Good morning everyone!! I normally wait for the weather to turn cool before I start making gumbos and soups, but down here that could be December. I've been craving a big pot of gumbo and today it will be chicken and andouille gumbo, with potato salad and french bread. YUM YUM!! :cool1:
 
Stuffed pork chops (premade at the grocery store), broccoli, and a homemeade cherry pie for dessert! :goodvibes
 
DS's favorite BBQ chicken leg quarters, potato salad, corn and rolls.

I have tried my own version of this, they are all probable similar. It comes out pretty good. Not the same as a start to finish lasagna, but for a quick version. it is fine.
 
We are going out to lunch for my birthday with my first DH Mom and sister. The Chinese buffet. My DGD requested it, and I am craving Chinese food. This one is pretty good. Dinner tonite is an easy one. Turkey burgers and French Fries.
 
Today were are having marinated steaks on the grill(if the weather cooperates-suppose to have storms :rolleyes: ) skillet potatoes, corn and chocolate cake for dessert. Yesterday's chicken in the crockpot was yummy so I'll share:
Crockpot chicken

4 boneless chicken breasts
1 small onion chopped
1 tsp minced garlic
whole baby carrots
potatoes
celery
1/2 box frozen peas
1/2 box frozen corn
1 tsp rosemary
1/2 tsp oregano
1/2 tsp pepper
1 small bay leaf
2 TBS butter
2 packs chicken gravy
1can chicken broth
1 can refrigerated biscuits(I used pillsbury butter flavored)

Combine all ingredients except frozen veggies and biscuits in crockpot , add water to cover if broth isn't sufficient. Cook on low for 7-8 hrs. 3/4 way through cooking add frozen vegts. and cut chicken into smaller pieces. Last 1/2 hr.to 45 mins. add biscuits.

Enjoy! The amount and type of veggies is an individual thing, and I don't measure, whatever looks right to you, same with the seasoning, I just put in an amount as a guide. If you like a lot of liquid just add more water/ chicken broth since the biscuits do soak up a lot.
 
I'm going to make chicken strips and more Latkes...We are still eating apples and honey,honey cake etc. also
 
While my pot of gumbo is simmering away on the stove I made cookies, cornbread and biscuits!!!! Don't be impressed it was Jiffy, Betty Crocker and Pillsbury!!! :rotfl:
 
I have a turkey meat loaf in the oven. I "expermented" today with it, so if it's good, I'll post the recipe. I also made semi-homemade mashed potatoes, mushroom gravy, green beans and salad.
 
Tonight was leftovers for me. DD got fed at church, so I didn't want to cook just for myself.

I have a rolodex for my recipes. Well, actually I have several. One has holiday and party stuff, one baked goods, and one every day recipes. I like this method because I can put a few cards in my purse and copy down a recipe anywhere. When I get home it can go directly into the rolodex (and they are alphabetized too). I also keep a few here at the computer so if something catches my eye, I can copy it down. I've found I could get rid of some of my cookbooks, by copying the recipes I was interested in to cards. This is a good thing because I have about a million cookbooks. Someday I hope to have them pared down to just a few. The huge benefit of this method for me is that I can go to chicken recipes and find all of them in one place instead of digging through tons of recipes.

Hmmm, that's a puzzle. I wish I could help, but I've never had that problem. It could be the store brand of gravy. Did you put the carrots on the bottom of the crockpot? I usually put the roast in first, top it with the gravy mixture, and then add potatoes, carrots and onions. Sorry I'm not much help!

Did you chop the carrots up really fine? If they're really tiny, they have more surface area to soak up more juice. Also, did you mix the packets up with the water and pour it evenly over the whole roast? Just trying to think of ideas . . .

I just tossed in a whole bag of baby carrots and it was perfect.
 
I put my carrots on the bottom and they were a tad salty, but no one complained, now I know to put them on top.

That is what I did too and it came out perfect. I gave the recipe to a co-worker who was gonna make it this weekend and I can't wait to see what she says.

BTW, I was reading the October issue of Better Homes and Gardens and they have a whole section talking about pot roasts and also several recipes. I had to laugh cause nothing can be easier or tastier than Glynis' recipe! :thumbsup2
 
For dinner tonight we had Cheesy Chicken Enchiladas. I made dessert too: Chunky Apple Cake with Butterscotch Sauce. It's getting to be apple season around here, so I am pulling out my apple recipes.
 
Dinner was with the in-laws...chinese food, blah. I hate chinese food, so greasy and salty. Oh well, it made them happy and dinner tomorrow will be better. I stopped at a farm stand and got some corn on the cob and peaches.

Ooooo, I want both those recipes!!! I love enchiladas, but don't make them often. And I love anything with apples!!!!!
 
Tonight we are going to the Cracker Barrell with a girl I work with and her husband :)
