The What's For Dinner Thread - August '09(recipe index in OP)

Glynis- What a frightening experience your niece had! Her poor friend must be terrified. Thank God your niece was there, if she was not who knows what would have happened:sad2:

Kat- Fat???????????????? No way! If you need to use the scooter, then that is what they are there for. You cannot let that ankle get worse.

Sheryl- Alexis is such a trooper! I hope her day goes well!

Ellen- :wizard::wizard::wizard::wizard: on the way!

Thank you all for the prayers for Buddy. He cannot believe all of you are doing this for him and is so touched that you have added him to the prayer circles. :grouphug:

His MRI is on Friday at 10. He is keeping busy and I am as well. I think we have just decided that we are going to believe it is compression unless we hear otherwise.

Ankle update - My Dr. doesn't feel comfortable giving me an injection since the area is so close to the achilles so he's sending me to an orthopedist tomorrow morning. I'm starting to think the scooter will be my only option.:sad1:

Hold on.....if it's a scooter that will be just fine. I will have a place to put my bottle of water;) or you can drive me home at the end of the night.
Fat, you hush!

Sheryl, packing done? I haven't even finished my laundry. Packing will be Wednesday night.

Glynis, I'm glad Saturday morning went well. Great treat going to your Dad's, he deserves a celebration!

Laura, glad Caili is getting better.....sorry about your cold.

Yesterday we went to a local park for some fall air & a walk then Greg made homemade mac & cheese for dinner.

Dinner is chicken something....We had to break down & put the heat on so I feel miserable from my allergies...my head is going to split open.

Kathy, I'm sorry, but I'm glad you're going to the ortho!

Ellen, Prayers for Matthew!

Laura, I'm so sorry you're sick now and that Caili's still coughing! Prayers for you two to get well!

Nancy, Buddy deserves some hugs & prayers from us! We are always getting a few laughs over his sandwich fetish, the least we can do is pray for the poor man! ;)

Maria, I didn't say I had my packing all done! :sad2: Just that it was started! I'll be up early Thursday morning still cramming more stuff into the suitcases!

Hey did y'all see it looks like we are going to have cooler temps in WDW this weekend!! Highs in the 70's, lows in the 60's!!! Oh that would really be wonderful! I sure hope that works out! http://www.accuweather.com/us/fl/or...tner=accuweather&traveler=0&zipchg=1&metric=0

Ellen – No matter how the standings fall please let Matthew know how proud we are of him! It was quite the honor for him to even be there!:thumbsup2

Marilyn – Hoping your day gets better.

Laura – I’m so sorry to hear you are now sick, prayers for a quick recovery. Have you tried the scallion sweet potato recipe yet? It is excellent!!!

Nan – Doesn’t Buddy know by now that we are family?;) Continued prayers for you both.

Maria – Sorry to hear that you are suffering with your allergies again. I’ll be happy to give you a ride home!!:goodvibes

I’m just feeling sad about this situation, however I know it could be much worse. Not being able to go to the gym is really getting to me. Enough whining…….:upsidedow

Hi Ladies! Trying to catch up here. I tend to stay away from the computer on the weekends so I always have a lot of catching up to do on Monday.

A belated Happy Birthday for Alex!

Laura - I’m sorry that you are now sick. I hope that you and Caili recover quickly.

Glynis - I hope you have fun days with your Dad. You all deserve a good break!

Kathy - hugs on the ankle. I am laughing though at the thought of a bunch of wined up women on scooters!!

Kathy and Gretchen - Scary thing

Ellen - pixie dust for you and Matthew. Safe travels to the doctor.

Sheryl - I know you will worry about Alexis, but the good news is Chris now knows what to look for so if A does take a down turn, maybe a phone call to the doctor will be all that’s needed.

Aimee - I would wait, but only because my luck runs that way. When we had thought we turned the financial corner, DH lost his job again. While he was only out of work a few weeks, his salary changed so we are back to very tight wallets. I hope that whatever reason had you at the hospital turned out well.

Lauren - hugs Sorry for your loss.

Sorry for all that I missed.

Dinner will be something with pork.. I picked up a pork loin that I'll split into two meals. Just don't know what exactly!

Kathy - hugs on the ankle. I am laughing though at the thought of a bunch of wined up women on scooters!!

My doc and his wife (nurse) were joking with me that they hope they don't see me on the news...NOLA woman drives scooter into lagoon......

Lauren - Kyle's care package arrived and he was thrilled, thanks so much! He should be calling or texting you soon.

Ladies, I am heading out and I won't be on tomorrow. So you all stay safe and keep those kiddos well. My prayers and good thoughts are with you.

Ya'll play nice now and I will see you on Wednesday.

Marilyn – Hoping your day gets better.

:sad2: I want a do-over! They came to work on my computer, couldn't get in to half of my documents.

My biggest database, which is the registration database for the last 10 years, is in Microsoft Access 2000. It has a major glitch, it cannot be updated to more recent versions. Several years ago when they switched to the newest version they did a patch job and now half of my computer is Microsoft Office 2000, and the other is MO 2003.

This latest server meltdown ejected the 2003 from the computer and we discovered that it broke the patch job. :headache: They cannot get MO 03 back onto the computer. What we are going to have to do is update another computer to MO 2007, then rebuild this years registration information onto it. Once we are done with that my old computer will be moved to another office and the new one moved here.

Marilyn Sorry your day was crappy but please no do overs :rotfl: My day was junky and I so don't want to do it again.:sad2:

Guess what I get to do tomorrow morning? I get to bring my car to the repair shop for some brakes. They decided to start making noise so I thought I better get them looked at before it gets expensive.

Tonight might be a night of junk food I already had 2 milky way bars granted they were the itty bitty size that I keep in the freezer for emergencies.:rotfl2: I figured this might be an emergency.

:rotfl2: We'll be WINED UP alright!!!

I know Chris will take good care of Alexis, but I worry about Chris too. If Alexis gets sick again, I'm afraid Mom is going to have a total meltdown. I'm glad she told me she's taking off work on Thurs., she needs some quiet time to herself.

Ladies, I am heading out and I won't be on tomorrow. So you all stay safe and keep those kiddos well. My prayers and good thoughts are with you.

Ya'll play nice now and I will see you on Wednesday.

Drive safely!

:sad2: I want a do-over! They came to work on my computer, couldn't get in to half of my documents.

.

Oh I'm so sorry! It sounds awful, what a mess.

I went shopping today, shoes for DH & bras for me. I also found a cute AK skirt really cheap!:goodvibes

Matthew is a bit upset with himself and his scores this week, but Doug and I are so proud of him.

You should be proud and Matthew should be too! I do hope his scores hold up though. I know he would be disappointed to get so close and not make it. I can't believe you already have snow. Drive safely!

Ankle update - My Dr. doesn't feel comfortable giving me an injection since the area is so close to the achilles so he's sending me to an orthopedist tomorrow morning.

I'm sorry you weren't able to get the shot today. Hopefully, the ortho will have some suggestions for you tomorrow. You'll get back to the gym soon. I understand your frustration though. I feel so much better when I get some exercise.

Marilyn -- I'm sorry you're dealing with so many computer problems. I'm sure the parents are all very understanding. I hope everything is resolved soon.

His MRI is on Friday at 10.

Oh, that is sooner than I thought. That is good! I wish him the best, and of course, I will keep him in my thoughts and prayers.

Maria -- Putting the heat on always kills my allergies as well. I had to turn mine on Oct 1. I hope you feel better soon.

Have you tried the scallion sweet potato recipe yet?

I haven't, but I should! Thanks for reminding me about it.

When we had thought we turned the financial corner, DH lost his job again. While he was only out of work a few weeks, his salary changed so we are back to very tight wallets.

I'm sorry to hear this. I hope things improve soon. The Boston Globe had a stuffed pork loin recipe this weekend. It sounded pretty good. You can probably find it at boston.com.

Tonight might be a night of junk food I already had 2 milky way bars granted they were the itty bitty size that I keep in the freezer for emergencies.:rotfl2: I figured this might be an emergency.
 I hope the repair isn't too expensive. The last time I brought my car in, I wasn't sure if the brakes were making noise, so I had them do an inspection. The brakes were fine, and the shop owner looked at me like I was nuts, but I would rather pay for the inspection than the rotors!

If Alexis gets sick again, I'm afraid Mom is going to have a total meltdown.

Hopefully, Alexis will stay well and Chris gets to enjoy a little quiet time. I can imagine how she has felt these past few weeks.

Thank you for all the well wishes. I still feel lousy, but it is just a cold. I am really hoping Liam doesn't get it. He will end up with pneumonia like Caili. She is still really coughing. I am kind of dreading the doctor's visit tomorrow. If the doctor says we have to stay home all week, I might just go crazy!

My neighbor's Mom loves in Fl an she told him the weather is breaking, just in time for my favorite ladies!

Chris is a good Mom and she will be fine. You have been an excellent example for her :thumbsup2

Ellen – No matter how the standings fall please let Matthew know how proud we are of him! It was quite the honor for him to even be there!:thumbsup2

Ellen- What she said!!!!!!!!!!!!!!!!

Kat- I know that this is not a smiling matter but I have to admit that you ladies are giving me a chuckle. I can picture you all, Nuvo held high as you scoot from one kiosk to another! :goodvibes In all seriousness, I really pray that your ankle heals quickly!

Aimee - I would wait, but only because my luck runs that way. When we had thought we turned the financial corner, DH lost his job again. While he was only out of work a few weeks, his salary changed so we are back to very tight wallets.

That is how I feel. We thought that we were heading down the home stretch when the economy changed. DH has not gotten the hours that he had finally started getting so we are back to watching our spending. I never thought that I would see the day when my thrifty Dh would want to buy me a new car and I would be arguing that I did not want one ;) but that is what we did for two years until I could not even say with a straight face that there was nothing wrong with my Bronco. I ended up with a used one because I did not want a payment, it would be one more thing to think about if his hours were cut.

Ladies, I am heading out and I won't be on tomorrow. So you all stay safe and keep those kiddos well. My prayers and good thoughts are with you.

See you soon!

I hope it is not too expensive! I ate my two emergency Milky Way Darks Thursday.....and they were the full size :upsidedow

Praying for a get out of jail card :thumbsup2

WE had the leftovers. Buddy started with them on a plate and then turned them into sandwiches :rotfl:

Honey Oat casserole bread

This makes 1 loaf cut into 12 wedges It is a course textured crumb

1 cup boiliing water
1 cup quick cooking oats
1/4 cup butter softened
1/4 cup honey
1 tsp salt
1 pkg (1/4 oz) active dry yeast
1/4 cup warm water (110 tsp 115 degrees)
2 eggs
3 1/2 cups all purpose flour

1 In a large bowl pour boiling water over oats. add butter, honey and salt. Let stand until mixture cools to 110 to 115 degrees stirring occasionally

2. In a large bowl dissolve yeast in warm water. Add eggs, oat mixture and 2 cups flour. Beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough. dough will be sticky. Cover and let rise in a warm place until double.

3. Punch dough down. Transfer to a 1 1/2 quart greased round casserole dish. Cover and let rise in a warm place until doubled, about 30 minutes

4. Bake at 375 for 35 to 40 minutes or until golden brown. Cool for 10 minutes before removing from baking dish to wire cooling rack.

I eyeballed the recipe and used a little less honey and sugar than was called for. i also sis not use as much cinnamon. It was perfect with the warm bread.

:rotfl2: Believe me Nan, I'm laughing as well and promise to hopefully have some pics for y'all. I've got to make the best of this, right?;)

Aimee, Good luck with the car decision! Why were you at the hospital this morning? Iron injections or for someone from church?

A coworker had surgery...

It snowed all weekend. Ended up getting almost 8 inches of the white stuff. It is still here even, as the temps never made it out of the 20's. Where in the heck did fall go? We went right into winter - sub-zero winter. And ice - OH how I HATE ice.

I have to travel to Omaha (about 3 1/2 hrs. east) tomorrow as I have a Doctor appt. I have to go, so traveling dust would be appreciated. I hate winter weather!!

Snow?! YUCK! I hope your drive is okay tomorrow - that's a long drive just for an appointment, esp in that weather

Ankle update - My Dr. doesn't feel comfortable giving me an injection since the area is so close to the achilles so he's sending me to an orthopedist tomorrow morning. I'm starting to think the scooter will be my only option.:sad1:

Okay, I know some people argue this isn't true - and I haven't done it myself - but a good friend fractured her ankle 1 week before their big family WDW vacation. They rented a scooter from an outside company and had it delivered to their hotel. She said they were completely spoiled (this was their first trip ever) and don't WANT to go back without a scooter - they never had to wait in lines :confused3 Of course CMs aren't supposed to just stick them on but she said it happened like that without fail. So perhaps it'll be a blessing in disguise :goodvibes

I hope you feel better soon  I know it's hard when momma is sick, too.

I slept WAY too long this afternoon when I got home and I have work to do for tomorrow but it was soooooo nice. I feel human again! I can't do this 4 hours of sleep business.

Guess what I get to do tomorrow morning? I get to bring my car to the repair shop for some brakes. They decided to start making noise so I thought I better get them looked at before it gets expensive.

 I seem to have started a bad trend here with car problems! So sorry you have to deal with this.

My doc and his wife (nurse) were joking with me that they hope they don't see me on the news...NOLA woman drives scooter into lagoon......:laughing

:rotfl2::rotfl2::lmao::lmao:

Chris definitely deserves a break, but I doubt she'll rest easy until she's sure her baby is okay. for her.

 Sorry to hear of your computer problems. We are getting ready to upgrade to MO 2007 here and we are also moving my databases into Access. (They are currently in a program called Q&A which stopped existing a number of years ago.) I know very little about the program and am a little nervous about the switch. I hope they can get you back up and running with as little damage as possible.

The Boston Globe had a stuffed pork loin recipe this weekend. It sounded pretty good. You can probably find it at boston.com.

I'll look for that recipe, it sounds like something I'd enjoy. I hope the doctor's visit goes well, and I certainly hope Liam doesn't get sick. Seems like you all have had your share already and need a break.

We bought not one, but two new cars in the three months prior to Katrina. Yea, it's always something! I've learned to just roll with it, and I know it will get better.

:lmao:Buddy really cracks me up. I like sandwiches, but he definitely takes it to a higher level!

Good Morning!

I hope all is well. Thank you for your thoughts and prayers regarding my cousin's passing. She had been sick for a while and just a couple weeks ago they found what looked like cancer in the stomach and liver. All too familiar. We got a chance to visit Charles' grave. I am ...my sil has been too busy to get a marker. My poor brother still has to paper marker the cemetary marks the grave with. I could say alot of stuff but I wont.

Anyway, Tom is leaving to go back later and I have to be out of the house between 1 and 3 for a showing. I have to clean up a bit. I think I will try to take Riley to the groomer where he boards so I can get some last minute stuff done. I do not want to leave him here since he barks when locked up and people are around.

Not sure about dinner tonight. My BIL may stay over again so he said he would take us out.

Have a great day all! I have skimmed through but my mind is already all over the place....Hugs to all!

Happy Birthday Gretchen!!!
:cool1::woohoo::yay::dance3::banana::cheer2::cake::bday:party:

HAPPY BIRTHDAY, GRETCHEN!!! I hope you have a great day!!!

Lauren - I'm sorry that Tom has to back without you! How was your time together? Have you heard anything back from the first showing?

Ellen - Drive safely! We had snow last weekend, but it was polite, and stayed in the mountains. So, we still have Fall in the valleys, but our mountain tops are white. Very pretty!

Aimee - I hear you on the 4 hours of sleep business! I cannot do that anymore! We even celebrate NYE at about 9:00 p.m. so we can all get to bed and sleep well! Talk about your fuddy duddies!

Dinner last night ended up being tomato soup with grilled cheese and grilled tuna fish sandwiches. It was fast and easy, and I had all the stuff on hand. I spent most of the day doing a ton of homework in the hopes of not having to do any while I'm visiting my dad. So, today will be more of the same. I do have to go to the school to help switch out reading books this morning, but then I will be back at the books.

Not sure what dinner tonight will bring. At this point, I'm thinking Poor Man's Stroganoff over rice. I'll let y'all know as soon as I do.

We got a chance to visit Charles' grave. I am ...my sil has been too busy to get a marker. My poor brother still has to paper marker the cemetary marks the grave with. I could say alot of stuff but I wont.

I can imagine how angry that must have made you.

Happy Birthday Gretchen !!!!

WFD - 40 clove garlic chicken, pasta and green beans.

Thanks for the Birthday wishes here and on Facebook. I'm running through quickly this morning since I'm way behind and have so much to do before we leave on Saturday. I'm taking Friday off to pack and to get some much needed things done instead of running around and not getting to sleep until the wee hours on the day before vacation so I'm trying to cram all my work in before I leave.

Anyway, hugs to all of you.
