The What's For Dinner Thread - August '09(recipe index in OP)

Hey all, wanted to check in and let you know that i had a great time and got home safely.

nancy, glad to hear you recd some good news. i will continue to pray.

I got home and went right back out. Something happened to Riley's eye this morning so as soon as i got in, i went right back out to the emergency ER. They believe his eye is ruptured and may have to remove it tomorrow. i cannot stop crying. i feel so bad that i was not here and feel if i was, this would not have happened. my poor baby.....:sad1:

i am not sure when i will be on again. i am devastated about this. i pray for a miracle and that the opthamologist can repair it. if not the doctor assures me that he will be fine with one eye. :sad2: i just feel so terrible...

sorry to be a downer. just wanted to let you all know in case i disappear a while...

Again I have never laughed so much at dinner ever! We all need to get together like this. Just an unbelievable amount of laughter & FUN.

Don't even give that another thought! I knew you had a lot going on and was happy that you were getting ready to head to Disney!

Hi, everyone! I'm back from visiting Dad. We had a great time, for the most part.

I am happy that you had a good time but feel badly that the tummy bug decided to rampage through your family. Is everyone better today?

Nancy- about children and custody issues, some parents cannot see past the "it's my time with my child" and see the child. I have worked in childcare for over 20 years and have seen some really nasty stuff. :mad:

I think we will have king salmon this evening. Our neighbor caught it Sunday afternoon. Sweet potatoes and zucchini and a salad.

Thank you all for your thoughts and prayers for Buddy. I am so relieved with the results. :grouphug::grouphug: The Dr said that there needs to be a sample tested but at least her voice was not shaking like last week. Buddy did say he did not realize how nervous he was until this morning when he noticed how differently he felt today. I am going to track down my BIL today so he can explain more about what the Dr said yesterday.
 
Nancy Poor Buddy with all that has happened in his family no wonder he was worried. Hopefully your BIL can set his mind at ease:hug:

Lauren I will say a extra prayer for Riley. Poor little guy :hug:Try not to worrry too much. Sometimes these things happen whether you are there or not. Don't beat yourself up. :hug:

Alex has been complaining of a sore throat. I am hoping it is just allergies so far nothing else. He has test this week it is quarter end already.

Morning ladies! MNF went well last night. Everyone raved about the chili. And I did get a nap--but not as long as I would've liked. I'm still dragging this morning. I think it will be MYO pizza night tonight for the troops

Lauren-glad to hear that you made it back safely. Hugs to your sweet Riley! and please don't disappear and please don't beat yourself up for being gone. It could've happened with you there. And I had the best time txting and meeting up with you!

Okay, my stomach has been off ever since Sunday night. Trying not to think it was something I ate at CG--because it was SO good! Blaming my upset on the BW Bakery (b/c it was really upset before I left yesterday). Just feel blah. Now to get Emma off to school. Have a great day all!
 
Quick update on Riley...

The doctor said what happened was not caused by trauma but a couple of underlying things. His eyelashes grow inward and he does not produce enough tears. This caused an ulcer and then a rupture. He is 100% blind in this eye but the doctor says there is a chance that the eye can be saved. I am going to pick him up later and will have him on strong meds since the infection and pain is really bad. Then he will be re-evauluated next week. Please send good thoughts that he will not have to have the eye removed.

I am in a better frame of mind so may be able to post later. Charlene is coming to accompany us to the vet. It is an hour away and she does not want me driving.

I need to get the baby ready and house straightened. The realtor caravan is coming about 10.

Lauren- I'm glad you are feeling better about it, the poor little guy. I hope the meds take care of his pain quickly. My dog was feeling a bit off this weekend and it's so hard when you don't know what's going on. Hope you had a great vacation.

Stephanie- Your stomach's probably just off from your crazy schedule, and I never feel my best when I have to leave Disney.

Nancy- I have to say I don't understand most of what you said, but as long as it's good that's all that matters.

Maria- I saw those chocolate crisps at TJ's, but I'm not a big chocolate person. They do look like just the perfect size though, I'll have to investigate them further. There maple cookies are great though.

Hi, everyone! I'm back from visiting Dad. We had a great time, for the most part.

So glad you all had a great time, except for everyone getting sick. At least it went quickly. I hope you are feeling better soon.

Had a busy weekend. My DN was in a swim meet Saturday and yesterday and Saturday night we went to the Olive Garden for a birthday dinner for her little sister.

My DN did really well, coming in 1st place for her age in a couple of the events. Final results will not be out for a couple of weeks but my sister said that she did "break" a couple of her summer league records although they do not count. She should be able to officially break them next summer, though.

Sounds like you had a good weekend as well! Congrats to your niece and a belated happy birthday to her sister!
It seems that a lot of your nieces/nephews are involved in sports. Thats really great, and to have such super family support!


Nancy, :yay: for some good news. I hope Buddy is able to get into doctor's soon so that ya'll can get a plan of action and get him all better.

Aww Lauren, thats so sad. Please don't blame yourself; I doubt that this had anything to do with whether you were there or not. And dogs really can do fine with one eye. I spend a lot of time at the eye vet either for checkups or picking up medicine for my aussie, so I see dogs like that all the time. :hug::hug: to you, and remember we are here to listen and comfort.

Today is our skating and ballet day, so we will just get pizza or something like that. Oh, and the brie from the cheese shop was definitely worth the trip!

My tummy tends to get "off" when I travel because of all the different foods, hopefully thats the case for you. You know all that fancy stuff and of course, the alcohol :rolleyes1

I have read back but my brain is a little fuzzy right now. I spoke to teh Dr today, she read the results of the MRI. She does not think that the mass...it is a mass...is metastatic cancer Thank God! She did say that he has two neuromas, one at the base of his spine and one near his ear. She has never seen them placed like this though so she called a neurologist so that she could have some ideas. SHe sais that his hearing should have been affected and sure enough, this morning he lost a lot of the hearing in one ear. SHe wants him to see the neurologist but keep the appointment with teh neurosurgeon. SHE was surprised that he was able to get on so fast, this group books 6 months out. She did tell the Dr that he needs to get in ASAP so she felt that he would not have so long a wait. I have called Gail, this Dr is also a friend of Mikes. He is at eh hospital tonight and if one of the group comes in he is going to talk to them and see if it would help to call and make the appointment like he did with the surgeon he will do that for us.

Thank you for all of the prayers, I have been terrified that this was cancer and right now it is not looking that way. I know that the prayers helped and am truely moved beyond words. I am so thankful that you all did this for us.

Dinner is hot turkey sandwiches, mashed potatoes and a big salad. I am back to watching my meals so I am filling up on my "greens" as Bud would say.

Nancy - I'm thrilled beyond words that there is no cancer! I'm also thrilled that he will be able to be seen by the neurologist so quickly! I'll keep his name on our prayer rolls. Yours, too. It's hard to stand by and watch someone you love go through stuff like this!

Morning, all! I'm happy to report that things are back to normal around here! Mary and I are both fine, today, and no one else is reporting feeling yucky! Hooray!!!

Alan came home last night and just took over. Katie made dinner, and Alan took all the kids out to clean the garage. It was a nice quiet house, and I just went to bed at about 8:00. It felt good to sleep!!!

Today is a full day of errand running, and then Katie's orchestra concert. Dinner will probably be something I pick up at Costco while I'm there. Not going to have too much time to cook.

I do want to post the recipe for the corned beef and cabbage casserole I made a while back. It was really good, and the kids loved it!

Corned Beef and Cabbage Casserole

1/4 C. butter
4 C. cabbage, chopped (I used a bag of coleslaw mix)
1 small onion, chopped (I used dried onion flakes)
1 tsp. caraway seeds (I left these out, since I didn't have any)
1 can (12 oz) corned beef
2 C. shredded Swiss cheese
1/4 C. Thousand Island dressing
2 tubes refrigerated buttermilk biscuits

In a large skillet melt butter; stir in the cabbage, onion and caraway seeds. Cover and cook over medium heat for 8-10 minutes or until cabbage is crisp-tender, stirring occasionally; set aside. Meanwhile, in a large bowl, combine the corned beef, Swiss cheese, and salad dressing. Separate biscuits; place 10 biscuits in each of 2 ungreased 9-inch round baking pans. Press biscuits onto the bottom and up the sides of pans. Add cabbage mixture, top with corned beef mixture. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through and biscuits are golden brown. Cut into wedges.

I did this in a 9 X 13-inch baking pan, and it worked beautifully! I also added more salad dressing, and it added a nice tang to the filling! Give this a try, as the corned beef flavor is not so huge! We loved it!

I'm glad you're back, but so sorry Riley is having eye issues. Is Riley a Shih Tzu? I have one, and you know their eyes have lots of problems. My vet even went so far as to show me HOW to pop it back in since it's likely to pop out at some point. They are very prone to ulcers and other issues. Nothing you did!! I hope he will be able to keep his eye and that he finds some pain relief :hug:

Feel better soon! I always feel a little off after a trip, I tends to eat and drink a lot differently than I do at home and pay for it.

I am glad that Charlene is going with you. An hour away is a long drive when you are upset and the ride home with a sick puppy even longer. I hope that the little guy gets better soon!

I wish I understood what I said ;) What I really got out of it was that the mass did not light up like a Christmas tree, and that is a good thing. We can deal with the rest, not matter what. Now if I can only get through to the Dr I will be happy, so far I have been diverted to his secretary which I guess is a good thing. He is booking the end of January right now. The receptionist asked for Buddy's name and transferred me so I hope it is a good sign.

Nancy- You can definatly deal with whatever it is. I can honestly say I have not had a bad day since I brought my husband home from the hospital last march. It has changed my whole perspective on life and now everyday is a good one. We are having some electrical problems with the house and you know what, it's not a big deal. At the end of the day the three of us are all okay. My daughter needs a 4th grade checkup, there is such a shortage of doctors on the cape her physical is the end of december. I hope you don't need to wait until January.

Aimee- Your dinner sounds so good, I love soup and yours sounds perfect.

Glynis- Glad your all back to normal.

Laura- I don't use mixes, but I've only heard good things about trader joe's mixes. I already spend enough money there, so I try not to by stuff I can make myself.

Roast chicken and veggies for dinner, probably potatoes on the side.
 
Thanks for your concern Alex seems ok. I sent him to school today loaded up with tylenol and cold medicine. I am still leaning toward alleriges but he sounds all nasally. He has 5 tests this week no time to be sick. Besides the schools are all jumpy because there is H1N1 all around us.

A real quick fly by my friends - I will BBl later.

I have to go to the car delearship as soon as I get off of work. We test drove a new car yesterday and now I want it. LOL We shall see.

Cold dreary day here. We have the Bloodmobile here today, and they are fixing chili. Oh my it smells so darn good. So much so, that I think that is what I will have for dinner tonight. Maybe some warm cinnamon rolls also. Hot coffee to drink. Yea, that should do the trick.
