At Epcot? Well, my favorite ride is Spaceship Earth and always will be!! LOL I have the entire 'speil' on my mp3 player, I just love that ride so much! Mission: Space is good too, but I hate being so confined in the area, so if you are claustrophobic, it is not a great ride to go on. Test Track is defintiely a must do each time and my daughter ALWAYS has to go to The Seas to see Nemo (her favorite movie). :)

As for World Showcase, the only thing I like to do is go with my husband and at each country, we try something. Like one time, we had a piece of chocolate at each stop, the next time we went, we had a beer at each stop (yeah, that was a fun night! LOL), ect. It is a fun way to try things you probably wouldn't otherwise. We always try to think of something different each time we go! :) This last time we went a couple weeks ago, we had a pastry from each country, although I didn't finish it all or I would have been sick! LOL

If you are eating anywhere, I highly recomment Le Cellier, that place is awesome and the food is so good!! I wish I had some Cheddar cheese soup right now!! :)

Sadly, I have no control over food--DFiance is "surprising me" with our ADRs. Should be interesting! I'm a pretty picky eater.. I eat like a kid- mac and cheese, grilled cheese, chicken fingers, :snooty: :laughing:

So I spent all day on the train sitting next to a grumpy woman. I tried to lean my seat back and she barked at me. Apparently, she didn't have enough leg room. Sigh. Oh well. I made it back to my place. It's raining again. :sad1:

My Monday has been okay-- I have a pretty bad headache today, Monday's are always wild- kids have tons to talk about with their friends and don't want to be at school (hey, neither do I! :rolleyes1 ). Other than that I'm good! This week will be pretty boring, except for my super exciting trip to EPCOT on Friday for my birthday!!! :dance3:

Definitely go on Soarin and the new Finding Nemo Ride. Oh, and Test Track, of course! Maybe you guys can sample food from every pavillion in the World Showcase. :thumbsup2

Yeah, he is pretty cute! I can't believe that he's 22! :eek: I think that the boy who played Edmond has cuteness potential. We'll see what he looks like in 5-10 years.

So, is it super cold where anyone lives? Here in Florida, it's finally get nice and I'm thrilled. Being a Florida baby, 30 degree weather gets to me, fast!

If you like to cook, you can make the Le Cellier cheddar cheese recipe at home! Here's the recipe. I found it on the Disney recipe exchange thread on the cooking board. It makes a lot, so you might want to halve the recipe.



Cheddar Cheese Soup
Canada Land, Epcot
Makes 1 Gallon

Ingredients:
1 lb Chedder Cheese
½ ib Bacon
5 ounces Butter
5 cups Milk warmed
1 cup Celery diced
1/16 cup Leeks diced
1 cup Red Onion diced
¾ Cup Flour
1 Quart Chicken Stock
1 ½ tsp Tabasco
3 tsp Worcestershire sauce
½ ounce Ale
Salt and Pepper to taste


Directions:

Slowly Heat Milk
Brown and render bacon
Add butter and melt
Add celery, onion and leeks and cook till translucent
add flour and mix into a roux
add chicken stock and simmer for three minutes
Add warm milk and stir vigorously to thicken
Reduce to low and add cheese and melt
Season with salt, pepper, Tabasco and Worcestershire sauce
Just before serving add warm ale

Nope, fortunately it hasn't been too cold where I live. I does get pretty cold at night, though. I grew up in year-round warm weather too, so 30-something degrees is too cold for me!

It's not too hard. Just keep practicing. Start off with some easy recipes and work your way up to harder recipes. Watching cooking shows has helped me a lot. I'm a visual learner, so it's nice to see someone demonstrating how to do the different cooking techniques.


As for some good beginner cookbooks....gosh I'd have to think about that one. Most of my recipes come from the internet or food/recipe magazines. I really love reading food blogs. The Pioneer Woman is one of my favorites. She has step-by-step pictures and has a great sense of humor. She also has a way of making you feel like you can attempt any of her recipes without fear. I'm hanging in there. Nope, didn't catch up on my sleep, but that's OK. I ended up going to my support group, then having lunch with my ladies. Then I went to visit some friends and meet their new dog, Bert the Beagle. Then I came home. It was a pretty good day. Oh, and I have a phone appointment with my endo on Saturday...

My day was OK. Kinda busy, but still good. I made some black bean soup for dinner. :teeth:
