The What's For Dinner Thread - Feb '09(recipe index in OP)

. If my husbads lung gets really bad and we end up at the hospital, I'll bring the cake and get TGIFridays take out. I really hope we get to have the soup.

I don't really know how my day is going to turn out, part of me hopes we end up at the doctor because I know something is wrong with him, but he's really scared to have surgery again. The other part of me hopes it get's a little better and we can put it off longer. I'm sure everything will be fine- plan for the worst, hope for the best.

The :tiptoe: worked...he slept till 8:10 this morning. Four nights in a row, :woohoo: now if I can just get him to bed before 9:30.

I don't know what's for dinner tonight, my brain feels discombobulated this morning. I'm going to make a chicken stock with leftover chicken carcass & maybe another attempt at shrimp stock. Everytime I try the shrimp it comes out bitter. :confused3 I'd like to do a crab feast tomorrow to celebrate DD & SIL's anniversary. I'm hoping I can find some soft shell crabs at a decent price & make some kind of crab bisque. But I'm still waiting to hear if SIL is going to be off or not.

Here are photos of my dinner last night. I made summer rolls again, this time vegan, with a peanut sauce rolled inside. I liked them even better than the shrimp ones I did a few weeks ago:

Glynis, that chicken sounds good. I love honey and chicken together. One time I made fried chicken that I dipped in honey before putting the flour coating on...it was really good.

Not sure what is for dinner yet. I have a chicken in the fridge that I've been dry salt brining for a couple of days, but I am not sure if I am going to get home early enough to roast it. If yes, I am making a recipe that was in this week's NY Times food section for chicken roasted on bread, then I'll toss that bread with arugula and currants. If I get home too late for that, it will probably just be some kind of pasta.

I had a heck of a morning. In a nutshell, I slept through a funeral, took home the keys to the church van which was needed this morning before I got into the office, while leaving for work late I twisted my ankle in the garage doorframe and slammed to the floor, burst into tears so I had to redo my makeup, finally got into the car and the car was dead, took DHs truck which is a standard so my knee hurt even worse due to the clutch, and finally made it here. I should have just stayed home. My knee is swollen and my ankles still hurt but nothing is sprained. Took a few Aleve so I hope the pain subsides soon.

I have a long day and a meeting at 630 so I'll be searching for food around here.

I'll try, but believe it or not, she seems to be camera shy. I've been trying to take a picture of her to show my sister, but each time I pick up the camera, she walks closer and closer as I keep backing up. I think I'll have to catch her when she isn't looking.

You and me both. Although I'm near the end. I mostly do the corporate stuff and that filing deadline is March 15th. I have a few personal returns I do and then all of the personal ones for my family, but the corporate is the big push.

Same here! I'm driving back and forth every day at that time so if you ever get bored, give me a call. My drive is about one hour and it is the only time I can ever get on the phone without one of the kids interrupting me.

We're all fine, thanks. Congrats on getting your little one to sleep. I know you would like an earlier bed time than 9:30, but if I had to choose, I'd pick the continuous sleep over the early bed time.


Mucinex is my friend! Took it for the first time 3 hours ago and the urge to cough has almost stopped. :woohoo: Decided to try it because the cough syrup and Dayquil I had been using (not at the same time;) ) were both making me loopy and buzzed. :hippie: :hyper: I had to stop using anything last night because it was messing with my ability to sleep.

I'm glad you got some relief. Right now I'm running on a mixture of Nasonex, claritin and tylenol synus. :rolleyes1


Gretchen- What's your new little lady's name? There's nothing like a dog, I can't look at mine and not smile. I'm glad she already feels at home.

The dog's name is Tory. And she makes me smile and go all gooey with her. Not quite as bad as my husband, but I still melt when she looks and me and wags her tail.

Hey all! Well, it looks as if we've missed the winter weather. Saw a little sleet earlier, but nothing sticking. Thank goodness. But now it's just dreary and cold. I have a big pot of BBQ Chicken Chili (actually turkey b/c I couldn't find the ground chicken breast) in the crockpot for dinner tonight. I'll have my mom make the cornbread and brownies! Yummo! Now it's time for me to head out to work.
 
Here parents drop their kids off at a party and then leave.

Usually, they do here as well, but Liam wanted to invite the neighbor families instead of his school friends. I think the big school parties are passe in 4th grade.

We've been invited to 4 bday parties for 5 kids in the next 3 weeks! AAAAHHH!!! The joys of preschool!

I promise you, it does slow down. Even Caili has not gone to many birthday parties this year. Last year, I think every kid in the class had a party.

I want to scream I just hate maternity clothes. I am really bummed out I thought I could get away with my regular swimsuit this trip but I hate how I look. All the maternity in my size are ugly or to much money to waste on just one vacation!!!! I just love taking DS in the pool on vacation and now I am really not looking forward to it.

Hey all, things so far seem to be going good here. It's just frustrating because I know he's in a lot of pain and there is really nothing to be done. He gets holes in the top of his lung, causing it to collapse. They cut off the top and stapled in shut and glued his lung to his ribcage. This was almost excactly one year ago. Unfortunatlly he still gets the holes, but since the glue holds his lung open x-rays look fine. He also can get 100% oxygen on one lung, so when they measure that he looks fine. I keep pushing him to speak to the surgeon, but I know he's really scared of what they might say. I would be too, I have never seen anyone in that much pain in my life. He was in the hospital for almost 3 weeks last year, you all kept my lots of company reading about your days when I couldn't sleep. I finally decided it was a little creepy that you didn't know I was here, so I here I am.

Aimee- Hope your day gets better, learning standard is still on my to do list.

Sheryl- Sounds very promissing, hope everything turns out well.

Oh my! I knew that he had had surgery and it was major but never knew what had happened. I cannot imagine the pain he is in yet I can understand that he is not looking forward to any news that leads to another round. And somehow you need to know how to make sure he is not getting worse. :sad2::sad2: I don't envy you :hug:

Please don't stay away through this, we may not have much more than :grouphug: and prayers but if we can support you in any way you just need to let us know.

I am making Glynis honey curried chicken and something. I know I'll make a salad and maybe steamed green beans but I have no idea what to make for a starch. Maybe brown rice for Marisa and me and leftover rice a roni for the guys. Kady won;t touch anything lately so maybe Marisa can give her nuggets, She won;t be able to have the chicken.

Robin - I can only imagine how hard this is on your DH and you. Many years ago my Dad had a collapsed lung and it was probably one of the worst things he'd ever dealt with and he dealt with many. I will pray that your DH is given the strength to speak with the surgeon and that the outcome will be a good one for y'all.:hug:

Didn't sleep well again last night. There is the same ingredients, in higher doses, in the Mucinex as there is in the cough medicine I was using. :headache: I think I will try using Tylenol PM tonight. I didn't need any pain killers last night because last night was the first night I wasn't going to bed with body aches from the coughing.

Dinner tonight will be Blackened Talapia. Got a recipe online for a blackening spice. I am thinking about trying to make cheesy grits to go with it, just like at Coral Reef.

We are home and getting adjusted. Baby only got up 2Xs during the night and is doing well. We went to the pediatrician today and all is good. I go tomorrow to get my staples removed.

Dinner will be pork chops...not sure how. Whatever is easy. I am feeling really good. Just need to keep on schedule with my meds and take it easy. The thing that is gonna kill me is no driving for 2.5 weeks!!! :scared1:

I was pleasantly surprised that my kids ate every last bite of chicken last night. I didn't tell them it was curry. I told them it was a new recipe called "candy chicken", and they ate it with no problem!
 
Ann- I'm sorry about your maternity clothes woes! That was one nice thing about being my largest in the Fall/Winter. I didn't have to worry about a maternity bathing suit. Congrats on getting the li'l guy to sleep through the night. As to getting to bed earlier, wait until he has slept through the night at least 2 weeks, and then start creeping his bedtime up in 5 minute increments. That's not enough to really be noticeable to him.

Lauren - Keep taking it easy! I wish I was there to bring you in some meals! As for the not driving, I can sympathize! It was enough to drive me nuts to be housebound for 2 plus weeks. My DH was home with me the first week, but he hates to drive around when he doesn't have to, so I felt guilty asking him to take me anywhere.

Robin - I'm praying for your husband. I guess the only good thing about his surgery last year was that it got you to join our family "for real!" Please know that we are here for you through this!

Aimee - What a horrible start to your day! Sounds like you should treat yourself to some "crack in a cup". Just because!

Sheryl - Like I said earlier, I'll keep Angelina in my prayers. The interview prospect sounds promising. I'll also keep my fingers crossed that her medical issues can be shelved until the job thing resolves itself! In the meantime, take care of your own health. Bob and the rest of your family really depend you.

If anyone hears from Wendie, please let her know that I'm thinking about her and praying for her.

Dinner tonight is another good standby for us: sausage and spinach pasta toss. It's easy to put together!

i get to take Katie to the junior high this afternoon to register for next year's classes. I can't believe the time has come for this! It's killing me that I have a daughter old enough to be in jr. high. Yikes!
