The What's For Dinner Thread - Feb '09(recipe index in OP)

Good Morning!

Quick check in...

Hugs for everyone but especially Glynis, Maria and Kat and Kyle.

My SIL, BIL and nephew are coming to visit today. We are probably having take out pizza or whatever else we decide. Not to go into too much detail but I have been pumping a bit so I can celebrate with NUVO!

Have a great day all!

Good morning, everyone! It's a beautiful day here! I have to get the family up and moving soon so we can make it to church. But, while it's still quiet, I thought I'd pop on here.

Dinner tonight is my crock pot roast with carrots and potatoes, jello salad, and for dessert.....a new recipe! Peanut butter crumb apple pie. If it's any good, I'll post the recipe!

Have a great day, everyone!

Good Morning All! What a gorgeous day it is today!

Glad that all seems to be normal here WFD land and hope things are better for all of us.

Dinner tonight will be grilled steak, a potato of some kind, steamed haricots verts, corn green salad and apple pie for dessert. I'll make pudding later if I feel like it.

Hi everyone! We're having spaghetti and garlic bread tonight (sauce from the freezer) and it looks like I am winding up most of my personal returns this weekend. After this weekend, I'll only need to tie up a few loose ends on the ones I have left.

You guys won't believe this, but I think I'm heading to WDW on Thursday for a long weekend! This wasn't planned at all, but Kenny is having some work done to our kitchen because the joists are broken under that part of the house and the back door needs to be torn out as well. The guy doing the work will start bright and early Friday morning and we needed to plan to have Hailey out of the house from Friday morning until Sunday evening, so we batted around the ideas and since we have APs, we figured, what the heck.

We aren't doing any special dinners, breakfasts, etc and are staying off property in case we need to cancel at the last minute. It is just me, Hailey, and one of the therapists. P & A will be with their mother next weekend and Kenny wants to stay and sort of supervise. I'll have a lot to do over the next couple of days, but I think it will be worth it.

Gretchen, that's great! I hope you have a wonderful time.

Here is a photo of yesterday's fish taco:

No photos from dinner today. I had a Sunday meal planned, but got usurped by my father, who wanted Chinese takeout! YUCK! I hate Chinese takeout food. But, I decided to just let it go, and so that is what we had. It was ooky (of course), and I feel like I ate about 1/4 cup of salt. It's funny, I like Asian food, and the Chinese food I make, but not the takeout stuff. Too salty and greasy!

Ironically, I am making similar food for dinner tomorrow! I have flank steak and chicken breast marinating in sesame oil, brown sugar, ponzu, sherry, garlic, ginger, etc. I am going to stir fry them with asparagus and make some vegetable fried rice.

I had asked my boss the day before if she knew what would happen and she said that she didn't know. When her father died they had him laid out in the dining room at home and had a party.

Wow, um, :confused3

My friend had most of these food items thrown to/at her at a parade last week. A potato hit her in the face and she broke her nose.

:rotfl: I mean

I saw granddad today; health wise he's as good as he's going to be but his dementia has escalated and he's just not a nice man most of the time. :sad1: My grandad was the kindest, warmhearted, caring, doting man I knew and it pains me to see him like this. I spoke with my uncle for awhile outside of his room about what to do with him. :confused3

Tonight's dinner... we're negotiating that right now  I didn't get the pork loin out to thaw until too late and it's solid. He wants a chinese buffet and I don't want to leave my pajamas.

Aimee - That is the hardest aspect of dementia to deal with, my heart aches for you.

We watched the shuttle launch from our front yard. We could see it all the way down here in Boca. It was a crystal clear night and it was fantastic!!!!! :goodvibes

Hi Everyone! Thank you all for the birthday wishes for Liam. I think he had a pretty good weekend...lots of cool presents and plenty of attention.

I read back but didn't multiquote, so I probably will miss something.

Nancy -- I hope you are feeling better.

Maria -- You too. Your cruise sounds great.

Marilyn -- Your boss's family must be Irish.

Aimee -- I am glad you are helping out that little dog. I am sorry about your grandfather.

Kathy -- I'm also sorry to hear Kyle didn't get a chance to pitch. I hope he had some fun at WDW anyway.

Glynis -- It doesn't matter what your SILs think. Alan is understanding, so that is the most important thing.

Gretchen -- An unexpected Disney weekend! Sounds awesome!

It has been a busy couple of days. Today was Caili's skating competition and she got first place! She was SO excited. She starts work on a new program tomorrow, so it was a fitting end for the one she skated today. Her team also came in first, so it was a great day for her. Becky was nice enough to make me a pizza, so I had a piece of that. I'm still hungry though, so I might heat up some of the leftover Chinese food my mom sent home with me. Beck might hate it, but I love it!

Oops..a double post. However, I just remembered that I forgot to compliment Sheryl on her food. Looks delicious! (Do you use a tripod? If not, try that before paying for a class!)

What a wonderful surprise! A girls weekend :thumbsup2 Gretchen, even just having the time away in such a magical place with your Princess and one of the lovely girls who are so much a part of your family will be a treat!

I love Chinese takeout but I have never had your homemade. I know what you mean though, I am not Italian but make my own sauce. I never order red sauce out, I just don't like sauce from a restaurant, Buddy either. He makes me chuckle though, the man does not cook, has no idea what goes into sauce and would not know a homemade sauce if it bit him but he is convinced that every time he orders dinner it is from a can. :lmao:It is different from mine so it is canned :rotfl2:.

 As Kathy said, dementia is so cruel.

Lucky!

:cheer2::cheer2:

Thanks, Kathy, and everyone else! It's rough, but I've finally given myself permission to just miss her and to heck with everyone else. If I want to be sad, by dang, then I'm going to be sad! My kids and Alan are being really good about it, but my SIL's are not. It's ok, though. Their mother is still alive. I'll revisit the issue when she dies, and they are sad.

It's been two years and I still miss my Mom and the sadness comes when I least expect it. Her anniversary was not as bad for me as I thought it would be, then her birthday came and the world collapsed again. Kathy is right, don't listen to your SIL's, if they choose not to empathize then that is their issue, not yours. Alan and your kids are the only ones who need to understand, no one else matters here.

Buddy told me what to expect, he is still missing his Dad and so he knew what I might feel. If you ever need to just be sad with women who have been through this, you are in the right group, so many of us here are still grieving our Mom's so call any one of us, I know I am here any time, just call. :grouphug:

Dinner was so good. I had gotten it ready to cook early in the day so when our neighbors came by we visited until dinner.

I added some fried onions and mashed potatoes and gravy. YUM!

How cool!!!!!!!!!!

We ended up with Panda Express. Oh - Ace the little foster ate today!! :worship: I have been so worried. He ate two big bowls already and drank a lot of water and I'll feed him another bowl before bed. I'm doing small meals a few times a day to try and safely get some weight on him. Thank goodness he has an appetite.

That must have been awesome!

Aimee - I'm so happy that Ace is settling in and eating!

Good Morning!

Gretchen, So nice to hear you are going to take a quick trip!

Aimee, Hugs to you. I remember when my Dad became like that. He was the sweetest man...never a bad word out of his mouth and then the F bomb started when he got sick. Glad things are going well with your new house guest.

Dinner will be a beef tater tot casserole and tossed salad.

I am off to find Kat's corned beef glaze recipe...

Have a great day!

Morning all. Sorry I wasn't around this weekend. We were super busy. Saturday was a birthday party and then an hour later had dinner guests here. And then yesterday I ran the first leg of the Little Rock Marathon relay. Was super fun! I had a great team running for a great cause. Today will probably be leftovers of some kind. If not, I've got some indian food I can make.

Laura--Lots of congrats to Caili!:thumbsup2

Aimee--glad to hear that Ace is eating. Sorry to hear about your grandfather. Hugs to you

Morning all, we're all doing good here. My husband's back to normal and back to work. He has his good days and bad, last week just happened to be worse than normal. Thanks all for thinking of us. Today is actually the one year anniversary of his surgery.
This was quite the weekend for birthdays I guess. I have now reached the ripe old age of 29. My sister in law sent me a Rayman Rabbid (?) game for the wii. It's such a simple game, we had so much fun playing it.

I know I saw lots more, but I can't keep it all straight. Hope everyone is well this morning and everyone's little boys have been sleeping well at night.

I don't know what's for dinner. I saw a recipe for black bean soup I wanted to try, but I forgot to soak the beans overnight, so we'll be having that tomorrow. See you all later.

That's why we don't do Chinese takeout anymore. I just can't handle that much sodium and I feel yucky for a day or two afterwards. And your fish taco looks yummy! I love those things. :lovestruc

 I'm so sorry Aimee. That just makes it so much harder for all of you.

I am glad Ace has started eating. I'm sure he'll find his way quickly now if he is comfortable enough to begin eating normally.

How wonderful! We got lucky during one of our WDW trips and we were able to watch the launch from the beach at the Poly. Kenny says it was the highlight of his trip.

:lmao: :lmao: Isn't it funny how easily our men get spoiled?!? Kenny is positively high maintenance now. And this is the man who was eating nothing but fast food when we met.

I am looking forward to the weekend, but boy I have a lot to get done in just a few days. I have a few things to grab at the store, laundry, packing, etc. But I am getting excited. I told Hailey last night while she was in the tub and she grinned from ear to ear. We are still going in May too, even though that was supposed to be Patrick's trip and he isn't going to make it.

We planned separate trips for Amanda (last November) and Patrick (May) so Kenny could have some one on one time with each child. We intentionally scheduled Amanda's first and were holding Patrick's over his head hoping it would entice him to do reasonably well in school. No such luck as he is apparently on a quest to be the oldest living 7th grader. He is currently failing math and english so no vacation for him. And maybe not a summer vacation either since he may be in summer school. :sad2: I swear, that boy has been on restriction since the first interim report came out.

I have no idea what we are having for dinner tonight but I know it will be something I can throw together quickly since I have so much to do.
