Thanks you all are very sweet :cloud9: I'm like the old disney commercial so excited.

I'm sure you are excited. In our house we begin the # of days countdown at around 90. By the time we get under 20 we are all but in a frenzy. I hope you have a wonderful time! And for the record, I think you are very nice - even if you find the time to organize your pantry and work a million jobs and make the rest of us look bad. ;)


I grilled it on a cedar plank, it came out really good. I'm lucky I kept a close eye on it though, it did cook differently then the regular Atlantic salmon I've cooked. A sauce would have been yummier!

A Disney Wedding sounds so exciting. Now I know I don't really have to tell you this, but you will have to provide us with all the details. So make sure to take lots of pics and take good notes. ;)


Dinner tonight will be a Pork Tenderloin in a basil tomato cream sauce, au gratin potatoes and sauteed spinach.

Ok girl, you know both my boys love them some pork. I would appreciate the recipe when you get a chance.

Tonight's dinner is periogies with a sour cream sauce, broccoli, and french bread.

Morning Y'all,

We've started getting the rain from Humberto already this morning. I got soaked getting Alexis into class this morning! Sounds like we are going to get plenty of rain from it, but nothing more than that.

Nancy, I understand the test! Thanks to Hersey & Tigerkat for booing me, but I can't make the darn thing work!!! Even with the detailed instructions, all I get is the little x!

Don't know what's for dinner. I wanted to do Lindsay's Boo burgers but the grocery didn't have any ground turkey or even chicken! :confused3 I was going to run out to get it somewhere this morning but probably won't with this weather coming in.

Tonight we are having orange chicken in my slow cooker. I'll let you all know how it turns out.


Is this the recipe from the latest Kraft Food & Family magazine? I tried this one a couple of nights ago, & it was pretty good. Had the kids guessing what the "secret" flavor (orange) was!

Good thing I was home to watch the pot. I used chx breasts instead of thighs, & those babies cooked FAST, even on low.

Soccer & baseball will likely be cancelled thanks to Humberto's soaking, so tonight will probably be Kathy's Velvet Shrimp. We put up an ice chest of shrimp last weekend, so I finally have a ready supply of shrimp to cook again!

I'm already missing having lots of seafood in the freezer! With our scare from Dean, I cooked all of the shrimp in there, & just have one bag of redfish left! I don't want to get stuck having to evacuate again leaving a freezer full of seafood! ;)
 
Oh yes, my Mom did blow the surprise. We were all talking about something completely different and she just started blabbing about what we were going to be doing in Disney. I was like HELLO! (but Laura is right, she had guessed it a few days prior). So now I am just waiting for my Dad to confirm that he liked the flights I found for us and we will be booked. It will be a fun trip! Food wise, we have adrs at california grill, raglan road, coral reef, rose and crown...I might be forgetting some. We are planning on eating at the house some nights and also hitting sharks grill at sea world.

I also recently found out that I'm going down to Disney with DH in November for a long weekend. He has to be down there for business and so I am flying down to meet him when he's done and we are going to hit the food and wine festival. I think he is comfortable enough with me photoing my food that I might be able to take you guys on a photo tour of the festival. We got all the way around the world last time--it took about five hours and a lot of sharing (and a lot of dumping things out!), but we did it with minimal damage. I'm hoping we can replicate the feat this year.

Back to dinner, I have been craving halibut but the fish counter looked awful last night so I came home completely uninspired and cranky. I ended up making a kind of breakfasty thing. It's the egg dish recipe posted here already by me, except that under the eggs there is a layer of sauteed shiitake mushrooms and shallots. I also made some crusty bread and organic chicken breakfast sausages, and another salad with peaches in it. Pictures:

Tonight I am making shrimp--I have them marinating in a mix of lime, garlic, cilantro, ginger, habaneros, honey, and olive oil. I am hoping to find some sugar cane at the asian market to skewer them on. I have some ideas for sides but have to wait until I get back from the market--I have to see if I can find the ingredients for the dishes I am planning.

They don't usually have the wild salmon there, so I am not expecting that, but I am sure I will find something good. Sides will be broccoli, eggplant sticks, and a potato pancake made from the leftover mashed potatoes from the other night.

I'm leaving for the wedding in about 3 hours, so I'm just on here quickly to catch up and get my DIS fix before heading out. Mom and Dad don't have internet (impossible to believe, right?), so I have to suffer until late Sunday night.

Dinner will be at mom's, but I'm sure it won't be anything fancy. We may even decide to stop on the way down for a quick Arby's sandwich! Not too healthy, but my kids will eat them.

How do you make eggs look so fantastic! Your shrimp sounds yummy too! 2 trips to look forward too sounds great!

I hope you find something good! The coho was good, getting ready to have the leftovers for lunch, it also had a surprisingly milder flavor than other salmon I've had, which I liked a lot!

He is dying to play with them but none (either the 2 inside one or any outside ones) will come near him...Niki is stating to come around and Sasha wants no part of him. The cats are basically hanging out downstairs since Riley cannot do stairs yet.

Hello all! I'll be home alone tonight so I think I'll make a wrap and have some chips with it. Nothing special but easy and quick. By Thursday, I'm dragging and since I'm not getting a day off this week, I don't have time to drag =)

I have to agree with Gretchen......Who EVER finds time to clean out a pantry?!? Unless it's the "unidentifiable munchies"- oh, that sounds good-no, that- no, wait, that too...... Ya'll know what I mean!

But seriously- Janice- I never would have gotten my Harry Potter candy without you! Which I am now going to get to share with Ross at Christmas! That's pretty freakin' magical in my book! Thanks to you!;)


And dinner tonight is green onion sausages with onions and roasted garlic on toast...yummmmm, garlic breath and no one to complain about it!:lmao:

Gretchen - here's the recipe:


Pork Scallops with Tomato Cream

1 pork tenderloin sliced into scallops
flour for dusting
3 Tbsp. EVOO
2 Tbsp. margarine
2 Tbsp. minced green onion
1 Tbsp. dried basil
2 cloves garlic, minced
4 Tbsp. dry vermouth or white wine
1/4 tsp. dry mustard
1/2 c. tomato sauce
1 c. heavy cream(I use half & half)

Dust the pork in flour. Heat oil in a skillet and brown the pork on both sides over high heat. Remove the pork and keep warm. Discard the oil but do not wash the pan. Melt the margarine and add the green onions, basil & garlic. Toss to coat and heat through. Add the vermouth/wine and mustard and cook for 1 minute. Add the tomato sauce and cream. Stir well and cook until slightly thickened. Return pork to skillet and cook for 5 minutes. ENJOY!!!!

For some strange reason I have 3 packs of boneless chicken breasts, so dinner tonight will be chicken!

A lemon olive chicken, with couscous & a tabouli salad I think?!
