Tonight it will be the artichoke chicken recipe listed in the OP. The pizza meatloaf muffins were a hit last night--I think DH had, oh, 5 of them!!!
 
Tonight will be Chicken in a lime butter sauce (quick & yummy) over angel hair pasta, with roasted asparagus. Have a great day everyone!!
 
I'm making a big pan of hamburger gravy and we'll have that over mashed potatoes and salads on the side. :sunny:
 
Leftover hamburger vegetable soup, here! It was yummy and made a huge pot! I think I'll probably make some biscuits or rolls to go with it tonight.
 

Tonight is one of DS's favorite dinners - grilled teriyaki (boneless) pork chops, rice, broccoli and egg rolls.
 
Today with be corn flake encrusted Tilapia and Clam Cakes...Clam cakes are a big RI thing.
 
BBQ ribs, corn on the cob, cole slaw and red potato salad. The ribs are done, the water is boiling waiting for the corn, the slaw and potato salad were made the other day so they are good to go. Now I just sit and wait for someone to get home to eat!!

***Hey to all my WFD folks!! I have a question for you. I posted yesterday on a brand new thread that I was having folks for dinner next week and was asking about appetizers. I have been thinking about it and may nix the appetizer altogether. Do you think that will be ok? We are having the cheesy chicken rotini (think the recipe is on page 1), salad, bread, and chocolate Kahlua pound cake for dessert. I am beginning to think there will be no need for a pre-meal snack. Do you agree?***

That definitely sounds like a very satisfying meal (BTW, if you are making that cake, I'd love to see the recipe!!) ~ so, I would say not to worry about the appetizer unless they are going to be arriving more than 30 minutes prior to the meal or if it was an actual dinner party. If it is just close friends and family coming for a meal and they'll be arriving very shortly before dinner, I say no need to put out an appetizer. This is JMHO ;) , I hope you have a great dinner whatever you decide! :thumbsup2
 
Ask and you shall receive :)

1 package Devil's food cake
1 box (5.9 oz) instant chocolate pudding
3/4 cup Kahlua
1/2 cup water
1/2 cup vegetable oil
4 eggs.

Preheat oven to 350. Grease and flour (I use Pam for Baking) a bundt pan.

Mix ingredients and bake for about 45 minutes (toothpick should be clean)


Easy, eh?? There is a glaze that goes with it, but I find it to be a little too much, so I just dust some powdered sugar on top of the cake after it cools and serve it with a scoop of ice cream or Cool Whip :)

Fridays are pizza nights at our house!! No cooking today!

As far as dinner goes, I think today I'm just going to make grilled turkey and cheese sandwiches and tomato soup. :sunny:

Well, I have a few minutes before I head to the grocery store to get everything I need for the pizza and cake so here it is:

Chicken with Lime Butter

4 skinless boneless breasts
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. oil
1 large lime
6 Tbsp. butter
1/2 tsp. dried dill weed
1/2 tsp. dried or fresh chives

Sprinkle chicken with salt & pepper. In skillet over medium heat, in hot oil, cook chicken until browned on both sides. Remove from skillet and keep warm. Squeeze juice from lime into skillet, over low heat, cook until lime juice just begins to bubble. With a wire whisk, stir in butter, 1 Tbsp. at a time; cook, stirring until butter becomes opaque and forms a creamy sauce. (Do not use margarine, or sauce will not be creamy). Stir in the dill weed and chives, return chicken to skillet just to warm through. Serve over angel hair pasta or rice.


P.S. I rarely use butter, but I find it really does make a difference in this recipe!
 
Lindsay - I think that your meal sounds really good. I don't know as you would need the appetizer at all. You could set out a veggie tray for people to munch if you want, but I don't think you need to stress out about an appy.

We're taking the kids to the circus tonight, so dinner will most likely be cotton candy, hot dogs and peanuts at the circus. At least it means I don't have to cook!

The hamburger vegetable soup I made earlier was so yummy! When I get back from league bowling, I'll post the recipe!

I agree. I might put out the bread early in case anyone's really starving. Maybe bread, with a dish of spiced olive oil (garlic salt and pepper?) to dip and a dish each of green and black olives. That way if someone's running late and you want to wait for them or something else they'll have something small to nibble on and there's basically no prep time. It's also kind of Mediterranean. :)

Meal sounds great btw! :)
