The What's For Dinner Thread - Feb '09(recipe index in OP)

Thanks, Glynis. There are going to be busy nights where we don't have time for anything else, but I really feel like Liam needs more variety in what he eats. He is getting into that boy stage where he is hungry all the time.

One of Caili's friends did this last year, and the kids all had fun. The only problem was that they invited too many kids (the friend is a twin) and they were still pulling pizzas from the oven as the parents were arriving to pick up their children. If you keep the guest list small, it should be manageable.

I know what you mean. I was surprised to find that my kids LOVE hummus! I would never have expected that, but was pleasantly surprised. So, now I keep hummus on hand with some pita chips for an after school/before dinner snack. It keeps the kids filled up longer than other snacks, and they love it!

I agree with keeping the guest list small. We had 11 kids there counting my twins. I was able to cook 4 pizzas per cookie sheet, so it did take some time. It also helped that Alan was manning the oven while I helped with the salad and cookies. He was able to get the cookie sheets out of the oven, and get the next batch cooking in record time. If we'd had more kids, though, it could have been a disaster!
 
It's snowing again! I can't believe this!!! Weatherman says we should get snow all day today and most of the day tomorrow. I'm hoping this is the last storm of the season.

So, because it's cold and yucky, we are going to have chicken enchilada soup with mini cornbread muffins tonight.

I woke up this morning with a minor ear infection. Not what I need when I will be flying in a couple of days. I called my OB to see if it is one I am able to take anything. They want me to come in and have it checked just to be proactive. So off we go this afternoon to an impromtu Dr. visit. I hope it is just in my head, but I feel better it being checked.

I woke up this morning with a minor ear infection. Not what I need when I will be flying in a couple of days. I called my OB to see if it is one I am able to take anything. Smart woman, Ann, to get it checked out before flying. You really don't need that on top of flying with a little one. I hope that they can do something for you!
 

Please keep my Mom in your prayers all the changes at the hospital are still so unsettled & it's breaking her heart. I really don't know what to do for her.:sad1:

Just quickly checking in. My MIL was admitted to the hospital yesterday because her hemoglobin was so low they couldn't figure out how she was walking. They gave her 4 pints of blood and were going to keep her overnight.

My FIL called us before 5 this morning and said she has been diagnosed with leukemia. They are going to transfer her to Vanderbuilt sometime today. We are in the process of getting ready and going to the hospital. She is currently in ICU.

Please pray for all of us. Kevin is in FL for work right now and won't be back until probably Friday. I am feeling so helpless because really there is nothing either of us can do.

Let us know what the Dr says. There is so much going around that you have to go to the Dr to make sure you get better :hug:

This is the season for that. I hope the doctor can see you and you get some relief.

Going to wait and see on the Dr. because this morning the pain and pressure are gone, I think it may have just been a sinus headache. I was sort of listening to the news last night and the weather man was saying it had been a very, very dry day. At the time I was thinking he meant no rain because they went on to talk about how little rain we've had but I am wondering if he meant air wise.

This morning several people have complained about how dry their skin is and mine is horribly dry which is rare.

Dinner tonight is roast that DM put in the crockpot this morning with a Lipton mushroom onion sauce packet. Have that with some sort of potatoes and maybe peas, considering I have 3 bags of them! :rotfl: Was going through the freezer looking for shrimp yesterday and found 2 bags, I had just bought one last week, so I will be having lots of peas.

Becky, YUMMY!! Becky there's another cheese I've seen you use, halloum?/halloumi? ?? I actually saw this in one of our regular grocery stores yesterday. But I wanted to come back & ask you what to do with it, before I buy it & it spoils.

Laura, Was it your tip of a one bite per age of the child? I've started using this with Alexis, she's not happy about it!

I think I'm grilling chicken or burgers tonight. We went to the phone store last night with DD & SIL to make changes to our acct & buy me the iphone.:banana: So we went out to their fave Sushi rest downtown & it was sooo good. The best sushi I've had in a long time. DD also introduced me to a new very yummy cocktail, a Sake Margarita! Sooo good!

I like the iPhone so far, but it's going to take forever to learn all the things it can do! Amazing stuff!

Make sure you buy Ear Planes for the trip & use them no matter how you feel.....Let us know what the doctor says.

Lyndsay you just need to make sure she knows you are there for her & supporting her.

I've flown with an ear infection - NOT a pleasant exp. Hope you can get something fixed up soon!



Tonight is typical Wed. DH is going to grill fajitas and I'll either eat here or eat late when I get in. I think we're just going to do chicken fajitas.
 
Sheryl- Good luck figuring out your phone. Mine is very basic and I still have a hard time. My husband likes to change things on it and not tell me, like my voicemail message. It's funny most of the time.

Glynis- Thanks for the info. I'm only planning on her having a few friends over, she's getting to the age where she finally realizes she doesn't have to invite the whole class. I work full time in the summer and her birthday is near 4th of July so it's pretty busy and I want to make it easier on me.
We all enjoy hummus here, I make a rosemary and white bean hummus (I think it's from 30 min meal) and a traditional hummus. We have it on everything, but I just like to tear off a piece of pita.

Ann- Hope your feeling better for your trip!

Nancy- The problem is the wood pile never ends, he keeps bringing home more.

Still don't know what's for dinner.
 
Ann, I second Maria's recommendation on Earplanes! I have to wear them everytime I fly, but they really do help a lot.

We do this with our kids. It takes a couple of weeks, but now they don't even put up a fight. Katie, at 11 years old, just figures it's easier to eat her whole portion. Saves us a lot of stress, I tell ya!
 
We seem to be in between snow squalls right now. It was near white out conditions earlier. Alan called to tell me that the satellite news truck that his station uses was doing a story up one of the canyons, and slid off an embankment. If there hadn't been a guard rail, the driver would probably have been killed. As it was, the rail slowed the fall, and Dave was able to walk away with only bumps and bruises. Alan had to pick him up at the hospital. Hopefully, things won't get worse, but we are supposed to have snow for the rest of the day.

I am definitely not going out! Timothy and I are in our jammies and are snuggled down for the day! We just finished watching a movie, and now he's napping. I'm doing a load of laundry, and catching up here. Soon, I'll move to the couch and read for a while.

Sheryl, yes, I have used haloumi. It is a very firm cheese--it does not really melt at all. You can even put it on the grill! The last time I used it, I cubed it and browned it in olive oil, and used it as a crouton substitute on a greek salad. It is salty, but I think a little milder than most fetas.

I'm not sure what I am going to end up making for dinner. John is out with a client, so it's just me. Maybe something with tofu, since he does not like tofu very much and I have some in the fridge.

I agree, flying with an ear infection is not fun. I've never used the earplanes before but I'd surely try that.
