Very sad here...2 nights of no sleep and hysterical crying.
To much to explain but I'm just not coping.

OK, so you want a pregnant chick to go to a restaurant and put baked beans on a sweet potato???!!! I am sure its really good and when we go, I will try it.

We have decided to stay in since I am not feeling great...my new meds are making me a little nauseous (I am on a pill form of insulin now). I think I am in a bit of a funk too...:sad2:

Now I think I am done so I am off to bed, we will go to the wedding tomorrow ad I think back to the hospital in the evening.

Good morning. I'm still sick but feeling a little less blah. Janice and Nancy, I hope you're right.

I'm at the gate now at the airport. The laundry is dry. Woohoo! I got maybe 2 hours of sleep last night so I don't really feel so hot. I am planning to sleep on the plane.

:hug: Pardon my nosyness, but are you seeing a counselor? Or have you considered make an appt with your doc for some medical help in coping? You need sleep in order to cope and the medication could help take the edge off so you can :hug:



I am making the pizza right now - it'll be done in about 15 minutes. We had nothing around here for lunch so I figured I might as well cook it for lunch instead.

Tonight we are going to this locally owned restaurant I've always wanted to try - we have 8pm reservations. I know the chef was classically trained in France so I'm anxious to try something new :woohoo:

My Valentine's weekend has been a real bummer. DH had to work late last night and has been at work all day today--his optimistic answer of when he'll get home is around 7. Hoping for that. My parents did drop off a couple heart shaped pizzas from Papa Murphys :love: along with a dessert pizza. So, I'm gonna at least eat good with little effort tonight.

We had the most AMAZING dinner tonight. The restaurant had a special set menu for Valentines - appetizer (tomato bisque or house salad), fresh homemade bread, choice of entree, dessert, drink, tax and tip. It really ended up being a great deal, IMO. We both had the filet, with an herb butter melted over top, with a huge crabcake topped with roasted red pepper sauce, corn casserole of sorts, mashed potatoes, and green beans (with lots of bacon!). I didn't want it to end. I had the bisque, he had salad. Funny story: she said they had a blue cheese or vinigerette for dressing options. He said nevermind, he'll take the soup and the waitress said 'I have some ranch, but it's storebought not homemade' and he went for that :laughing: Silly man going for bottled ranch over homemade blue cheese! :eek:

I had chocolate cheesecake with raspberries and he had a lemon pound cake with lemon curd cream and blueberries. We are both stuffed!
 
I made this for lunch - it was very good, though took a long time. Is there a way to cut down on the time to roast the garlic?

Roasted Garlic and Spinach White Pizza
Serves 4
Prep 15 min
Bake 55 min

12 cloves garlic, unpeeled
4 teaspoons EVOO
1 tablespoon cornmeal
12 ounces refrigerated pizza dough
2 slices bacon, cut into 1 inch pieces (um, I used 6...)
One 10-ounce package frozen spinach, thawed and squeezed dry
salt and pepper
1 cup ricotta cheese
3/4 cup shredded mozzarella cheese (I did not measure but am confident I used much more than this)

1. Preheat oven to 325. Place garlic on a sheet of foil; drizzle with 1 teaspoon EVOO and 1 tablespoon water. Seal and bake until soft, about 30 minutes; let cool softly. Squeeze the garlic cloves from their skins into a small bowl; add 2 teaspoons EVOO and mash into a paste.

2. Meanwhile, grease a baking sheet with the remaining 1 teaspoon EVOO; dust with cornmeal. Stretch the pizza dough into a large rectangle and transfer to the prepared baking sheet. Let the dough rest for 10 minutes; stretch again to almost fill the pan.

3. Position a rack in the lower third of the oven and preheat to 425. In a medium skill, cook bacon over medium heat for about 5 minutes; drain and transfer to a plate. Add the spinach to the skill and cook over low heat until warmed through; season with salt and pepper. (note-I forgot to thaw the spinach so I just zapped it like the box told me to, squeezed it dry after the fact, and then seasoned it).

4. Brush the dough with the garlic paste. Top with the spinach and dollops of ricotta. Sprinkle with bacon and mozzarella. Bake for 15 minutes, lower temp to 400 and bake until the cheese is brown and bubbling, about 10 minutes.

Hope everyone had a good Valentimes Day. I slept late and watched TV all day. At 9:20 my phone rings, it is my BFF. She tells me to open the door for her son. :confused: She sent my a box of chocolate hearts. :flower3:

We finally have no snow on our deck. So I will be using the grill for supper.

Little Emma:cloud9: was flipping around today. This was the first big movement other than flutters. 22 weeks and counting!

WFD- grilled sausage subs with sauteed red peppers and onions.
 
I am in the mood for spicey so tonight is blackened catfish and the sides I am still poundering.

The kids and I spent the weekend with my parents and Becky. Dinner yesterday was pizza and today we had cod pomodoro. I am sure Becky will post photos.
