I'm making a Rachel Ray recipe for Cashew Chicken

Ingredients3 tablespoons vegetable oil, divided
3 1/4 cups chicken stock, regular or low sodium, divided
1 1/2 cups jasmine rice
Salt and black pepper
1 bag of broccoli florets (16 ounces)
4 boneless, skinless chicken breasts, 6 to 8 ounces each, cut into large bite-size pieces
1 large onion, thinly sliced
3 large garlic cloves, chopped
1 red bell pepper, seeded and sliced
1/2 teaspoon red pepper flakes, optional
1 teaspoon ground coriander
1/2 cup orange juice
1/2 cup hoisin sauce
1 can sliced water chestnuts (5 ounces)
1 cup roasted, unsalted cashews
1/4 cup cilantro or parsley leaves, about a handful, chopped
PreparationHeat a sauce pot over medium-high heat, adding 1 turn of the pan of vegetable oil, about 1 tablespoon. Once hot, add jasmine rice, a little salt and pepper, and stir to coat in the oil. Add 2 3/4 cups chicken stock, bring up to a bubble then place a lid on the pot and turn heat down to medium. Cook according to package directions, about 18 minutes.
As the stock for the rice is coming up to a simmer, blanch the broccoli: Place a medium skillet filled with one inch of water over high heat with a tight fitting lid. Bring up to a boil, add some salt and the broccoli florets then cover and cook for two minutes. Drain the broccoli and reserve.
As the broccoli starts heating, start the chicken: Place a large nonstick skillet over medium-high heat with 2 turns of the pan of vegetable oil, about 2 tablespoons. When the oil ripples, add the chicken, spreading it out in an even layer. Let it completely brown up on one side – you will have to resist the urge to stir it – for about 2-3 minutes. Give the skillet a shake, then stir and continue to cook and brown the chicken for five minutes. Remove chicken from skillet to a plate and reserve.
Return the skillet to the heat and add 1 more turn of the pan of vegetable oil, about a tablespoon. Once oil ripples, add onion, garlic, red bell pepper, red pepper flakes, ground coriander and some salt and pepper. Cook, stirring frequently, for 2-3 minutes.
In a small bowl, combine the orange juice and hoisin sauce. Add the mixture to the skillet with the veggies along with the sliced water chestnuts and the reserved chicken. Stir to combine and add in the remaining 1/2 cup of chicken stock and the blanched broccoli florets. Cook the veggies and chicken together for about two minutes, or until everything is nicely coated and cooked through. Add the cashews and the cilantro or parsley and remove from heat.
Remove the lid from the rice pot and fluff the rice with a fork. Serve rice with a spoonfull of orange cashew chicken on top of each portion.

I have been a smoker most of my life. My parents both smoked as I was growing up. Well I'm going to try and make this long story short. I quit smoking 7 years ago and did very well until KATRINA turned my world upside down, needless to say I began smoking again the day after Katrina. I could use the excuse that the folks we evacuated with smoke, but I won't. With the deaths of my parents after that, well you all know the stress I was under.....

I've been contemplating quitting again for quite a while now and I can proudly say that I have been successful, it's been one week since I've had a cigarette and I'm doing VERY WELL!!!!!!!!! Johnny & Kyle are so proud of me, but I have to say it is the hardest thing I've ever done and I have a lot of work ahead of me with the anniversary of Dad's death this weekend. SO....

If you don't think badly of me now (I am so aware of the social stigma) I really would love to be able to report my progress and ask for support if needed, to my best friends.:guilty:

Why the heck would we think badly of you?! It's a habit, we've all had them and had to overcome them. Congrats on 1 week and keep us posted! I'll cheer for you! :yay: :yay: :yay:

Johnny & Kyle are so proud of me, but I have to say it is the hardest thing I've ever done and I have a lot of work ahead of me with the anniversary of Dad's death this weekend. SO....

I really would love to be able to report my progress and ask for support if needed, to my best friends.:guilty:

Kathy, I am so proud of you. I never smoked but have my own vice that I cannot seem to overcome so anyone who quits is a Hero to me. My DDIL stopped drinking and then stopped smoking. I cannot count how many times she tried to stop smoking before she was successful. She told me it was the hardest thing she had ever done. I believe her, so pat yourself on the back and keep reporting to us. Anything I can do to support you I will do.

I got good news yesterday the oncologist! My labs 4 weeks after the iron infusion look good! My iron is now in the normal range (it tripled!) and my hemoglobin jumped 2 full pts and it almost normal.

We will do labs and probably another infusion around Xmas. He said I'll never be able to absorb and sustain iron on my own again but I may get away with only 1 or 2 infusions a year. We're going to see how long this iron will stay in my system.

It stinks to have to do it but I hopefully will feel better now that I have more blood to function on.

I stopped smoking over 18 years ago. I still have cravings must be the addictive thing in my family. I sometimes dream about it and wake up tasting it. You have my total support.

I do have to say my best buddy Lauren has been with me every step of the way and I'd like to say publicly:

Has anyone else tried the Jack Daniel marinades in the pouch. This is now the second time I used them. I don't think I'm ever going to go with my own recipes again they are so easy and good.

Nope never tried them. What did you marinate??
 
I used the flank steak. But you can use pork chops or chicken or reg steaks. They are all premixed and in a zip lock bag whalla no mess.:woohoo: Plus the kid can put the meat in the bag and zip it up for me.;)

I have been there for Kathy but she has also been there for me as well. I was a social smoker after quitting a few years ago and finally gave it up the day after Labor Day. I did fall off the wagon and had 2 cigarettes this past weekend....I know, DUMASS! So aside from me beating myself up, my girlfriend, Kathy, has been there for me.

So, my dear friend, ANYTHING I can do for you, I will. :hug: :hug: :hug: You are doing so well and I am very proud of you! :hug: :hug: :hug:

PS: Now you all know why I can't lose my fat a** :) , I have been subbing food...:) :) :) Its just taking me longer...I wanted to lose 25 by F&W but its only 11 so far.

Janice, I have never used the Jack Daniels ones but the grill mate ones are pretty good.

Like I said earlier I could easily go back to smoking I mostly smoked when I drank. So I quit both at the same time. I can still have a few drinks with out smoking but anymore and the cravings get bad. That my crutch to bear.

Kathy - I am so very proud of you for your commitment to quit. I'll be pulling for you and praying for you. However, your smoking or not smoking does not in any way affect how I feel about you personally, anymore than I hope my being overweight doesn't affect how you may feel about me.

I know it is hard - I was a smoker about 11 years ago, but I know you can do it.

And that is 11 more than I've managed to lose. I think 11 pounds is great and it is amazing considering you are trying to quit smoking as well.
