Morning all. I had a restless night, had a crazy nightmare, and I wanna go back to bed. :angel::coffee::sick:

We are having leftover spaghetti and meatballs tonight. Boy, I made an awesome sauce :) WFD at your house?
 
Tonite I am heating the turkey in gravy, and serving it over noodles along with a green veggie. TG my family likes leftovers! :goodvibes

I didn't cook last night because we were out house-hunting so we stopped for burgers...tonight I am going to be in Indiana at my sister's and we are thinking we'll go to Lonestar for dinner (YUM, I love their black bean soup!). :thumbsup2
 
Going to have some Indian spiced veggies--Lindsay, would you mind sharing what's in your sauce? I"m trying to perfect a homemade sauce recipe and something is just not quite right! HOpe you can get some sleep today!
 

Tonight we will be eating in front of the TV (thanks alot, Sis, for getting me hooked on that darned American Idol!!), so I am making toasted paninis with the leftover chicken from yesterday, tomatoes, arugula, basil, mayo, and sweet onions. Oven fries on the side.
 
Yesterday we had Oriental Chicken & Rice. Today we're having leftover Easter ham.

I know I am late posting this, but I was supposed to have some nice halibut tonight with some grilled asparagus and probably a baked sweet potato, but my dinner got derailed when I called DS's pediatrician this afternoon because he had a bad cough over the weekend, and while better today, he is still coughing. They said we should come in for a listen. An hour and a half later, they tell me he has pneumonia. This is the child I took ice skating this morning...do they still have that Bad Parents thread on here somewhere?? Anyway, after the wait at the doctor's then the wait for prescriptions, no halibut. I had Indian food take-out, DS had a pizza and DD had a chicken sub.

We'll try for halibut again tomorrow.

I couldn't decide what to do with the chicken breasts I had out last night, so I decided to cut them into strips and make fried chicken at the last minute. I haven't fried chicken (or anything else for that matter) in years and it was so good! I also fried some onion rings, and we had corn on the cob and green peas.

Tonight I'm extremely tired so DH is picking up Subway.
 
I just read thru this whole thread and LOVE it!

Tonight we just had tater tot casserole...different from the Duggar's and I just threw it together..but was so good.

Tater Tot Casserole

1 pound ground beef, browned
1 can french style green beans, drained
French fried onions
Tater tots
2 cans low fat cream of mushroom soup, mixed with about half a cup milk
shredded cheese

Layer the ground beef then the green beans in a small casserole dish. Sprinkle enough french fried onions to your liking(one small can would probably work well), then layer with enough tater tots to cover. Pour on the soup mixture and bake at about 375 degrees til bubbly(I wasn't watching the time...sorry). Add enough shredded cheese(I used the fiesta mix) to cover or to your liking and bake til cheese is melted. Before I put on the cheese, I poked holes in the casserole to give a chance for the soup to run down in to the casserole.

My DD loved it and she hates tater tots. This would feed about 4 with a salad.

Thank you! I am sure he will. We caught it early...sometimes it is good to be the mom who bugs the pediatrician all the time...and I expect that when Little League starts in a week, he will be playing.
 
Tonight we are having a Rachael Ray dinner. She did a whole show dedicated to her dog, and this was one of the things she made. It was such a cute episode and it's also in the 365 No Repeats cookbook. It's really yummy :)

Boo's Smokey Chicken Patties on Buttered Toast (we are doing buns)

1 1/2 pounds ground chicken breast
1 tablespoon smoked sweet Hungarian paprika, available on spice aisle in small cans*, a palmful
1 1/2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
1/4 to 1/3 cup chopped parsley, a couple of handfuls of leaves, chopped
1/2 medium yellow skinned onion
4 cloves garlic, finely chopped
2 tablespoons extra-virgin olive oil, 2 turns of the bowl
8 slices sandwich white or whole-wheat bread
2 to 3 tablespoons butter, softened
2 cups chopped baby spinach, watercress or arugula (Boo would skip the greens)

Heat a large nonstick skillet over medium high heat. Place chicken in a bowl and add the smoked paprika, grill seasoning and parsley to it. Using a hand held grater or microplane, grate the onion into the chicken. (Boo liked onion juice and its flavor, but she did not like big pieces of onion). Add the garlic (Boo LOVED garlic!) and mix to combine. Make a mini patty, the size of a quarter, and cook it up, a minute on each side, to taste and check seasonings. If you want it really smoky, like Boo, you can adjust the seasonings accordingly. Drizzle the chicken mixture with about 2 tablespoons extra-virgin olive oil and form 4 large thin patties then place them in the pan. Cook patties 5 minutes on each side. Toast bread slices and spread liberally with softened butter. Serve patties on buttered toast with some chopped dark greens.

I will confess that the base of my sauce is from a jar, but by the time I'm finished, it tastes nothing like how it began :)

1 big jar of Ragu Old Worldstyle
1 lb. ground beef
1 red/green pepper, chopped
1 sweet/red onion, chopped
Some frozen meatballs (sometimes I make my own, sometimes I just take the easy way out)
3-4 garlic cloves, finely chopped
6 portobellinis, finally sliced
A splash of red wine (I use merlot)
1-2 tbs. grill seasoning
Pinch or 2 of dried parsley (you can also use fresh)
Pinch of basil (dried or fresh)

Hee hee, I think that's everything.

I brown my ground beef with the grill seasoning until it's done. Drain it off. While it's draining, heat a deep skillet over moderate heat (you could also use a soup pot). Saute in olive oil the following: pepper, onion, garlic, mushrooms. Just until they are tender, not mushy. Season with salt and pepper. Add the wine and reduce about 1 minute. Add your beef and meatballs. Throw in your jarred sauce and heat slowly. Add parsley. When sauce is hot and meatballs are heated through, add the basil.

You now have my sauce!!! It sounds like a lot of work but it isn't. The only reason I use jarred sauce is because it has a consistency I have been able to do yet.
 
Lindsay--thanks for the sauce recipe--I'll have to try it this week--let me know how your dinner turns out--haven't tried that one yet

But we are also doing a Rachael Ray 365 meal tonight--We're having the Pumpkin pasta with Italian sausage and wild mushrooms!
 
Tonight I am making flounder baked in parchment with olives, tomatoes, and basil, steamed harcort verts, and rice pilaf.
 
I still have that halibut from yesterday, but this morning I woke up with a cold :sick:

So now I am wondering if I can make fish chowder or some other fish soup using halibut. I usually use haddock or cod. Has anyone ever tried this?
 
You're sick? Gah! Get away!!

Halibut makes good chowder. You can use it just like cod or haddock--it will flake nicely. Here is my favorite chowder recipe:

Fish chowder

2 tablespoons (1/4 stick) butter
1 1/2 medium leeks (white and pale green parts only), thinly sliced, or same amt. of onions
8 ounces yukon gold potatoes, peeled, cut into 1/2-inch pieces
2 cups bottled clam juice
2 tablespoons chopped fresh thyme or 2 teaspoons dried
1/2 cup whipping cream or heavy cream
1/2 pound haddock or other firm white fish fillet, cut into 1-inch pieces


Melt butter in heavy large saucepan over medium heat. Add leeks. Cover and cook until leeks begin to soften, stirring occasionally, about 3 minutes. Add potatoes; stir 1 minute. Add clam juice and thyme; bring to boil. Cover pan, reduce heat to medium-low and simmer 6 minutes. Add cream; return to simmer. Add fish and simmer uncovered until potatoes are tender and fish is opaque in center, about 5 minutes. Season soup with salt and lots of fresh ground pepper.

2 Servings.


 
We are having soft ground turkey tacos with most likely refried beans. Last night we had boneless pork chops, instant potatoes, and mixed veggies.
 
We're having chicken breasts in the crockpot with pineapple peach salsa and rice...probably a salad also.
 
Last night I had Mozzarella stuffed chicken breasts, whole wheat cous cous, salad and asparagus. Will have to perfect the chicken recipe a little before I post it, needs a little tweeking. Tonight is grilled beef short ribs, some sort of potatoes (would like sweet potatoes but I don't know if I have any) and a veggie.
