Oh Sheryl- I had no intention of cooking :rotfl2::rotfl2:I wanted to go out for dinner but he was tired. WE are going for an early dinner tomorrow if Dan and Erica can join us. I always enjoy our conversations, it was not long enough for me!

My retreat was good, I enjoyed not having to wake before God in order to cook pancakes for a bunch of kids ;)

DH and I went shopping tonight and we stopped at Rockfish for seafood. It was yummy.

Tomorrow morning is a big day! It'll be a 3 ring circus in the morning but I think it'll be fab.

I have to confess, I've been cheating on Glynis with another pot roast.:laughing: It's become our new fave! The only thing I do differently is that I stuff the roast with garlic.

Momma Neely's Pot Roast

6 to 8 servings

Ingredients

* 1 (3 to 4-pound) boneless bottom round roast
* Kosher salt and freshly ground black pepper
* 1/4 cup vegetable oil
* 2 yellow onions, peeled and quartered
* 3 cloves garlic, smashed
* 1 tablespoon tomato paste
* 1 cup red wine
* 2 cups beef stock
* 2 fresh thyme sprigs
* 2 bay leaves
* 3 carrots, peeled and sliced into 1/2-inch pieces
* Freshly chopped parsley leaves, for garnish

Directions

Preheat the oven to 350 degrees F.

Season the roast on all sides with salt and pepper.

In a Dutch oven over medium-high heat, heat the vegetable oil and sear the roast on all sides. Add the onions, garlic and tomato paste and cook until slightly colored. Add the wine, stock, thyme and bay leaves. Bring the liquid to a simmer, cover, and place in the oven.

Roast for 1 1/2 hours and then add the carrots. Continue to cook for 1 more hour. Transfer the roast to a cutting board and let rest for 15 to 20 minutes. Slice and place on a serving platter. Skim the fat off the braising liquid and serve with the roast. Garnish with parsley.

You sound like Welby did yesterday. She put in a bid for a phone on Ebay. Her Dh came home and told her not to get one from Ebay....not a good idea. She looks and darn if she did not win the bid. Oh oh. Then the phone comes in and it is dirty and does not work. Husband takes one look and asks "So How's that phone working out for you?"Welby is not know for her even temperament :lmao: but she does not think this is the hill she wants to climb so he trots over here. I told her that if she acts fast she can stuff her DH down the cliff at the end of the road, everyone will keep piling their leaves there and I doubt he'll be found til Spring....no need to waste freezer space when we are all stocking up for winter :lmao:

Today is Jacob's birthday. My boy is 10 years old today! Where does the time go??? Alan and I took him out to dinner last night. He wanted to try some crab, so we ended up at Joe's Crab Shack. I had my stand by fish and chips, and Alan and Jacob split a steam pot filled with crab, sausage, potatoes and corn. They loved it! I did order a calimari appetizer which was great, and Jacob was so excited to try it!

Since it's his actual birthday today, he gets to choose dinner. He wants his favorite meal: Grandma's Salmon Patties. It will be fun to make with him. My mom used to do this with him. The two of them would be in the kitchen together making the patties. It's a great memory for him. I'm just glad I thought to write the recipe down, so I can try to recreate that memory for him.

Dessert will be the ultimate chocolate layered reeses peanut butter cup birthday cake. I got the recipe off a blog and it looks sinfully delicious! It's Jacob's favorite candy, and he loves chocolate cake, so he insisted I try it! It's supposed to be 4 layers of cake, but I'm only going to make 2. Wish me luck!!! I'll try to snap a picture or 2 of it tonight!

Gail is so upset. Since Chris got out of bootcamp she has not had all her kids home at the same time. This was in 2001. This year both Timmy and Chris will be home for Thanksgiving and she was thrilled. Kim cannot get home until the first week in December when it is a little slower in DL> None of them has ever complained although I know she misses them even more on special days.

In Gail's hospital you must work two out of three Holidays and she had Thanksgiving as one of them. A coworker offered to cover her shift this year. HooRay!!!!!!!!!!!!! Thank You!!!!!!!!!!!!!!!! Gail thanked her publicly many times and never once did the woman tell her this was not a gift, it was a swap. Her Christmas Holiday for Thanksgiving. She sent Gail an email...yest the coward sent an email message to tell her that she noticed that Gail did not switch Christmas. This would make three Christmas in a row that Gail was on and that means Christmas Eve and Christmas Day. So Gail took her Thanksgiving back but now is working even more hours that week. This is Timmy's leave after Iraq!

Gail would not have asked for the time but this woman offered. She knew that Gail did not realize that she was trying to take her Christmas. Gail said she is always talking about random acts of kindness :headache::headache: I guess that means as long as she is not inconvenienced!


Gail is not giving up Christmas because for some strange twist of fate she will have both boys home then as well :goodvibes

I told her we will change dinnertime so that she gets some sleep and will eat later. That will be a short meal for the kids becasue they need to get back to their Grandmothers but at least she will be able to spend a little time with them.

I ma not a charitable woman and while I told her not to say anything bad on FB I think I am going to post our plans on her wall and let her know how sad I am that she is not going to be able to have a relaxed meal to celebrate the safe return of her youngest son.

I should have been packing for WDW right now. :rolleyes: So sad that tomorrow would have been the start of our vacation.

Luke and I just put out our Thanksgiving decorations. We put out the pilgrims and he asked me if I had a turkey lurkey too!!! :rotfl: It was cute.

My girl is on her activity mat, she so wants to roll over. She is so close.

We are going to dinner tonight. There is a little bar/restaurant on the lake. We do not go in the summer, it is mobbed! This is the SLOOOOOWWWWWW season for them and there are specials every night that they are open. I think that tonight is Prime Rib for 9.95!

I was invited to a dinner party but turned it down. I have a crazy two weeks coming up - traveling Thurs to Sat and Sun to Tues - and I need to be home to decompress.

No idea on dinner. We have sour cream chicken enchiladas left to make if someone bothers to pick up a rotisserie chicken... :rolleyes1

Glynis, I have some peanut lovers over here as well. Please share if it is good my DH & DSS might like this for Thanksgiving.

Thanksgiving is right around the corner and .......shhhhhhhhhhhh, but I am not into it at all this year. I will be cooking for my family, DSS, DSD, her hubby and DSGS. DH's birthday actually falls on Thanskgiving. Does anyone else not enjoy turkey after cooking it all day??
 
Nancy I feel so bad for Gail. That woman will realize what she did one day. Charity begins at home. I know what it is like not to have all family member together on the holidays. When I was married John always had to work at least one of the holidays sometimes both major holidays. It stunk :headache:

Tonight is collards, mac n cheese and fried cat fish. Yeah Yeah I know not heart healthy but my tummy will be happy.

DS is having a bit of a terrible 3 phase he never got in the 2s. I am noticing he is jealous of the baby lately, that is new.

Three was much harder than two, I thought. Liam went through a phase where he was jealous of Caili too, especially once she started moving around more. It passed quickly. I'm sure Luke will get back to his loving older brother self soon.

Vent away. That's terrible that Gail can't find someone to take her shift. I know it stinks working holidays, but given the circumstances, I would think there would be someone willing to help her out without expecting Christmas in return.

Janice-- We used to time how long it took for Thanksgiving dinner to be finished. I think the record was 12 minutes.

My food for the party last night was a big success. I made the chicken wings in Lauren's Asian marinade, beef satay with peanut sauce (by far, everyone's favorite. It was easy too, so I can post the recipe if anyone is interested), pork potstickers, and vegetable spring rolls. My favorite comment was, "You made all this? I didn't know you could even make this stuff!" :laughing: I guess she thought I had gone to a Chinese restaurant and ordered takeout.

Someone brought a dessert that was bars, but it tasted just like a Reeses peanut butter cup. I have to find out who it was and get the recipe.

Dinner today was really good. Becky made fish tacos with fried beer-battered sole, crema, guacamole, and cabbage and yellow rice with coconut milk, pigeon peas and carrots. It was yummy. I am so full.

We had such a nice dinner. Of course there was no special but that was okay/. I met the waitress/bartender who just got back from Disney. She paid for the deluxe DDp but was not advised to book meals ahead. She ate her meals at POP. Her DD did not meet one Princess!

Our church is just gorgeous - I feel like I can say that and not be bragging since it was around long before I was. :laughing: It's gothic style, very Cathedral like with the largest pipe organ in TX and the some of the most beautiful stained glass windows around.

Well it's official Emily is off to Chicago!!!!!!! Dad has approved!
She has to be in Chicago December 28th! She'll have corporate housing 3 blocks from the theater. Of course, my cousin (her Mom) will go with her first but them my Aunt, DM & myself will be her chaperones......Looks like we may do 2 weeks at a time.

The party last night on the boat was lovely, clear night, harvest moon, wine, good food & some wonderful music. I will post some photos on FB tomorrow.
