The What's for Dinner Thread - August 2014 (recipe index in OP)

I'm about to go in the kitchen and start making Chicken Cacciatore.
 
Hi all, I am slowly but surely seeing the light at the end of the tunnel. Hopefully by Friday I will be set. Next week is payroll week so that will be the real test. If it wasn't hard enough with one Church, this year I had 2 completely different Churches to do. And then the Conference decided to not pay for Health Ins. for the pastors. They will now be given an allowance to find their own, so that really presented a whole new set of rules. Ran W2's yesterday and paid all of the Federal and State taxes and filed the Biennial report. I am really glad that is over. You don't want to mess us with the Internal Revenue and Federal Gov.

I missed being here every day with you all, but thanks so much for keeping me close. You all are the best part of my day.

Brandi ~ I am going to have to look at that website. It really sounds interesting.

Alison ~ How are you and Fran feeling? Last I talked to you, you both were not feeling good at all.

PIO ~ Your garden goodies look amazing. You are so lucky to have a green thumb.

Kimmar ~ I can't wait to get back to your trip report. I am so enjoying it!

I think I will have to bow out of this month's cook off. This Nebraska - corn fed beef girl doesn't have an Asian recipe in her collection - at all!! But not to worry, I will just sit back an enjoy all of your meals. The closest thing I have is the Chinese restaurant in town. And I NEVER EVER go there. Sorry!!

On the baby front - we are getting really close. Stephanie went to the Dr. on Monday and she is 60% effaced and 1.5 cm dilated. So it is beginning. She is 38 weeks tomorrow, so in essence full term. And this baby could come at anytime. I have ladies on call here at the church so when I get the call I can go. She has asked that I come for a few days after also. Marty will take the first week after the baby is born, so I might wait till after he goes back to work to go help. Whatever they want I will do. We are getting very excited.

WFDT ~ Chicken supreme (it's in the crockpot) asparagus and homemade rye bread.

Ellen - I'm glad you're getting caught up! Good luck on the baby front! Keeping fingers crossed for you.

No, we're not feeling a lot better. Fran is on a second course of antibiotics. I still have a cough and feel a little icky. I'm hoping by next week it's all better.

Tonight we have to go to the Architectural Review Board meeting. We are getting solar panels on our house. Fran went last month, and the board said they wanted the solar guy to rework the map and put all the tiles on the back of the house. He thought the meeting was next week, 2nd Thursday, I guess he thought New Years didn't count as January, so it's just Fran and me.

We're going to have Frito Pie for dinner when we get home.
 

Oh how I've missed you guys!!!!!

My last cooking adventure?
A huge sirloin tip roast that I slow cooked all day.
The house smelled wonderful.
I made all the sides.
I called everyone to dinner (including my son's girlfriend).
Then I lifted the roast out of the crock pot only to find the big absorbent plastic pad still under it!!! :(
It had formed a toxic, slimy, gel along the bottom...
Being a toxicologist I couldn't serve that poison to my family!

So, they ate the sides while I made a mad dash for takeout chicken.

I NEED YOUR HELP, FRIENDS!

TruBlue ~ We have missed you to!! Oh my, what a mess you had. I would have been so upset also. But I think you did the right thing by not eating it. But I will guarantee you, that you will NEVER do that again. A hard and expensive lesson!! :thumbsup2

It is cold again here. Only 5 with a sustained wind out of the north at 25 with gusts to 35. So the windchill is around -20. Damn it is just fridged out. This is dangerous weather for cattle and well anything that has to be outside. Making sure they have feed and water is top priority during this cold. And that is not an easy task let me tell you!!

We ventured to Kearney last night as Lilly had her first dance lesson, last night. She had faced timed us on Tuesday telling us all about it. She was so excited, so we decided to surprise her. We really wanted to see and hear all about it. Oh my gosh, it was darling. I wish I had recorded her. She told us all about the twirls, and kicks and how to hold your hands and feet. Oh to be 2 again!!

I've been doing a bit of stir-fry with my garden vegies for dinner.

WFDT? I'm going with burger patty (organic beef), no bun but all the salad. I know I'm supposed to be doing the fit for life nearly vegan thing....but I'm totally reducing sugar and carbs.
 
Happy Monday all,

I got busy this weekend and filled Elizabeth, Stephanie and My freezers. I had wanted to get some stuff made up for Stephanie to have after the baby is born and as long as I was doing for her I did for Elizabeth and Me. I made Enchiladas, Chicken spaghetti, cheeseburger muffins, chicken pot pies, meatloaf, hamburgers and chicken noodle soup. We should all be set for awhile.

We made a mad dash to Kearney last night to drop off the food and hurried back as Ethan had a basketball game at 6. By the time I got back home last night I was ready for bed.

I would like to ask you all for a prayer. Doug and I have 3 grandchildren and he has been on call for every birth and has not been there with me and his girls. He starts call today through Sunday. I told Stephanie last night that she could NOT have this baby this week. :p You watch - this WILL be the week this little bundle will make an appearance. But I know how powerful your prayers are. I would really like for him to be there!!

A quick fly-in and check in.

I've been trying to be good lately. Whilst I haven't managed to go completely vegan, I've been reducing portion sizes and also eating a bit more raw foods. So, breakfasts have been about toast and lunches have been about carrots, celery and fruit. Dinners have been challenging. I really need one warm meal a day - and I haven't really geared up the dinner rotations with purely vegetarian meals. Still, I'm managing to keep a reasonably healthy diet in place.



Ellen - prayers for you! I will be keeping you in my thoughts this weekend and praying that Stephanie holds on til after the weekend. :flower3:

I will keep this all in my prayers and positive thoughts, I think it wouldl be special for Doug to be there.

Love all the food cooking and freezing. I have never really been good and doing the freezing thing, do you find it saves you time? Does it still taste good? Do you ever forget what you have and it is freezer burned?

Last night I made this cheese sauce that is dairy free, and added a can of rotel, some pinto beans and poured it over a potato, David enjoyed it so much, so we were both full and happy.

PIO ~ I am impressed! Good for you!! I don't think I could ever go vegan.

Brandi ~ No not really. I am pretty good at remembering what I have in my freezer. And it's not like it is in there for months. We try to use it within the month and I have them in my rotation so I know they are there. It really saves time. Three days a week I train with a fitness trainer and don't get home till 5:30, so Doug can start it when he gets home. We are a good team. :rotfl2:

Busy day!! It is the first payroll after all of the changes. I really hope I have it figured out. I really think I am getting to old for all of this. :p Wish me luck!

Hopeful Wednesday,

The weather people are saying we should get to almost 40 today. Oh my that will feel wonderful. It was only 7 when I left for work this morning. So we shall see.:woohoo:

On the baby front ~ Stephanie is having weekly appointments now (38 weeks) and when she went yesterday she was dilated to 2.5 cm. I kidded with her that she better be careful when she sneezes. Doug informed me last night that he will be going to Scottsbluff next Tuesday and will be over night to a sales meeting. I really hope he is home but it is looking less hopeful.

sorry to hear Doug might be out of town, I hope he is there for the birth.

David and I are doing good. Healthy and Happy.

Tonight for dinner is a big salad for me and added grilled chicken for David.
