Oh, and then I forget to post dinner! (insert forehead smacking smilie here)

Tuna steaks (which I forgot to take to the tailgating cookout yesterday), seared with mixed green salad and steamed veggies.

And I've been making a great cucumber/tomato party "salad" thing for the cookouts. This makes a big bowl-

2 cucumbers- peeled, seeded, cubed
1 sweet onion, or mild white onion-diced
1 pt grape tomatoes, halved or quartered
1 pkg crumbled feta cheese (regular or low fat) plain or flavored- I used tomato basil
dressing just to moisten- I used prolly close to 3-4 tablespoons of poppyseed or honey vidalia(whatever suits you)

Toss all together and add some salt and pepper.

This was the first thing we ran out of last night- Even before the deviled eggs!

Thank you all so much for the wonderful advice, I knew what I wanted to say, but not quite sure how to word it and get my point across without seeming like a total you know what
..............and yes, my brother does know about the tax issue, and other expenses..I spoke to him last week and informed him of how much grammy k gets, and what and where it has to go out to. He was actually surprised by how much her lot rent was, as she lives in this little stick in the woods town. We had a whole conversation on it.
That is why this email from them took me quite by surprise. it wasn't from my brother, but my sis in law and my brother said she didn't want to pay for all the teeth money, I have a feeling that she might be thinking that since I offered to pay half of my dad's ticke,t if he didnt' take it then they could have that........well the whole point was so that my grandmother could see her only son once more.
I think what bothers me the most is that no one ever asks how is she doing and if she needs anything..........she is the kindest women in the world and no matter what they do or do not do would never think ill of them no matter how much she is hurt by their actions.
I will be the one to hold her hand while she cries that my father is not coming, and bite my tongue all the while.

SO thank you all for the advice...I knew I would get what I needed from you all.....I always do........

Erica has had an upper respiratory thing going on yesterday and today. I think her allergies tripped this, but she is exhausted...she is on the phones all day and today 3 people called out so she was extra busy.
 

I had that cold last week. Thank goodness it is short lived. Hope all gets well quickly. I haven't decided on dinner yet. Probably pork chops with some kind of sides. It looks no grilling since it wants to rain tonight.

Lauren What a cutie Riley is! Keep him away from that fox.
 
Aimee, reading that recipe it seems to me that the missing link is spice--amy spice! Coconut milk adds great texture but it can tend to mute flavors, so you might want to try adding some jalepeno, or some chili flakes, or even some hot sauce. This might sound crazy, but even adding a pinch of sugar could perk things up a bit. If you like curry or cumin, add some of that flavor in. You could also use chicken stock (boxed) instead of water to make up the extra liquid needed to cook the rice after the coconut milk.

Also, if it were me, I would saute the shrimp seperately from the rice, seasoning them with salt, pepper, or whatever, and then stir them with their pan juices into the rice afterwards, that way they'd be a little crispy, and the carmelized pan juices would add extra flavor. Oh, and I would squeeze in the lime juice from the lime you zested into the liquid you mix with the coconut milk. I hope this helps for next time!

Good thoughts! I kept thinking 'I need to throw some spice in there!' but I wasn't sure what to do, plus I hadn't cooked with coconut milk before and didn't know how much flavor it gave in the end.

Not a bad recipe, just needs more tweaking
 
Tonight we had salisbury steak with cheesy scalloped potatos. I used someone's recipe on here but when I c/p it, I didn't note who it was again!

It was REALLY yummy. I love salisbury steak but didn't know how to do it - so easy!

I also made just a boxed scalloped potato recipe. Threw it in, let it cook 20 minutes, pulled it out and wondered why it looked so soup and white. Um, because I threw the SEASONING PACKET out with the box! I dug it out of the trash, mixed it in, and let it cook another 10 minutes. Then it was tasty.

We are going to a Mexican restaurant called Monterrey's today. Mmm!!

We are having pork chop casserole today.


I season my chops with salt, pepper, and garlic powder and fry them with an onion.
Place 1 large can of crushed tomatoes in a baking pan. Sprinkle with marjoram, and place the chops on top, making sure to cover the chops with the tomatoes.
Add mozzarella on top, and cover with tinfoil and bake at 350º until the tomatoes are heated through and the cheese is melted.

While chops are in oven, make some wide noodles (I use the no-yolk). When ready to serve place some noodles in the center of a plate and spoon a chop on top.

Last night, dinner out was good (although Beck and I were whispering about how we liked some of our recipes better). We started with fried clams and Rhode Island style calamari. For entrees, I had striped bass (last of the season they said) served over wilted greens and a hash with chorizo sausage. BIL had the same. Becky and DH both had seared scallops served with creamed corn and johnnycakes. I had a taste, and the scallops were really good...very sweet. The kids had cheeseburgers, and Caili had a big hot fudge sundae with a candle in it for her birthday. It was a nice night. It was also DH's last night of leave. He left early this morning.

Today we are heading to Becky's for linner, and I have no idea what she has planned. Happy weekend everyone!

Tonight we have a couple's baby shower to attend and I am assuming dinner is involved. If not, we'll get something on the way home.

What I REALLY want is some dadgum BBQ after talking to PapaDeuce about it until the wee hours of the morning last night but alas, no time to get any for a few days. =(
 
:goodvibes happy saturday everyone!!! whew, that past week was a doozy!!

Last night we went out to a local bistro that serves mainly russian cuisine..so yummy! We split a mushroom strudel for an appetizer, i had a veggie primevera dish..( very greek inspired though, feta cheese, red onion) absolutely delicious..Greg had a chicken kiev that was coated in Panko crumbs..and we split a slice of chocolate cake..YUM....oh yah, and 2 glasses of reisling for me. ;)
Tonight: probably not cooking, we have a cookout at 4ish for my friend's birthday..although i am bringing a berry salad to that, does that count??

Geez - it's really hard to miss this thread for a few days - It takes forever to catch up!!
We're doing beef stew, salad and sourdough rolls for dinner. DS, DIL and DS's best friend are coming for dinner and DD is home for the weekend from college.

Laura - cut pics of Callie and her friends; the ones of her getting on the bus too - she really looks like you! Good thoughts and wishes going with your DH - hoping he comes home soon and safely.:grouphug: And a belated Happy Birthday to Callie!

I hope that we don't get it here. Last year I caught everything that was going around the school. I had no immunity and spent the entire year dreading the next school bout of whatever.

I don't know...maybe I was not in the mood for fish, but overall I found this meal to be pretty unsatisfying. The flavors just did not work for me. I did not eat much. I'm kind of moody and picky right now though. Other people seemed to like everything, though I know Laura agrees with me on the rice and marlin...right Laura? ;)

So, off topic story for today. I've already told you about my death-defying escape from the escalator from heck earlier this week....the newest installment of chaos is that last night, at 4 AM, the entire interior of our shared closet fell down! All the bracketing broke off and everything tumbled to the floor! We both woke up screaming thinking someone had broken into the house (the fact that we had watched two episodes of Twin Peaks earlier in the evening did not help matters!). So now, we have to figure out how to rebuild the inside of our closet. Boo. :headache:

Thanks everyone for the well wishes for DH. He called a little while ago to let me know that he had arrived back in OK safely. Tomorrow he is driving to KS, and he will train there for a couple of months before deploying again. I was a little sad today, but at the same time, I am also looking forward to putting my house back together. Three weeks out of my normal routine, and the place is a disaster!
