Tonight it will be the artichoke chicken recipe listed in the OP. The pizza meatloaf muffins were a hit last night--I think DH had, oh, 5 of them!!!

Maybe bread, with a dish of spiced olive oil (garlic salt and pepper?) to dip and a dish each of green and black olives. That way if someone's running late and you want to wait for them or something else they'll have something small to nibble on and there's basically no prep time. It's also kind of Mediterranean.
