Morning all!!

Well I hope my Tuesday goes better then my Mon. I should have pulled a garfield, and pulled the covers back over my head, grabbed a teddy bear and gone back to sleep......as garfield says "I don't do Mondays"
It was a mess...between being called in to sub last minute, and then dealing with a mother who for some reason does not think her child should have homework since he plays football, (which made for an interesting time at football last night seeing her again, lol), to coming home at lunch to do some bills, and in the process of sorting them, I SHREDDED THEM, so I had to find numbers to call to get the car insurance account number and address, and the women kept telling me I needed my acct number to get this....(what part of I shredded it wasn't making her understand I do not know), I then had about 8 phone calls to make, and played round robin with my Dr's office, and the hospital trying to get things lined up and ready for when I have surgery in 2 weeks. Then I went back to school, did the rest of reg time there, then had a meeting to get ready for a child advocate case we have to deal with on Wed. which looks like we have mother's boyfriends doing some "touching" so this should suck the life out of us as these cases are beyond awful.
When I did finally get home, Ross had a ton of homework, and I had a machine full of calls from customers who want to book their docks being taken out, and line up the winter work they want done on their camps, and summer homes.
Ross had football last night and they inform us that one of the boys that got hurt at Sunday's game, did infact break his leg. So I ran to the store to get a get well card and some little gifts, and had the team sign it so we can give it to his dad when he brings the equipment back tonight.
We got the team photo schedule last night as well, and it runs into karate tonight. So tonight Ross will go to karate, then I have to get him 20 min before it ends take him in his GI to football, and he will have to change into his football uniform there.
I also have to get him packed up today, as he is leaving tomorrow morning for an overnight field trip to an island off the coast of Maine with his gifted/talented class, I said that I would do the cookies and the meat sauce for the spag. for them to take with them, so I have to get that done as well.
My grandmother needs me to go get her some instant pudding mix so she can make a pie...she lives 20 min from me,and I would never tell her no.
And that friends is how my week has started.

Let me tell you a glass of wine (or 3) never tasted so good last night!!

Lori--I was glad to see you posted!! I wondered where you had gone off to!!
You get a paycheck...I am jealous....I do all the scheduling, banking, and book keeping for Kris and have never seen a paycheck...Oh well, he cuts himself one, and I do end up with that so I guess in the end it all works out, lol!!!

Nancy--16 days!!! holy moly I am jealous...now you take it easy and stay off that knee, we need you all set for the F&W, full reports are expected!!!
My mother always served family style, and then complained about the extra dishes it caused, and I hated it, I am a serve from the stove gal now, funny how things go in life, lol!!

Glynis- We like wendy's here too, and I love that it has some different options, though I think I cancel out the healthy chili by pouring it over the fries!!

Janice--Another day closer!!! How is the packing going??

I knew that you were close but this is way close! My DDIL and I went to SSR for a massage and I thought that the resort was so pretty. I cannot wait for details!

I did something to the ligament in my knee a few months a go. ....... but I am leaving for Disney in 16 days and EPCOT is a big part of our plans....so I have to get the inflammation down fast. If anyone here needs me this week, I am going to be perched on my chair with Book 6 of Harry Potter :goodvibes

Did you enjoy the massage at SSR? I'm thinking of trying to sneak one in during our upcoming vacation.

Please take care of yourself and your knee. You have all of your WFD family who will be waiting anxiously for your F&W report when your return. Not to mention we would hate to think of you limping your way through your vacation.

Wendie - your post made me tired just reading it. I would have probably had the entire bottle of wine. And as for your weather, at least you had a temp drop. We have been in the 80s (and were thankful to be there instead of the 90s) for three weeks. We may get a cold snap (read 60+ degrees) before October, but we generally do not pack away our shorts until mid to late October.

Tonight looks like dinner out for Kenny and I. One of his uncles is defying the no visitor rule his father imposed and is on his way down from Maryland. We are planning on taking him out to dinner so he and Kenny can talk away from the kids. We'll let them decide where they want takeout.

Meat thermometers are going to overcook your meat because the guidelines on the thermometers are set to FDA standards which equals totally overcooked.
I am so glad you said that, i never realized it and when i do jab my meat thermometer in when i am cooking and wait untill it reaches " that temperature" i always feel that the meat is dry and overcooked, but when i eyeball it the meat is great....good to know!

Yummmmm. I've never tried pepper jelly on brie, only on cream cheese. I think I must give it a whirl. For scientific purposes, I'm sure you understand.

I wanted it to go away but that has not happened so I went to see my BIL yesterday, hoping I could persuade him to give me an anti inflammatory drug and make it better. Well he saved me an office visit, but told me I need an Orthopedic guy, a cortisone shot and I need to stay off of it for a while . I could not talk him into a script to fix me up :mad:. I made a quicky dinner last night and tonight I am going to try to make a fast red sauce for spaghetti and sausage. I usually serve family style, but unless DD wants to get the table ready it is going to be plate from the stove. MY Mom used to do this and I never liked it, but I am leaving for Disney in 16 days and EPCOT is a big part of our plans....so I have to get the inflammation down fast. WFD: well, i will be home studying for my midterm tonight, Greg has a track detail..so i think i may whip up a sort of smoked salmon spread with the salmon and light cream cheese i have. I think i will eat that with sliced cuke and maybe some crusty bread i have lying around...I have a nice leftover turkey burger to eat for lunch, so a light supper sounds good! :)

I have everything out waiting for packing. To say I'm excited would be a major understatement. We are staying at the Saratoga springs since we are now DVC members (staying with the points I bought)

I have ADR's at Crystal place, Chef Mickey, Coral Reef, Le Cellier, Tony's, Cape May, Fulton's and Artist Point and of course many good eats at the food and wine festival.

:cool1: Can't wait to hear about Saratoga! And about Cape May & Artist Point too!!! BCV owners but we have yet to eat b,l or d at Cape May. :confused3 it always smells good when we pass by!!! We have an ADR at Artist Point for our F&W trip next month, so I'll want to hear all about that too!!! I hope packing goes smoothly for you!

Meat thermometers are going to overcook your meat because the guidelines on the thermometers are set to FDA standards which equals totally overcooked. I am guessing that you are using gas since you ask about flame height. If you are grilling over charcoal you don't want any flames at all, you would be cooking over the coals after the charcoal burns down.

What type of steak are you cooking? Cook times vary based on the cut, and the thickness of the steak. Another thing that is key to a well-cooked rare to medium rare steak is to make sure you give the meat time to "warm up" out of the fridge before putting it on the grill. Taking it out an hour or so depending on where you are living, temperature wise, will help cook the meat evenly.

It sounds crazy but if you are cooking a thicker cut of steak you want to pull it off before the meat reaches the final temperature you want it at (130 or so for medium rare), because the meat will continue to raise in temperature as you let it rest.

Can you tell I cook DH's meat by thermometer? I don't eat red meat, so I am all about the science to get a good result.

Nancy, Have you tried taking Aleve? That sometimes helps me more than other anti-inflammatory meds.

Last night's dinner was Tuscan Style Beans with turkey sausage. I'm still feeling under the weather & that was an easy meal. I really liked the sausage, Italian Sweet Turkey. This is the second Honeysuckle white turkey product I've used in the past week & I've been very pleasantly surprised with! Tonight will probably be leftovers, DH didn't need lunch cus he has a freebie today, so I still have lots of leftovers!

Tonight it's leftover spaghetti, salad, and bread. Boy was it good. I put some pancetta in the sauce. Mmmmmmm!

I would love your ginger roast recipe :)

Ginger Pot Roast
3 pound(approximately) chuck or rump roast
1 packet dry brown gravy mic
1 small can diced tomatoes
2 tsp ginger (if using fresh I just guess...taste the gracy while it cooks)
1 Tbsp Garlic
dash of worcestershire.
I place all ingredients in the crock pot and cook on high about 6 hours..Meat should be fork tender. Do not add water the the brown gravy packet, just dump the packet in there.
I add fresh veggies too, Potatoes, carrots, onion ,parsnips, turnips etc.. whatever is onhand

This was one of the standard recipes we used in the marines, although I have adapted it
 
I *think* we're going to have "Liams Pasta" which is what I just named it, can't remember what it's really listed under. The tomato and brie pasta. I don't want the tomatos to go bad so I think we'll just do it tonight.
 
I'm making individual ,3 cheese, pizzas so that DD can make a vegeterian one.. Homemade sauce, and dough.. We are having thm with choices of linguica, italian sausage, mushrooms, red peppers, onions, black olives..I love love love linguica on pizza

i'm ready to sit back and watch (hope) my Red Sox on their way to clinching the division

Oh, I just wanted to share that I am so proud of my cousin! She raised over 10k at her fundraiser!!! :) She did a tricky tray, 50/50, and a loose change jar. It was such a wonderful day for a wonderful cause...a number of CHD charities will benefit. I just wanted to share. :love: :love: :love:
 
I am making chicken stir-fry probably Friday. I use a seasoning packet (songbird, or something that sounds like it) that uses vegetable oil, soy sauce, and I think water.

My question is: I want to marinate my chicken so they will have extra flavor. Anyone have any recipes or ideas?

Gretchen - I thought I had posted a standard "smothering" recipe that can be used for pork, chicken, steak, etc., but I don't see it, anyhoo:

No measurements here - dredge pork in flour and brown in EVOO. Add sliced onions, bell peppers, mushrooms and minced garlic, creole seasoning and some wine or water to make a gravy. Reduce heat to low and let it smother away!!

I'd marinate the chicken in soy sauce, a splash of rice wine vinegar (or any vinegar you have) grated ginger & chopped garlic. :goodvibes

I did enjoy it. Erica had to choose one for me because I had never had one before. The atmosphere was relaxing, the staff very nice and the morning just wonderful. Plan enough time to enjoy the hot tub or sauna.

I hate to say to have a good time tonight, but I will say good for Kenny's Uncle!

I used to work in a Chinese Restaurant and the chef cooked American food every Saturday. He always added ginger to everything and I loved it! I can't wait to try this.

My Aunt has been craving McDonald's french fries for about a month now, and I get them for her. I always end up getting some for myself as well. Just what a chubby gal need before a vacation.....more fried food :confused3

You just had to mention my weakness, now didn't you??? I love McD's fries!!! Luckily, we very seldom go there. When we do, I just swipe some from my kids. If I were to ever break down and buy some for myself, I would eat until I was just sick! But what a way to go!!!

I hope your knee feels better quickly!
