Forbidden Journey definitely lets you walk-through-only, but I can't remember about Gringotts.

In my guess, you can chicken exit any ride so I imagine you could at Gringotts too. But, you'd have to wait in the line like a regular rider.

Yes. Technically, you can walk through any ride and chicken out at the end. That is the only way to see the queue at Gringotts. There isn't a separate tour only line like at FJ.

To walk through and see everything, you need to go in the regular standby line (no single rider) which could be a very long wait. Single rider skips most of the queue worth seeing.

As far as entering with your belongings, I think that is 50/50. I'm not a big fan of this ride, so I've spent quite a bit of time people watching while I waited for others. Sometimes, they seem very picky and won't let anyone in with anything. Other times, people tell them they are doing child swap or not riding, and they let them pass with a bag. I think it would be a 50/50 chance rather they believe that you only want to walk through the queue. It's too easy for people to lie in order to sneak stuff in.
 
DH has always been able to enter the HP lines while carrying stuff. But he can't fit on fj, dc, or Gringotts. They still do ask him constantly through the ride.
 
All rides allow all to walk through the line.

Unless it's a metal detector ride (DH is yearning to ride those so the fact that he can't makes him sad and he won't walk through the lines so I assume those rides won't let you carry stuff anymore) you can go through with stuff.

BUT like I just said, they ask and ask (and tell you) and ask again if you're riding. It gets a bit overwhelming to some personalities. If the kids might be bothered, it's worth knowing. Of course if they are too small for the ride then they obviously aren't riding. But the TMs will still remind you when you see them through the line.
 

Hulk, Gringott's, Forbidden Journey, Dragon Challenge, Men in Black, Mummy, probably Rip Ride Rocket, not sure about Fear Fall
I rode Gringott's, Men in Black, Mummy and Fear Fall multiple times this month with a phone and change in my pocket. Cargo shorts with button pockets; no problem. I left my sandals on the ground for Fear Fall.

DH will leave his phone in his pocket, but I usually don't have button pockets on my shorts/pants. Also, on Forbidden Journey, I end up sliding all around, to the point that I feel I could have hooked or buttoned everything a little tighter. So anything in my pockets would be asking for trouble.

You probably already know this, but a warning to newbies. Dragon Challenge is a metal detector ride, like Hulk. Empty out your pockets, even phones. DH and DS found out the hard way. Luckily, we had EP.
