Ok, I am so lost on here lately. You girls have had alot going on and been very chatty. Updates on us...I am feeling good just sleep deprived.

I have a cute story. My DH told me he visited the WFD thread while at work this morning hoping to see what we were having for supper. Much to his surprise there was nothing being reported:lmao: , I had not posted yet.

I am reading along with you all when able.:hug:

Oops, forgot to post WFD... shaved steak subs with mushrooms, sauted onions and swiss cheese.

Ann, If you want to make a more authentic New Orleans style po-boy cook your roast beef in brown gravy first. It's pretty darn good.
 
It's so bad that if he gets up to get a soda or a snack, Hailey will run over and change the channel. :laughing: And I didn't even have to train her to do it. Tell me that child isn't smart. ;)

:lmao::lmao:I used to wish that Buddy would watch the news with me but boy oh boy have I changed my mind! Who knew he would have an opinion on everything (that's my job) and it would be everything I disagree with! Since he is laid off we cannot even agree to disagree...I have tried that....and he knows when I agree just to get him to stop talking.... Couple that with his colorful use of the English language and I am :scared:

And thanks for the compliments on my trickery. But it is really less a case of me being smart and more like wrinkled clothes drive my husband crazy. Like really, really, crazy.

Sort of like one of Hailey's former therapists who never washed her car. When it was dirty, she would make a trip home to visit her parents and make sure to park it where her Dad would have to walk by it. Worked every time she said. :rotfl: That does not, however, work for me. My husband merely walks by my dirty car and tells me I'll get better gas mileage if I clean it. :laughing:



:lmao: It is amazing what you see at the zoo. The same thing happened to us, but with ostriches. I'm sure if I took Caili to the zoo today, she would still ask, "Mommy, why did that ostrich sit on the other ostrich?" :laughing:

Kenny would love that sandwich!!! That man loves :love: him some brown gravy. Do you cook the roast like normal and sort of warm it in the gravy or is there a better way?

I bought the Smart Balance light w/olive oil instead of the regular...it's a little different when you cook with it, not sure why.

Dinner tonight is up in the air....
 
I will be having leftovers for dinner I think. Really have to get back into the swing of things. Did pretty good with breakfast and lunch today.
 
Nancy - Kenny really liked the chicken. He said it was "a five all the way". I liked it, but I wasn't as crazy about it as he was. I thought it needed a little more red pepper. Anyway, you nanatize it as you see fit. I'm posting it as I did it tonight.

Maple Glazed Chicken
2 lbs boneless, skinless chicken thighs (can use bone in)
1/3 cup flour
1/4 cup oil
1/2 cup maple syrup
2 tablespoons cider vinegar
2 cloves garlic, minced
2 tablespoons soy sauce
2 tablespoons dry sherry
2 teaspoons ginger
1/2 teaspoon crushed red pepper flakes

Heat oven to 350 degrees.

Put flour in zip top bag and add chicken. Shake to coat. Brown chicken in oil on both sides and add to 9 x 13 baking pan. Combine remaining ingredients and pour over chicken. Bake uncovered for 40 minutes, turning once.

You may need more cook time if you use bone in chicken or larger pieces like breasts or leg quarters.

I'm making this tonight with chicken leg quarters, that I have never used before. Any guess on how long to bake it for?

Kathy- My husband hates dog shows, they always end with me listing the pros if we got another dog. It's the only argument he ever wins! I still think we should have 2 dogs though. I don't know why he thinks and Irish wolfhound wouldn't fit in the house? They just don't live long enough (no dogs do though) so I'd be very happy with another pound puppy.

An online friend of mine was on the show last night! Her dog, the black and tan coonhound, won best of breed and got to go onto the hound dog competition :cool1: I DVRd it and watched just her dog show. We sometimes watch dog shows but I get bored rather quickly.

2 dogs are way easier than 1, IMO. And I :lovestruc my pound puppy.

Speaking of pound puppy, Winston got to the vet today to have his poor nail trimmed all the way down. He's pathetic :sad1: (DH took him so I didn't have to see him cry)

On the po-boy. The best roast beef poboy IMO is from pot roast cooked a long time in gravy using what is called down here "the debris". All the bits that have broken apart at the bottom of the pot. But more often around our house I will buy deli roast beef sliced thin & make brown gravy from a mix & toss the roast beef in there. Let it simmer a little while. Take the roast beef out of the gravy with a fork letting some of the gravy drip off. It's going to be a messy sandwich, but oh so good.

Lately I haven't been bothering at all, because of the good po boy shop down the steet!


Well Ladies, I just got off the phone with DD a little while ago. ( I had to call Bob, cry & eat chocolate before coming here.) If there is anything to make you quit worrying about yourself it's worrying about your child!

She needs a micro-surgery to remove the herniated disc. The more depressing news is that she indeed does have the same degenerative disc disease that I have. The dr. said her MRI was quite surprising for some one her age, weight & health. Before she could even tell him what sports she had been involved in, he asked if she had been a gymnast! Then he said the only other sports that can cause as much damage to the spine are running cross country or track. She also did both of those!! So he explained that she has a predisposition for disc problems compounded by the sports she chose. There is nothing that can be done to prevent further disc deterioration. She can have this surgery which will should greatly improve the pain down her leg & the low back pain. But this will not prevent that disc nor others from further degeneration. She has 2 more that are already bad but not yet in need of surgery. The only thing she can do to help herself is too stay in good physical shape, thin & work on core strength.

Now we'll have to figure out how to manage both of us having surgery within the next few months. We had decided that I would go ahead & have mine right away, she had offered to have Alexis in the morning before school. But now... :confused:

Aimee, I'm guessing 60 to 75 minutes, depending on how hot your oven gets and how well you brown the chicken before baking.

Oh, Sheryl! I'm so sorry about this news! I just wish that I could be there to help out. I feel so helpless being so far away. I pray for both you and your daughter every day, but I want to do more!:hug:

All this talk of Po'Boys- My BIL went to a work convention this past week in NOLA. He was telling us about eating some spicy food and how he had a Shrimp and Oyster Po'Boy for lunch the day before he came home.

Well, I didn't get an exact date today but the doc said we will probably schedule something next week. It will probably be around 3/9 but the 10th is A's bday so I would like to try and be home for his day...we will see what happens.
