Well, I didn't get an exact date today but the doc said we will probably schedule something next week. It will probably be around 3/9 but the 10th is A's bday so I would like to try and be home for his day...we will see what happens.

I am very tired so I cannot respond to everyone...you are all in my thoughts. Have a great evening!

DH was pleased to see we were actually eating. He is harmless do not be afraid if he occasionally lurks. Freezer talk does not concern him because he would never fit in my side-by-side.

I got a good 2 hour nap in today, and it felt great.

Well, I baked 10 pounds of chicken leg quarters. They were all frozen together so we thawed the whole bag and baked them all.

I followed the maple glaze recipe above but ran out of soy sauce before I could do the last pan so we did a dry rub on those once they were browned up.

I did it for 1.5 hours at 350 and it was perfect! They are moist but cooked through and the meat falls right off. The maple glaze was good but I'll admit that I pulled off the skin so I didn't get much on my pieces. DH ate it and said it was tasty. I will have to try it on BLSL sometime.

Question: Should I take the leftover pieces and pull all the meat off of them? I just wonder if we'll eat shredded chicken quicker than a bunch of boned chicken. I could always make wraps...? Or freeze the meat seperate? What would y'all do?

Last night we ended up having Mickey D's I just have not felt like cooking.:confused3

Tonight I am making chicken , green beans maybe rice or noodles.

Ann- glad to hear your DH is a little more relaxed about us....no ax murderers here unless it is to stuff someone in a freezer. That is drastic, everyone knows freezer space is expensive real estate:thumbsup2

Aimee- I would shred the meat too. You can then use it in a lot of different recipes

I know I missed a lot, I really just skimmed yesterday and did not absorb much, I'm sorry. I never took a nap, I took a shower to wake up and then we went to see Chris. Marisa had Chinese food waiting when we got home.

This week is moving into a week that just sucks! Our visit was stressful. We always tease my poor Buddy about his food, usually his aunt likes to see him laughing but the last time he stopped in she told him she was going to cook a pot roast like she used to when he was a kid. She was just waiting for Sharie to get here. So her DGD was telling Sharie about wanting to come back here for dinner adn we had to stop, I guess Chris is upset that she cannot cook that last meal :sad1:. Then we were leaving and she tells us that Dorinda will be in at 9:30 that night. OMG! Buddy was going through his humongous box of stuff and had just shown me a thankyou card for being a pall bearer from Dorinda. She was married to Chris son Bruce and while she has stayed in touch with her since Bruce passed away 25 years ago she has never been back. WE have talked about how she is but Buddy said he had not even heard her name in that time. He was freaked, these things always happen to him.

Then we get hime, have dinner and Marisa is calling me, Trouble is panting, crawling and crying! All in a 5 minute span. The emergency vet is 45 minutes away, Marisa and Jeff took him. Hhad thrown a clot. He is 16 and was not going to make it so they had to have him euthanized, both were a mess and i guess Jeff was worse coming home. Trouble is really their cat. I cannot wait for Monday
 
Hi everybody! I am back!

I am still editing and processing my trip photos, and have not had a chance to catch up on the thread yet, but I did want to say hi. I also got all your facebook invites, and I will friend you, but I don't have my page setup yet. My plan is to finish the trip photos, then setup the facebook page--sometime early next week is my guess. I hope you have all been well. If anything earthshattering happened while I was gone please fill me in!

Hi, all! It's another snowy day here. I'm so tired of it! I WANT SPRING!!!!

Anyway, today is a day of errands, and then I get to go to lunch with my oldest friend. We have been friends since kindergarten. I love to meet up with her for lunch. Today we're going to a little Greek restaurant. Yum!

Dinner tonight will be Stroganoff Sandwiches. I meant to make them last week, but life got in the way. So, tonight it will be!

Sorry I'm in a fog this morning, sinuses & I was up lduring the night with IBS stomach pains. So I probably will miss something.

You girls are just the best! :love: I appreciate having you all as friends more than I can express!!:grouphug: Our family will get through this! Your prayers & support are helping me to feel this way! Otherwise I'd really would be such a total mess right now.

I don't know what's for dinner. I'm have a late appt for haircut & color this afternoon. Boy do I need it! :scared: I've been looking pretty scary lately. I'm overdue for both!

Oh last's nights dinner was delish! ( I gave up on pairing salmon with lentils, since noone claimed it to be a wonderful combo) I used this recipe from Cooking Light.

I used arugula instead & also used the balsamic sauce to glaze toasted & spiced pecans. I served it with Robin's sweet & spicy sticks! :thumbsup2 Robin those were very very good! Thanks for that recipe! Sorry the plated pic came out way too blurry.

Well, I am cooking tonight--but not for my family. A good friend of mine had a baby last weekend and I'm taking dinner over to her and her family. Making Becky's yummy Lemony-Balsamic Mustard roast chicken, some homemade mac and cheese, and then some veggies and fruit w/dips. As for my own family, they are on their own tonight. I'm headed out with my sister (however, we'll probably just stay in and watch AI tonight--one of the guys is from our hometown and is one of the worship leaders at our church! Kris Allen is his name--praying he makes it through tonight!)
 
Afternoon friends--

I went and spent some time with Gram this morning, and then did the last minute running around for our trip. I am going to do some laundry and wait for Ross to get here to head to the b-day party. We are gong to meet Emma with silly string when she gets off the bus, lol.

Nancy--I wish I had a way with words like you do, so I would know just what to say to you right now. Please know that I hold you all dear in my heart, and will pray for all of you. Poor Buddy, this poor man has had a rough time. I am so sorry for the loss of your cat, it hurts so much to lose a family pet. How is Kady handling it? Hugs to all of you!!

Sheryl--I hope you feel better today with your IBS, try and get some rest.

Becky--Looking forward to the photo review I will have to scroll back to see the pics when I get back!!

Janice--I haven't felt like cooking much either. I have tried to blame it on vacation coming up, but I really don't think that is it. I know that by the time we get back I will be ready for home cooking again!!

I am going to try to get on tomorrow afternoon to say goodbye. I have nails in the morning and lunch out with my bf, Kris will be home to load the truck up at 2:30 and then he is sleeping from 5-10 we will hit the road around 10:30pm and see how far we can get before we have to pull over for an hour or so. We hope to make it to S. Carolina late Friday night and spend the night and finish it on Sat. getting to St Pete beach around noontime. I will have my lap top, but am not sure if I will get on very much while away.
 
Nancy- I'm sorry for all your family has going on. How is Kady handling Trouble?

Lauren- I too think you are going to have a February baby, my husband seems to think all great people were born in February. If you make it to March though, you probably won't need to many newborn size diapers- we only used one pack, then onto a size 1.

Becky- Welcome home. Our neighbors are planning on going to St. John's next year to go camping at the national park. It sounds like a great place.

Merle- I had such a craving for chinese a couple of weeks ago, I think someone was talking about it here. Called to place an order and they were closed for renovations! I was so upset, I'm not very pleasant when I'm hungry.

Aimee- I would shred the meat and freeze it, in portion size! That's one thing I really like about dark meat, I can't over cook it.

Sheryl- I glad you liked the sweet potatoes. I made them for Thanksgiving one year, and of course my inlaws were late-again. So I had to reheat them in the microwave. I was washing up the dishes and looking for the platter they were one. Yup, there they were in the microwave, forgot all about them. Boy, I can't stand my inlaws.

Glynis- Sorry about the snow, we got a taste a spring today. It's getting cloudy out now, but it was nice while it lasted.

Tonight's dinner is grilled balsamic chicken, brown rice, and broccolli. I'm off to have lunch, I made crutons yesterday with some leftover bread and am looking foward to a big salad.
