So, last night we had a change of plans. We had an appetizer of gnocchi with a butternut squash-curry sauce, topped with shredded maple duck confit, followed by a statler cut roast chicken breast with a light cumberland sauce with bacon-roasted fingerling potatoes and a watercress salad, and ricotta torteloni with veal shank in a tomato-veal broth. Then we had a cheese plate and some grapes and almonds.

NO, I did not cook that! We went out to dinner. It was good. :)

So, tonight we are having the menu I planned for last night.
 
I making pasta and chicken alfredo with wine and sun dried tomato spinach.

Can you post the recipe? That sounds good. Where did you find spinach, though? There isn't any in the stores around here.

The spinach is frozen and has been in my freezer for ages..which recipe did you want? The alfredo or the spinach?

Oh, my gosh!!!!! I sat here reading it, my eyes getting bigger and bigger, and lines of drool running down my face. I was all set to ask you for the curry sauce, when I saw that you went out to eat!!!! I was ready to kneel down and worship at the brilliance of your cooking! It sounds like an amazing meal!!!!!

Of course, all the stuff you post is amazing!
 
Tonight we are having chicken fried steak on a biscuit, sweet potato hash (my absolute favorite), & mashed potatoes for DH. Real healthy eh? I've been craving it for a couple days and I caved.
 
DD came home last night begging for pizza. So I scrapped the spaghetti and salad plans and sent for take-out. :teeth: It's nice to have a night off now and then and I bought enough that we can have the rest on Friday before the homecoming game.

Tonight it really will be spaghetti and a salad. My meals don't sound very creative lately. It's hard just cooking for the two of us.

Smothering is a "to each his own" kind of dish. You did it exactly as I do, I'm glad you enjoyed it. The smothered dishes can be changed to use your favorite seasonings, make more or less gravy, etc. Just throw in whatever you have on hand!! :thumbsup2

I freeze them all the time...you can even put them in beef gravy over noodles or sweet and sour sauce over rice...or on top of pizza...the list can go on...

Take 4 chicken breasts and butterfly them-then fill each with about 1/2 oz of fresh goat cheese(cream cheese works well, too). Sprinkle with salt pepper and basil. Then simmer them on medium heat, covered with your favorite marinara. Even my picky boy eats this up!

Ah, that explains it. I think I am going to have to get some frozen...spinach is my favorite, I'm having withdrawal! :) I'd like both recipes, if you don't mind posting.

BTW, thanks for posting your salsa the other day. It sounds really good, and I forgot to thank you for sharing.

Ha ha! That would have been some cooking project for a Tuesday night, eh? It did taste good though, and we did not even have to do the dishes! :)

That would have been some cooking project for ANY night of the week, as far as I'm concerned! Glad you got to go out for dinner!

Quick question-

I don't have a crock pot, I just use the oven to cook my roasts- will Glynis's recipe come out as good in the oven as in the crock pot? Thanks in advance, I really want to try it! :sunny:
