Tonight will be rack of lamb with a cabernet sauce, roasted new potatoes and asparagus. YUM!!!! If anyone is interested the cabernet sauce is a copykat from Outback and its yummy, I will post if anyone wants it. ;)
 
DH and DS won't be here so dd and I are having tuna casserole. We love it and they both HATE it. We are also going to Smokey Bones for lunch. Love their pulled pork!!

We ended up having the egg dish for dinner last night--it was really good.

Lindsay, your breakfast sounds tasty! I have some apple crisp cooking for ours. Dessert for breakfast, who-hoo!

I'm not completely certain, for tonight, but right now I am leaning towards a roasted chicken for dinner, with gravy, bread stuffing, roasted butternut squash, mashed potatoes, and green beans. Yummy comfort food, and I love the way a roasting chicken makes the house smell.
 

OUTBACK RACK OF LAMB CABERNET SAUCE

This recipe makes 7 cups of sauce - it freezes well.

1 1/3 c. cabernet wine
1/4 c. butter
2 1/2 Tbsp. flour
1/4 c. fresh parsley
6 c. au jus sauce (from packaged mix)
2 Tbsp. lamb seasoning (salt, pepper, mint & rosemary)
1 Tbsp. garlic powder

In a bowl mix 1/3 c. of the wine with flour, set aside. Put remaining wine, au jus, parsley, lamb seasoning and garlic powder in saucepan. Bring to a gentle boil, then turn the heat down and reduce about 4 to 5 minutes. Stir in the flour mixture.

While you are reducing liquid, brown the butter in another pan (Don't just melt it, BROWN it, but don't burn it). When you have finished reducing the liquid, add the browned butter and mix well. The sauce should be semi-thick. At this time you can adjust the mint/rosemary seasoning to taste.

This is my absolute favorite meal! Can I come over??? :)

We are going out tonight...I think we are leaning towards this new Chinese restaurant that we found...its hard to find good restaurants where I live now...I am so used to being close to NYC...now I live an hour away and no good food found yet!!! :)

My London Broil is in thr fridge marinating for tomorrow...the meat gets black from the soy sauce...YUM!

tonight is easy.

Shake n bake drumsticks for the kids and DH and buffalo chicken in a bag for me ( chicken breasts not wings) with french fries I think.

Monday is Canadian Thanksgiving so I always do a huge spread for dh.
 
Tonight I'm making Chinese Barbecued Pork Tenderloin, Asian noodles, and broccoli. The pork recipe is so easy and we all love it.

1 tablespoon hoisin sauce
1 tablespoon ketchup
1 tablespoon soy sauce
1/4 teaspoon garlic powder (or 1 teaspoon fresh minced garlic)
1 teaspoon sugar
pork tenderloin

Mix all ingredients together (except pork) in a small bowl. I use a 9x13" pan lined with foil, makes clean-up much easier. Place pork in pan, coat with sauce, and let stand at room temperature for 20 minutes. Bake at 350° for about 35-40 minutes, thermometer should read 150° when it's done. Let meat rest for 5 minutes before cutting. DS10 likes to dip his in extra hoisin sauce.

In large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce and taco seasoning. Bring to a boil; reduce heat and simmer uncovered for 5 min.

Meanwhile, separate crescent dough into 8 triangles; place in a greased 9" pie plate with points toward the center. Press onto bottom and up sides to form a crust; seal perforations.

Sprinkle 1 cup chips over crust. Top with meat mixture. Carefully spread sour cream over meat mixture. Sprinkle with cheese and remaining chips. Bake at 350 for 20-25 minutes or until cheese is melted and crust is golden borwn. Let stand 5 min before cutting. 6-8 servings.

Our family loves this meal! I usually make 2 pies at a time since I have 3 teenage boys! Serve with a salad. Delicious!!
Have you ever made it with plain tortilla chips. I can't use the nacho flavored ones as they have MSG and it gives me migraines.

Tonight I ate Chinese- my dad and boyfriend were busy building a closet and an entertainment center today and I was making a topiary out of baby things (bibs, socks, hats, washcloths, onesies, etc.) for my friend's baby shower in 2 weeks. I had steamed chicken with string beans in red pepper sauce. My dad had Moo Goo Gai Pan and my boyfriend had the "Honey Couple"- steak and chicken in a honey sauce with pine nuts.

Yesterday, we did a *ton* of shopping in Staten Island for birthday presents, baby shower stuff, etc. and we picked up a brick oven baked Pizza Margherita on our way home. I always want to eat pizza for dinner when we're in Staten Island!

I promise I'll cook *something* soon, though. :)
 
bear74 - I've made a similar recipe with Fritos (which is very good!) but have never tried it with tortilla chips. I think it would taste fine although maybe a bit less flavorful - certainly worth a try!

Same here (except I dont have a DS). I can only make it when DH goes out of town because he hates the way it SMELLS! :rotfl: Or I'll make it when I'm sick. Its a real comfort food for me.

For us tonight was Steak N Shake on the way home from a swim meet. Tomorrow will be grilled flank steak though, probably with twice baked potatoes.
 
Morning all!! Today is going to be a fun day (food-wise). We are having a very light lunch because I am making hamburgers steaks topped with sauteed green peppers and onions on top, with, strange as it sounds, teriyaki noodles on the side. But that's not the fun part. The fun part is dessert :) My husband and I have a fun little tradition. We buy the Toll House ice cream cookies like the ones you get in WDW and watch the planning video. 28 days until we leave! WOO HOO!!!

Lindsay--sounds like fun at your house tonight!! I LOVE those ice cream cookie sandwiches--I can remember the last one I had at AK, sigh, only 5 1/2 more months for us!

Not sure what tonight will be for us as we have a meeting at church and others are providing the food--I just hope it's not pizza, which we've had a lot lately. I haven't really cooked in 3 days, guess I need to get back on the bandwagon!
 
I haven't cooked for 2 weeks now. My Mom has ben in and out of the hospital, so it's been fast food :crazy: Today, I'm trying Glynis' famous pot roast! I was wondering about the ranch mix though, does it turn out tasting too ranch-flavored? Thanks.

Definitely NOT! I am not a fan of ranch flavored anything; I've made this recipe twice and it is delicious and I couldn't detect the ranch taste at all!

It's going to be a good one tonight folks!

Italian Herb Chicken

2.5 lbs. chicken
1 pkg. fresh mushrooms, sliced or halved
1 pkg. mccormick seasoning
2 cans stewed tomatoes, undrained
1 can tomato paste

Diections

Place chicken and mushrooms in the slow cooker.
Mix Seasoning, tomatoes, and tomato paste until blended.
Pour over cicjen and mushrooms. Cover.
Cook 8 hours on LOW or 4 hours of HIGH.
Remove chicken and vegetables to serving platter.
Stir sause before serving.

This is already cooking. We will have this over rice.
 
Not sure if I'll get to cook my Spaghetti Bolognese today, my Mom was admitted to the hospital yesterday with pneumonia. She's 83 and has Alzheimers, so its wait and see how she responds to treatment. I'm freaking out because this is what took my Dad's life one year ago. I'll probably spend the morning and early afternoon with Mom and then come home and cook. If anyone is interested the Bolognese recipe it is really good - I'll never cook regular meatsauce again.

Nope. For some reason, the mix of the ranch, italian and brown gravy really compliment one another. Hope you like it!
