Don't ask! We're rescheduling to next weekend. I got up and looked at the weather as it was nasty looking out. HUGE rain on the radar. Looked like there was no possible way it wouldn't rain for hours. So we brought in the sign (which had been torn apart and set on fire during the night most likely by little punks) in and decided to cancel it.

After all that, it never ended up raining. Not one drop! Ohhhh I was ticked but I can laugh about it now...really. I know that if I would have dragged all that stuff out, it would have poured so either way it is fine. It is looking like really nice weather next weekend so we'll just do it then.
 
Hi there, haven't posted here in a long time. Tonight is my family's favorite pot roast (Paula Dean recipe), which I've tried many, but this one is really good and it's a crock-pot recipe! Sides will be a very rich artichoke/green bean casserole, buttered noodles and cheesecake for dessert. I'd be happy to share recipes if anyone is interested. Except for the cheesecake - I cheated and bought one!

Sure TigerKat! I'm interested in the pot roast recipe. Please also include exactly what kind of meat you buy and how many pounds you usually get. Thanks! I love crock pot recipes! :wave:
 
Pot Roast

1 - 3lb boneless chuck roast
salt, pepper, garlic powder
1/4 c. vegetable oil
1 onion, thinly sliced
3 bay leaves
3 or 4 beef bouillon cubes, crushed
2 garlic cloves, crushed
1 (10 3/4 oz) can condensed cream of mushroom soup
1/2 c. chardonnay

Liberally sprinkle roast with salt, pepper and garlic powder. Using a skillet over high heat, sear roast until brown in oil. Place roast in crock pot, and layer onions, bay leaves, crushed bouillon cubes and garlic over meat. Combine soup and wine and pour over roast. Cook on low for 8 hours.

Enjoy - I have done this with chuck roast, sirloin tip and rump roast. All came out wonderful. I also thicken the gravy a little after it's done with a cornstarch slurry!!
 

We had bbq beef sandwiches. I put some tip steak in the crock pot this morning with bbq sauce and by tonight it's falling apart.... put it on a nice soft roll (with cheese if you like) and everyone loved it! My dh had 3 sandwiches (they are smallish rolls). It's something different anyway- we get tired of the same old same old!
 
Morning all!!

Tonight we are having leftover black bean chili. Boy was it good!!! I did something a little different this time. Instead of 1 lb. of ground beef, I added 1 lb. ground beef and 1 lb. ground turkey (not the EXTRA-lean kind, that's too dry for our taste). Mmmmmm! It was yummy!!

Friday DH was too sick to eat, so I just made myself a mushroom omelet.


Saturday I made chicken Milanese, and served that with macaroni and cheese, roasted cauliflower, and hollowed out pattypan squash stuffed with tomatoes, onions, and parmesean.


Sunday’s family linner was grilled cedar planked salmon on a bed of rosemary and pears, a fresh tomato tart which I baked on puff pastry, sautéed summer squash and zucchini, and Mom’s famous eggplant sticks. I changed the recipe for the salmon a bit and actually liked it better than the old recipe. Here is the new sauce:


Combine 3 tablespoons bourbon, 1 tbsp. soy sauce, 1 tbsp. brown sugar, ½ tsp. freshly cracked black pepper, 1 tbsp. maple syrup, 2 cloves chopped garlic, 1 tbsp. freshly grated ginger, and salt to taste in a very small saucepan and simmer over medium low heat until reduced by half and thickened. Put this glaze on your salmon before grilling.


Finishing sauce: combine 4 tbsp. butter, 1 tsp. maple syrup, 1 tsp. soy sauce, salt and cayenne pepper to taste in a small saucepan and melt over low heat, stirring, until butter is melted and ingredients are combined. Pour this sauce over the fish when it comes off the grill.


I’m not sure about tonight’s dinner yet. DH is still sick so I will have to see what he is in the mood for.
 
Hi all! I got back from our vacation early Sunday morning, so yesterday was not a productive day in the kitchen. I joined my DD for a school shopping marathon to two Childrens Place stores, the Disney Store (of course) and the stride Rite store, so I made a quick family favorite goulash with ground turkey tomatoes, onions, tomato soup, a little ketchup and elbows.

Tonite it is beef and broccoli, orange chicken, and some kind of starch. DH is going to the farm after work, so I want a fast meal.

Tomorrow is DGD first day of kindergarden so I want a special meal for her. I always did this when my kids were little, and I am feeling a bit nostalgic as I saw my youngest for a few days :cloud9: , and now I miss him more than ever :sad1: .
 
Hi everyone! Hope you had a great weekend.

Tonight I'm making BBQ chicken breast and some kind of pasta on the side, with some rolls. Yum! I bought a new BBQ sauce, I'll let everyone know how I like it!
 
I think I'm going to make Bourbon Chicken tonight.

It looks like Tropical Storm/Hurricane Ernesto is going to come through my area. They cancelled school for tomorrow and I'm sure will cancel Wednesday also. DS10 is mad because he'll have to make up those days during Thankgiving and Christmas breaks.
 
We are having chili (made with black beans) and corn bread. It's dreary and rainy here today so it's nice to have it simmering.
 
Tonight we are having Chicken Tetrazzini and Strawberry Salad.
 
Tonight I ended up making ravioli in a sauce of reduced chicken stock, butter, tomatoes and basil from the garden, lots of fresh ground pepper, and parmesean. I made garlic bread too but we did not eat it.
 
Ham, potato salad, deviled eggs. Chocolate pie slice for dessert. OK, slices! :teeth:
 
We had pot roast last night (Sunday) too. YUM, with mashed potatoes and creamed spinach...DH had brussels sprouts. Made the potroast in the crock pot. I sear it as well and season and then just pour a can of french onion soup over it and let it go. ITs great.

Tonight I was going to have spaghetti and meat balls but I was too tired when I got home (should have stuck it in the crock pot too) so we went out to a BBQ restaurant. (But neither of us got BBQ)

Toinght I am making spaghetti!! I am making my sauce a little different. Rachael Ray browned up some pancetta in her sauce recently and it looked so good I'm going to give it a try!!

Chicken in the crock pot. I haven't decided if I'm going to brown it in olive oil (after shaking it in flour and spices) then put it in the crock pot or if I'm going to put it in the crock pot and then put fat free creamy chicken soup in it. It will depend on how long I "dis" this morning! :thumbsup2

I hope that all goes well for you. DS is in Palm beach county, and he and DDIL did some last minute shopping yesterday. Stay safe.

Last night turned into tuna sandwiches. Tonite we are having roasted chicken with stuffing mashed potatos and gravy. I don't know what I will make for dessert.

I am craving a veggie soup, and bought carrots, turnips, peppers onions and cabbage, along with cannelini beans. I add tomatoes at the end. It is so good!
