The What's for Dinner Thread - August 2014 (recipe index in OP)

Good morning all,

My heart just hurts so badly this morning. The news here in Nebraska is all about the little 2 year old that was dragged into the water at the Grand Floridian last night. We have not heard the identity of the family as of yet. My thoughts and prayers are with them. How horrific!!

Brandi ~ Your kale salad looks amazing. I fix one very similar and we love it.
I hope you are making some calls today about your results. That is just not right!! Sounds like someone has dropped the ball. I wouldn't let that happen - they need to let you know.

PIO ~ I am so excited for you - just getting out of "Dodge" for awhile is wonderful. Plus I can't wait to see the awesome pictures you will take. You are so good, your pictures are magazine worthy.

Alison ~ I hope you and Fran are enjoying that pool. I would give anything to have one.

Kimmar ~ I am loving the pictures of the remodel. Your DH & DS do great work!!

Stephanie is having a problem with Lilly going to Daycare. They have finally quit with an in-home lady and they are now at their Church's facility. Lilly went for preschool there, so it's not like she doesn't know the place, plus they are there every Sunday for church. It is so hard to understand the mind of a 4 year old. Harper fusses a bit - but we aren't worried, because of her age. She is real Momma's girl. But the last couple of weeks Stephanie has left in tears and almost just grabbed Lilly and went back home. It is breaking her heart. Elizabeth suggested a marble pot. Every day she doesn't cry when she is dropped off, she gets a marble. When she gets 10 in a jar she gets rewarded. Well this has worked like a gem!! She called me last night and is so proud of herself. She wants to go on a picnic at the park and wants Poppy and Nanny to go too. So tonight we are having a picnic and a fun play at the park. Hopefully we have turned a corner with all of this. Bless her and her Momma's heart. It has been so hard on all of them.

:wave: Thursday night and dinner tonight was our local Japanese Ramen noodle bar. We love it there!
One more day left in this week and then it's the weekend!

Ellen - So sad about that poor little 2 year old. I've been feeling upset for the family that would have planned to go there for a special vacation. To end this way......:(
 

It is just heartbreaking about that 2 year old. I can not imagine what the family is going thru.

Dinner last night was a exact replica of the night before. Kale salad, peppers, cucumbers, and chicken for David.

Tonight I am going to make the Pad Thai again and hoping that it thickens up like it is supposed to do.
 
Good morning all,

My heart is breaking for this wonderful little family. Just heartbreaking. As far as I'm concerned there should have been notices/signs about the alligators all along. Just because we are from Nebraska, we are not stupid people like some have said, but we are land locked and do NOT have alligators in our water. But even so, there are many people from other parts of the world - there should have been, and I am sure there will be now, signs warning of them.


I had a ball at our little picnic yesterday. But wow, it was hot. We didn't spend a lot of time playing. Even the kiddos were hot. The humidity is what zaps you. It was the kind, that the minute you leave the house you feel like you are in a shower. You just leak everywhere. YUCK!! We are to reach 110 today and tomorrow, but Saturday it is to cool off to 95.

This Sunday is Pastor Dyton's last Sunday. Our new pastor - Pastor Anne - will preach for the first time on July 3rd. I am sad I won't be here for her first week and first day in the pulpit, but that is wedding week. She is such a neat lady. I am really looking forward to working with her. She is fresh out of Seminary and has some really neat, fresh ideas. I think she is going to really breathe a breath of fresh air into this church. I can't wait for the ride.

Morning all,

On the way to work this morning the weather report said we probably won't make it to 100 today, but lower 90's and storms with a chance of some being severe. We really could use some rain, but the corn is at the point that hail would wipe out the crop. The soybeans are just about 5" and that would wipe them out also. It is also to late to replant so we are all hoping for rain but no hail. It is just oppressive out this morning, very humid and I knew it was hot, when the air conditioner was on at 6:00am when I got up.

I want to share what I made last night - it was a fruit salad, and it was the best thing I have eaten in a long time. Here is what I did:

I made a simple syrup of 1 cup sugar, 1 cup water, the zest of one lemon and the juice. I boiled it for 5 minutes. Let it cool and I added 1/2 t vanilla.
I had hulled and sliced a pint of strawberries, washed a pint each of blackberries, blueberries, raspberries. Put them in a large bowl and when cool poured the syrup over then refrigerated. They were so yummy at this point but will be even better today. Doug said this was like candy. Enjoy!!

Ethan had a baseball game last night, but we didn't go. It was just way to hot. I really don't even think the boys should have been out in this heat, but they were on the mound as usual. Doug does work out in the heat, and right now the AC in his work truck is broke. He did get the paperwork yesterday on his new truck that is on its way. He is so excited, as it has AC and it is 4 wheel drive. But when he got home last night he did not want to leave.

My project launched on Friday and it went well!!! So relieved.
As at Thursday morning, there was doubt that the technology was going to work.....but they fixed it by lunchtime, so that was a huge weight lifted.


And tomorrow, I head to Uluru! Here's to a week's chillaxing.
 
Ellen - I am not ready for those temps, but I know they are coming. When it is hot and humid like that it just drains all your energy and you don't want to do anything or eat anything. Or I find it that way at least.

PIO - so glad everything got fixed and it is working as planned, that is always a relief.

dinner last night was mashed turnips, kale salad, blueberries, blackberries, and raspberries. David had a tuna steak with his also.

Tonight? I really don't remember what is on the menu. haha

PIO ~ I hope your are loving your much needed vacation.

Brandi ~ I hate the humidity also. The heat is bad enough but it can be 100 with low humidity and feel better than 80 with 75% humidity. I agree it just drains you!

I am arm deep in mints. I am sort of well known for my mints and I do love to make them. I am making them for the wedding. I sent a couple of pictures to Katlin last night to make sure I had the color right. She loved them! Now to get busy as I am shooting for 500 of purple and 500 of silver. I'd best get busy!!

Ethan's last ball game is tonight before the tournaments. They have done so good. It's been fun to watch them. I sure hope they win!!

WFDT ~ Steak burgers, sweet potatoes and sautéed Brussel sprouts.

Been MIA for a bit over here! We have been struggling to get Apartment #2 (vacated on 5/31) ready to rent and we're going to put the sign out today. I finished the website yesterday. I put it below in case anyone wants to take a look. It's nothing fancy, but it gets the job done.

Saturday night I made an Asian style pork tenderloin which we had with grilled pineapple and stir fried veggies.
Sunday I made a turkey, but we had a late lunch so neither of us was hungry enough to eat more than a slice of turkey (for me) and a sandwich (for Fran).
Last night I made some of the leftovers into a Cordon Blue Casserole (ham, swiss cheese, noodles, cream of chicken) and then we had a spinach gratin with it.
Tonight will be turkey sandwiches in the car on the way to band.

Now that the temperatures have dropped from the 100s around here, we will be back over at the old house to move some more boxes out.

Ellen - your mints sound intriguing, can you post a picture of them somewhere? Now I'm curious!

PIO - I'm sure you are having a splendid holiday and I hope you will do a TR on the boards here!

Brandi - I hope you're doing well!
 
Afternoon everyone.

Things are starting to heat up here at the new job, so I getting more and more work.
I will be hiring my team soon, so that is always scary and fun.

I did not sleep well last night, did not go to sleep until after 1 am and was up at 5:25, so I am a little run down and tired at the moment.

Last night for dinner David and I meet up with of our friends at place to eat Oysters and I had a few of them, so not sure if that is what keep me last night or not.

Tonight is Tuesday so David will have chicken but everything else is a guess from me on dinner.

Ellen - I am too am interested in the mints, I would love to see pictures.

Alison - hope you both are doing well, we are doing great, and glad you are out of the 100s. David will be at Ft Irwin next month so I think his temps are going to be brutal, I have decided not to join him, the Mohave Desert does not sound like fun in July.

Wise choice! Anything up in the high desert is awful during the summer. Best time to be there is between March and June, or late October! We are lucky being so close to the ocean that while much of southern california has a high heat warning, we are "out of the pink" as we say when watching the news in the morning!
 
Glad you are staying "out of the pink" we are in a tornado warning right now.
so it is dark as night and wind in howling, rain and hail....

When I got to work this morning our phones are out of service. Found out the phone co. put in a new device last night and it messed everything up. They have worked all night trying to fix it. Poor things! It might be a really quiet day for me - YEA!!!

Alison ~ You are doing such a great job getting the apartments cleared out. I know it is a BIG job but you will feel so much better when it's done.
The website looks amazing. You have done a very good job with the pictures and explanations. It has beautiful curb appeal and doesn't look like an "apartment". I just about choked on the rent though. Good grief that is double what we have for a 4 bedroom, 10 acre farm with 2 barns and an arena. But that is the difference of Nebraska and Long Beach. I bet you will have it rented before the day is over. With the website it can reach a LOT of renters.

Brandi ~ I had to chuckle about you not sleeping. Doug and I were up all night also. If I had known you were up I would have called. :teeth:
Those oysters looked wonderful. YUM!!

The mints are something I love to do. I will post a picture on FB as I still haven't figured out how to post them here. I don't flavor mine, people think they are good though. They are more like a butter mint. The colors of the wedding are purple and silver. I think they will turn out good.

Oh.my.goodness it was so blistering hot last night at the ball game. But we went!! Such good Grandparents we are.

After every inning they would stop the game and everyone would drink water. I thought that was super neat. They played the number one team from Norton KS and lost 4-5. But dang it was a great game.

Doug and I are headed to Kearney tonight as I have a haircut and I need to stop at Hobby Lobby for a few things.

This time next week we will be on our way to Lincoln for the wedding. I truly can't believe it is here already.

WFDT ~ An Asian salad from Applebees, I love these things and Doug will have a steak. We are such creatures of habit.

I use just a small dab of black. They turn out pretty. I did post the purple ones on FB.

Thanks, it's a simple website, but it does the trick. Most advertising in LB is "drive by" so once people see the sign they can look up the particulars before calling.
It's funny your comment about the rent. I know it's higher then in the Midwest. It's higher than Central California, but I saw a piece on the news about rents in Downtown LA and Santa Monica where rents for a one bedroom are $3000 a month! :eek: it made me think Long Beach was a bargain!
