The perfect storm or should I switch it up?

So I can't decide if I got super lucky or if there is a fatal flaw that I'm missing.
I picked up an 8am reservation at Akershus about 4 months ago for January 26. It just so happens that that day is also morning EMH at Epcot.

Here's the plan. We get to Epcot and start the walk back to Norway around 7:45. When we get there, don't check in but instead take a quick ride on Frozen...which should be open by the time we get back there if we delay a bit (but not too long) check in for our reservation at about 8:15.

Will it work???

You run the very real risk of being marked as a no-show for your reservation and thus run the risk of being assessed the $10/person no-show fee. For this to even possibly work you'd need to enter via the International Gateway and hope that allows you in front of the rest of the EMH rope drop crowd.

I would not suggest this. You need to decide which is more important, FEA or Akershus. Personally, I would have breakfast with the Princesses. If you try to bunch too many experiences into too short a time frame, nothing is fun. You do not walk to FEA< you end up running. You do not enjoy the attraction, especially if there is a line, you are anticipating how you get to breakfast in time. For me, this is stress and not worth it.

It's worth a try at least. I would be at the pre park opening breakfast gate before 7:45 though. Don't they usually let you in 20 minutes early for an 8:00am ADR to give you time to walk there? I could be wrong about that, but that is what I have in my head. Also, you need to get there early enough to get to the breakfast gate through the emh crowd. If you get back there quick, and are one of the first in line, you might have time to ride before check in and just be 5 min late. It is a hike, so you want to be let in as early as possible. It is really iffy though and I wouldn't count on it working. You won't be the only ones trying to get on FEA before an ADR.

Not when the park opens at 8:00.
