return to oven for another 10 minutes.

The Roasted Peppers Weekend




The Diners decided it was time to have the Great Roast Pepper Weekend. About a month ago, we agreed to all cook the same meal on the last weekend in March. I don’t know about anyone else, but as I cooked this meal, I thought of all the other diners on this thread and wondered if they were having as much fun or having the same experience of holding each diner in their thoughts.


My starting ingredients:







  • Red Bell Peppers - 4, with the top and seeds cleaned out
  • Cooked rice; I started with 1 cup of uncooked rice
  • Carrots - 3, diced
  • Celery - 3 stalks, diced
  • Leek - 1 stalk, diced
  • Salt, pepper and Mexican chilli powder - to taste (not shown)
  • Tomato sauce - pasata style, 1 bottle (not shown)
  • For the meat lovers - mince beef, 300 g
  • For the meat lovers - thyme
  • For the vegetarian - 4 bean mix, 1 tin
  • For the vegetarian - dill (not shown)
  • Oil - 3 tablespoons (not shown)




Fry the leek in a large frying pan with some oil for 3 - 4 minutes.






Add the diced carrot and celery and fry for another 3 - 4 minutes.






Add the cooked rice to the pan.







After stirring the rice into the mix, season with salt, pepper and the Mexican chilli powder.






I have the challenge of having to make a meal for the vegetarian and for the meat lovers in the family. So, this formed the basis of the core ingredients for the two versions.







I started on the meat version first. In the frying pan, heat up some oil and fry the meat for a couple of minutes.






Add some tomato pasata and cook for 4 - 5 minutes.







Season with the thyme and salt.







Add half of the core ingredients to the meat sauce.







Mix well and use it to stuff two of the peppers.







For the vegetarian version, I heated the beans in the frying pan.







Add some tomato pasata, dill and cook for about 3 minutes.







Add the remaining core ingredients to the bean sauce.







Mix well and use this to stuff the other 2 peppers.







Place the peppers into a preheated oven; and cook for 50 - 60 minutes at 180 C.







My dinner! I served the meat pepper with a garden salad.

No stuffed peppers for us either... David's mom and her husband are coming to town and we are driving down to see them so we will be eating out.

Here's mine.

So the first step in the pepper process is to cut the tops off of the peppers, clean them and boil for a minute or two so that they are parcooked.



Meanwhile, I sauté the ground beef with chopped onions and the chopped pepper tops. Then once it has cooled I add the rice and a beaten egg.



Fill the peppers with the meat mixture, and at this point, I freeze two of the batches.



For the ones I plan to cook, I pour a can of Campbell’s Tomato Soup and a can of Tomato Sauce. Bake for about half an hour. In the last ten minutes of baking sprinkle with shredded cheddar Cheese.

 
That's a great looking pepper as well, Alison. DS added cheese to his when it came out of the oven.


I almost added an egg to the meat one I made. Next time.
