The What's for Dinner Thread - August 2014 (recipe index in OP)

:wave: Sorry I've been MIA. It's been a very hectic couple of weeks. Not long to go now....

Dinner? They have been incredibly scratching meals here.....and I've even ended up missing dinner 2 or 3 nights per week. :(

PIO ~ Hey you!! I have missed you and was a bit afraid you were having trouble at work. I am glad to hear it is almost over and life can get back to somewhat normal. How's the weather? Getting cooler? We are heating up hear. The humidity is almost unbearable.

Alison ~ I hope you and Fran are doing ok! I think of you 2 all the time.

We are leaving as soon as Doug gets home tonight for North Platte. This is the last weekend of NebraskaLand Days. For Christmas I gave Doug tickets to the Concerts. We are staying in North Platte for the weekend. I even splurged and got us rooms. We don't have to travel back and forth this way. We are seeing Thomas Rhett tonight and Florida Georgia Line tomorrow. We are so excited and I know we will have a ball.

WFDT ~ I have no idea - I just know I WON'T be cooking it or cleaning up after.

As for hurting myself, it started in Nov and then I kept making it worse, it was the elliptical! :eek:
 
Ellen - Winter solstice was this week here. It's cold, but it doesn't snow here. Enjoy the mini vacay and the concerts.

Brandi - I hope the PT is helping and that you're staying off the Elliptical. :eek:

I hope your are starting to feel like you are in control again. You are so busy - take care my friend.

We had a nice weekend, but Doug was sick. Somehow he has picked up a summer cold and it really kicked his fanny. We went to brunch on Saturday and spent the rest of the day in the room. He slept for most of it. The concerts were good, but I have realized I am getting to old to be in the "mosh Pit". I only stand about 5'4" and I didn't see a thing of FGL. They were good and I could hear just fine, but didn't see a thing!! And there were way to many people for my liking. They estimated there were over 13K there that night. We got up late on Sunday and came home. We were home by 1pm. It is really hot out here - got to 101 yesterday so we hunkered down. Only venturing out to move the sprinklers.

I am getting a haircut right after work. I am one shaggy lady. It is about 10 days past the point of a good cut.

WFDT ~ Turkey and noodles (had it in the freezer just for a night like this) peaches with cottage cheese and fresh strawberries and cream.

I've been MIA too and yesterday when I had some time to post, this thread wasn't active and I forgot to come over here and post something!

Last week we ended up skipping dinner on Thursday and Friday nights which put my whole schedule out of whack! We had a late lunch (I ate a burger and it was soooooooooo good!) at about 3PM and so neither of us were hungry. We ended up having two taquitos each at 9PM.

Friday we went up to Hollywood to the church to pick up the last of our stuff from the big move to the new church, and I was exhausted, if you saw the amount of stuff I carried in the heat you would understand. We just recently had a Golden Corral open nearby so we decided to go there for a late lunch. We arrived at about 3:15 and the line was out the door! We were seated about half an hour later, and we both thoroughly enjoyed our meals. I didn't over eat (too much) and ate mostly on plan. I had a lovely salad with tomatoes, red onion, blue cheese, bacon and eggs to start. A few spoonfuls of Clam Chowder, followed with steak and mushrooms, zucchini, a little mac n cheese and some corn. For dessert I had two marshmallows and two strawberries that I dipped in the chocolate fountain. It was quite good. Needless to say that was our dinner.

Saturday I made Egg Foo Young (which was supposed to be Friday's dinner), and last night I made Cous Cous with braised chicken and vegetables, and Merguez sausage on the side.

Tonight will be Beef Ribs, Baked Beans, and Green Beans.

Glad to hear everyone is doing well, except Doug, hope he gets better soon.

Brandi hope the PT starts to get better!

Kimmar ~ How the heck are you? I miss you!

We are to hit 105 today. That is just WAY to hot for me. Thank goodness I have a nice cushy job in the air condition. Walking to the mail box is about all I do outside - I am such a wimp!

I was really bemoaning the fact that we weren't doing anything for the 4th. We always go to either Jay & Elizabeth's or Marty & Stephanie's for the day. But this year they are abandoning us. Jay and Elizabeth are going camping in South Dakota with Jay's parents and Marty and Stephanie are going to Kansas to be with friends. Traitors!! :p But Matthew & Katlin saved the day - they called last night and are coming home. :D We all are off on Friday so we are going to the Winery that night. We have T-times at the Country Club for Saturday morning, Katlin and I are getting pedicures in the afternoon. Matthew has asked for fried chicken, potato salad and baked beans for dinner. Then we will go to the park for the fireworks. Should be a nice weekend. What are your plans?

afternoon all,

Ellen, it is not that hot here yet, but I know we are on our way. This DC swamp is heating up.

PT - I really have mixed feeling on that, I don't hurt, when I do my stretches and dont exercise. but they have lately had me add things back in, I am allowed to walk for 8 minutes at 3.3 mph, and I can do 20 squats, so i dont hurt when i do them, but about 4 hours afterwards, I can hardly move. So, I do my stretches, and it does not really help. The next day I feel better, and they cycle starts over.

So I am ok as long as I dont do anything :(

Dinner has been a lot of fresh veggies and salads lately, and I still cannot drop a pound. Ughh.

Brandi ~ You poor thing. You really did it!! I had no idea you were in that much pain and just from the elliptical. I would hope that whatever you did you won't do again. That is why I keep to my person trainer and walking. I pray that you start feeling better real soon.

PIO & Alison ~ :flower1: I can't find the wave so this will have to do. I hope all is ok with both of you.

Hot hot hot again today. But tomorrow is suppose to be a bit cooler at mid 80's. But the humidity is the killer!! I just can't stand the humidity. We have the AC on and will not open the windows up till the fall.

WFDT ~ Doug's Aunt and Uncle from Albuquerque are here and have asked us out to dinner tonight. Yea - no cooking for me. We are going to the Marina at the lake. They have some luscious fish tacos that are to die for. I can't wait!!

Good grief it is afternoon already -

We had a funeral here today so I am just now sitting down at my desk. Thank goodness I had my work all done. All I have to do is run the bulletins and set Sanctuary up for Sunday. But wow, I am pooped!

Brandi ~ WooHoo, that is a good thing - right? I love my zumba class but I really love to walk. I try to walk every night after work at the Y for at least 2 miles. It is just too hot outside and my country roads just aren't safe anymore unless Doug is with me.

I am getting a massage after work tonight. Oh how I am looking forward to it.

The Church is closed tomorrow and Doug is also off. I can't wait for a day off. We have plans to go for breakfast and then I will get my salads ready for Saturday. Matthew is getting off from the bank at noon and Katlin is off for the summer so they should be here around 4 or 5. We are taking them to the winery tomorrow night. I can't wait, we keep telling Katlin how nice this place is and now she can actually see for herself.

WFDT ~ BBQ spare ribs, cheesy potatoes and coleslaw.

Yes 10 minutes is good, I am just a little sore the next morning or that evening after I walk. I am overall getting better, it is just a very slow progression.

Hope everyone has a wonderful 4th of July.

David and I are going to the National Aquarium in Baltimore, they have a pier right on the inner harbor so we can watch the fireworks in a private area. So we have annual passes there so we are going to go early and visit the aquarium and then watch the fireworks.

We have no plans for the weekend, in fact our plans involve canceling more plans. My big splurge for the weekend will involve two things. First for the 4th of July I plan to cook burgers and I will eat mine with a bun! :eek: if I wake up tomorrow and get on the scale and I am still within my initial goal weight, that will have been seven days in a row of having held my first goal and I will make myself a Gingerbread cake as a reward. That's my splurging for the weekend.

Last night we had steak on the BBQ, green beans and mushrooms cooked in a sweet red wine sauce. I used agave instead of brown sugar.

Tonight we are having Halibut and veggie kebabs. I will have mine over brown and wild rice while Fran has plain white rice. I have a feeling we will be canceling our Sunday dinner reservations.

Thanks Brandi! It has been challenge to come up with meals that I find to be flavorful and interesting while still maintaining a balance of being diabetes friendly. I sure felt it after last night's dinner, I was so full and now understand why we can't eat like that every day. But it sure tasted good and was fulfilling to do it that once!

The good thing is that I just got one the scale and even with all my splurging and overeating yesterday, I didn't gain a ton of weight. In fact I'm still within goal weight, so back to the grind. Tonight we're going out to dinner, but I'm confident that it won't be a problem, the place we're going, I always leave hungry even if the meals are outrageously expensive.

Since I have not been able to exercise, I have gained 20 pounds, yes I said 20 pounds since this hip thing started.

I really have no idea how either. I am around 1500 to 1700 calories a day, and mostly all good food. It is not helping my state of mind to put all this weight back on. :(

BUT I am very proud of you, I know it is hard, and you are doing great!
