Last night I made a morrocan tagine of chicken with honey, cumin, parrika, orange, olives, and dried apricots with a pilaf that cooked in the bottom of the tagine with some pine nuts. I have pictures that I will post when I get home--it was too late last night to upload anything.

So, here is the scary way I started my work day! I was riding the escalator up out of the train station with about 500 other people, when, when I was about 2/3 of the way up it stopped. Then, it started going backwards very fast! Of course everyone was totally packed in so it was very dangerous. Everyone was trying to run towards the top, but the stairs were kind of sliding off into weird sizes so people started falling, including me! Thankfully someone was able to hit an emergency brake to make it stop moving, but now I have "escalator legs."--escalator shaped cuts and bruises on both of my lower legs. Plus I have a banged up left knee and a huge bruise on my right thigh. Honestly it was not that big of a deal, just bruises and scrapes, but it was very scary. I don't think anyone was seriously injured.

So, from now on I am taking the stairs for sure! ;)

I am not sure WFD tonight. I know I am making an asian menu one night this week, but I'm not sure I am in the mood for that today. Backup plan is probably either panini or pasta, nice comforting food for me and my escalator legs.

Hi All!

We went to my Mom's today so I put some chicken in the crockpot with cheddar cheese soup, cream of chicken soup and salsa. I will serve that with noodles, salad and some other veggie.

I have another animal story to share....last night while grilling (my grill is in the screen porch) and I look up to see the outside cats and there is this dirty, coughing, sickly looking fox!!!!!!!!!!! :scared1: :scared1: :scared1: Well, I start screaming to Tom...so loud the neighbors came running out (we all have at least an acre of property so I was yelling really loud)...the thing did not even react when I was yelling...:scared1: :scared1: :scared1: . I called 911 but it ran away before the cop could get to it. So needless to say, I think I have a rabid beast in my yard. Never a dull moment here.

My baby is returning to school tomorrow...I'm a little sad.

I hope everyone is well...I fell behind with reading and posting.
 
Becky--Holy Moly....I can only imagine how scary that must have been, so glad you are not hurt any worse then you are. Take it easy tonight, as I am sure you will be a bit sore in the morning from it.
 

Sounds yummy, what's the recipe??

I took a try at making my out tomato sauce with fresh garden tomatoes. Not too bad!

I didn't really have a recipe necessarily, I just sort of put it together from my head.

Boneless Skinless Chicken Breasts
Enchilada Sauce
Monterey Jack Cheese Shredded
Corn Tortillas
Chopped Onions
Taco Seasoning Packet

Brown the chicken breasts, with the onions with a little bit of the taco seasonings until not pink anymore. Then shred chicken, add a little of enchilada sauce and taco seasoning, heat through.
Layer on top of corn torillas in pan, top with sauce, chesse, repeat, end with tortillas, top with sauce and cheese bake 350 for 25-30.

Becky- Thank God you are okay! You say now that it was no big deal, but I cannot imagine how frightening it must have been

Lauren- I hope that you catch your sick fox....rabies is no joke, especially with all your babies who have a safe haven in your yard.

Gretchen- I don't know how it tastes yet, but it sure smelled good in here. It is a Taste of Home recipe, and those are generally tried and true so I hope it is good.

I made a Depression cake today because it has no eggs or dairy in it. Kady likes ginger cookies, hermit and cookies with raisins. I added a dairy free frosting, not my favorite cream cheese just for her. Well I cut a little corner off for her to try. Imagine my hurt feelings :sad1: while she ran to the trash and spit it out, wailing all of the way . I think I am going to stick to Oreo s for her....I am not batting 1000 in the baking department for her.

Becky I so glad your fall wasn't worse than just scrapes. I always have a fear of escalators since I was knee high. Take it easy tonight you will be very sore tonight and tomorrow.

Lauren You had me nervous for a minute, I thought you had adopted that fox too.:rotfl: Be careful.

DH got one of his wishes tonight and we had Indian food. Why is it that for the first couple of weeks he was home, all he wanted was my cooking, and now all he wants is takeout? :confused3 Should I be offended by this?? :laughing:

Becky, I am glad you are okay! I am avoiding escalators from now on.

Nancy, I am sorry Kady isn't enjoying the dairy-free baking. If I come across any more recipes, I will let you know. Both Liam and Caili are in classrooms with children with allergies this year (in the afternoon Kindergarten, 14 out of 42 students have food allergies :eek: ) so maybe some new recipes will be sent home.
 
Laura- don't worry about DH and his take out binge. I bet he is trying to fill up on all of his favorites before his deployment.

Humongous disclaimer......Not about your cooking...... When I was talking to Chris he told me how much he missed his Mother's cooking :confused3. Are you kidding me?????????No. Boy he sure was homesick because my sister cooks best when she gets ready to eat from Costco :lmao::lmao::lmao:

Kady just does not like baked goods too much. But I feel badly if I bake something she cannot have, so I keep trying.

Gretchen- dinner was good, but overcooked. I followed teh recipe...something I am not good at...and I wish I tinkered, but it was a Taste of Home recipe.....

The potatoes were very soupy but that was good because my beautiful thick cut chops were dry. I'll post the recipe tomorrow, but I think you will want to tinker with it. The taste was good and the potatoes were good, but way overdone.

Your tagine sounds heavenly!!! I love Moroccan food, but don't have the courage to try anything like a tagine! One of these days, though, I may break down and buy one so I can try!

I think ordering in would be a good way to pamper your escalator legs.
 
I guess I'm glad that I spent today with my dad, especially if there was no DIS. I had a great time with my dad, though. We got a lot of shopping done for my baby brother's wedding. So fun!!!

Dinner last night was really good! We had the smothered chicken from this thread. My kids loved it. There was so much sauce that we used it over mashed potatoes, and it was wonderful!!!

Tonight we are having American Chop Suey. It's smelling really good.

Your going to be fine, I know it's hard with A going back to school, but remember and cherish all these moments with him, because when the teenage hormones hit.......well I won't go there.;) If tomorrow is especially tough for you, I'm here, you know what I mean.:hug:

Morning all--
I have p/t first thing this morning, then I have to go to visit my mil....((((aaaarrrghhh)))) then I will come home and drink heavily....I am kidding....at least at this moment I am kidding, I should prob leave that open until I am back from a visit with her huh, especially as this is when I will be telling her that we will not be here for christmas....oh yeah this is going to go over well.....I better check the wine fridge to make sure it is well stocked, lol.
Ross has karate tonight from 6:30-7:45, this is to have a small workout in, as they have had a month off, and have a tournament on Sat.
Dinner tonight will be split into two parts---half b4, and half after karate
I am thinking tomato soup b4, and then a sandwich afterwards with fruit.

Morning All!

I am trying a new recipe today...Pepperocini Beef in the crockpot. I will shred that and serve it on whole wheat buns and cheese. I think a salad on the side.

I am not sure if the recipe is posted here but if its good, I will post.

Wendie, good luck with that today! I know yuor pain. I am going to see my inlaws this weekend at which time we will be telling them that we are not going to be joining them on Thanksgiving.

Tonight I am making the asian menu I had planned--summer rolls, a brothy chicken-cilantro and garlic soup, dry fried salt and szechuan pepper tofu, and chili stir fried bok choy.
