Wow, lots to catch up on.

We're going to DH's parents house for dinner tonight. They're having roast beef, mashed potatoes, carrots, and I'm taking a salad.

Now I have to go clean the house because the in-laws will probably stop in when they drop DH off. The 3 of them went to the beach this afternoon.

Tonight we are having chicken satay with peanut sauce rice and snap peas.

Hi, everyone! My internet has been wonky, so I haven't had a chance to post until now.

Dinner tonight is easy. Soup and sandwiches! DH gets home from the mine tomorrow morning, and we are taking the kids to the zoo to see the white alligator on loan to us. Hopefully, I'll be able to find a sitter for tomorrow night, and Alan and I can use the GC to Ruby River that his boss gave him for all his work at the mine. Keep your fingers crossed!
 
Hersey--we are heading down to WDW on the 25th of October and will be there until the 29th. Just a long weekend, but jam packed with stuff. F&W, MNSSHP, ToT race, meeting some up with some friends--it will be a blast. Still trying to decide on costumes for the party for our family.

Becky--Yum on the pics and on the weekend menu. So are we all invited???

Dinner tonight will be out somewhere. DH wants to go out, and I'm not arguing! But he said he would think of someplace--so I'm still not exactly sure what we're having! I get to work this weekend (at least not Monday) so dinner will be less than stellar--probably pasta and frozen pizza. Hoping to get to the store and grab some ribs for Monday--but we'll see.
 
I post these menus now to give Laura advance notice to come with her game on this weekend! OH, and don't forget, Laura, to bring your deep fat fryer and please also bring back the bottle of vanilla extract that you stole from me. :lmao:

Dinner today was easy...cheeseburgers, chips and salad. We had neighbors over this evening, so I made sangria and guacamole and they brought chips and salsa.

As you probably read, I am Becky's kitchen slave...uh, sous chef...for the next two days, so I won't be checking in. However, I am sure she will have photos to post.

It was....erm....barely edible, as always. Pictured here we have a "fabulous" turkey panini...one slice of turkey and one slice of flavorless cheese on two week old bread...no condiments...$7.25. Then, you can see my most excellent white wine, served in a plastic cup, a bargain at $7.00. Too bad it was not drinkable. Totally my fault, I should have known better than to buy a glass of wine at a ballpark! The one funny thing is that I got carded, which has not happened to me in years.

Thankfully, you can see that I had my backup beverage in the background, a "delicious" canned heineken, another bargain at $7.75! Not pictured is my 12 ounce bottle of water....$3.00.

You'd think with those prices they could at least win the game, darn it!! :confused3

That's why we go to watch the minor leaugue team by us Kane co Cougars the food is way better not necessarly cheaper just better.

WFD tonight is BBQ Shrimp, french bread and sweet & sour macaroni salad. YUMMO!!

Your wine complaint is the same one I have. I had a "glass" of wine at teh Bushnell and Dh is still complaining two years later that it was $7 for a little plastic cup of dreadful white wine. Every time we go he asks me if I want $7 cup of lousy grape juice :rotfl:

No cooking for me today. We are going to the Allentown, PA state fair!

You have fun too! I love the fairs and am waiting impatiently for the Big E! I will snack my way through all of the State buildings and all of the booths and I will not whine and neither Buddy ( who will not snack, he will eat) about the prices. For some reason I will pay $3 for a cup of coffee and $4 for a little bag of mini donuts and will be happy to do it. Everything just tastes so good at the Fair!

Kathy- there is a commercial about farm raised shrimp verses wild caught shrimp on TV and every time I see it I think of you and my NOLA friends. I see the Gulf and I hear Justin Wilson in the voices and I see you all enjoying your amazing shrimp dishes :thumbsup2 that you share here with us. Kind of like a photo that reminds me of my family

We went for Chinese last night. I went shopping with the girls and Jeff and Buddy took advantage of the quiet to fall asleep on the couch. He had his sandwich and we had some of the best Chinese foods that I have had in years. I want to go out for dinner tonight, so I have my fingers crossed for Glynis and for me as well.

DH is very picky, but loves this cake.

Apple Harvest Cake

3/4 cup quick-cooking oats
3/4 cup warm apple juice
2 tablespoon veg. oil
2 large egg whites
2 teaspoons vanilla extract
1 tablespoon butter, melted
cooking spray
1 cup packed brown sugar, divided
1 large granny smith apple, peeled and thinly sliced
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt

Preheat oven to 350º
Combine oats, apple juice and oil in a small bowl; let stand 10 minutes. Stir in egg whites and vanilla. Pour butter in the bottom of a 9-inch cake pan coated with cooking spray. Sprinkle 1/4 cup brown sugar. Arrange the apple slices spoke-like on top of brown sugar, working from the center of the pan to edge. Combine 3/4 brown sugar, flour, baking soda, cinnamon, nutmeg, and salt in a large bowl;stir with a whisk. Add oat mixture; stir just until moist. Pour batter over apples. Bake at 350º for 40 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Place a plate upside down on top of cake; invert onto plate. Cut into wedges.

Thank you for joining in! While my DH will eat almost any kind of cake, actually any kind of baked good :rotfl:, he is partial to apple cake, so this is added to my file already, just in time for Fall baking :thumbsup2. Thanks for shearing!

One of the nice aspects of the recipes here is that they are all tried and true. While individual tastes may vary if the style and ingredients are similar to what your family enjoys there is a solid chance that the final product is going to be a winner. My family always asks "whose" recipe I have used :thumbsup2, and the two lurkers in my family make requests based on the days postings.
