Since we are going on our new points we are staying at our home resort Saratoga springs. I hope it is nice the pool looks really nice according to the pictures. I soo need this vacation.
 
What's going on back at the mine?

I don't really know. Alan got called about 10:00 last night telling him to head up first thing this morning. Supposedly, MSHA has something they want to tell the families. I should know in about 2 hours. I'll let you know.

I heard this morning they were drilling yet another hole. Please post when you hear.

I cannot imagine how the families are getting through this. It seems to go on and on :sad2:

Well dinner turned out to be roasted chicken, mashed potatoes, sugar snap peas, gravy and a tomato salad for Buddy, which he had to make himself.

I could not find the chops in the freezer and because we have a chest freezer I did not look too hard.

I used Coffee Rich in the potatoes and we finally liked them. I usually use chicken stock and some olive oil or Kady's Soy Garden spread but I wanted a change. I have not been able to get used to soy milk in mashed potatoes

From what Alan told me, they are having tons of trouble with all the holes already drilled. The mountain is "moving" (coal is shifting), so it's really undoing all that they have already done. He said that even if they did drill the 30 inch hole for the capsule rescue the families want to try, the shifting is much too dangerous to send anyone down. Add to that the fact that it takes 2 hours to lower anything to the depth where the miners were, and oxygen tanks that they have only hold 4 hours worth of oxygen. Tell me, just how much searching could they do once they got down there. It's just a lose-lose situation all around.

The owner has shut down the mine permanently, along with one other mine in the same area. He told all the laid off miners that they could choose to work at one of his other mines in Illinois or Ohio. They had 2 days to make a decision. Those that chose to go will have to relocate themselves at his expense, work 3 weeks and have 1 week off to come back home to visit family at their own expense. The biggest problem is that most of the miners are also farmers. It boggles my mind how he expects them to mine for him in a brand new state while trying to hold on to their farms and families.

I didn't get to post at all today...Andrew and I were busy running around...the both of us had to go for bloodwork then I took him for brunch and shopping...boy, the Liz Claiborne outlet had some great sales!!! I got a really pretty dress for dinner at the Cali Grill!!!! :cool1:

I am not a soap watcher...every once in a while I will flip on Passions...because...

Sheryl, get this ;) , my sister's friend's SIL plays Sheridan Crane on that show and I met her once at my sister's house and she LOVED that London Broil recipe!!! She is the one that taught me how to clean my Foreman Grill...:) :) :) OK, I know its no big deal but hey, it was a great compliment coming from a soap star. :)


Steaks would probably be best, but I had Lauren's vietnamese marinade in mind for london broil & pork ribs. I have to decide, cause I need to start marinating now, if it's going to be super yummy. I know if I do everything with the marinade though, the picky ones will freak! So I have to think some more about that!

Speaking of suitcases....does anyone have the Disney set? I just bought 2 sets since they were on sale. My cousin is having a fund raiser for children's heart defects and I am going to donate 1 set for the raffle so I am hoping they are decent.

OK, so I know I am babbling but its Thursday and if you guys haven't noticed my pattern, thurs is cocktail night for us....:) :) :)

I made sort of a mixed grill tonight...chicken wings with this awesome garlic/parmesan buffalo sauce that I found, shrimp kabobs, steak and tossed salad.

Oh, I also made this really easy chocolate dessert last night...I was craving chocolate...go figure! So, we had that too! :thumbsup2 Here is the super easy recipe:

Grandma's Favorite Chocolate Dessert (I did not name this ;) ):

1 prepared angel food cake, torn into peices
1 large box instant chocolate pudding, prepared but do not let set
1 large tub cool whip (or 2 small ones)

Place torn cake into dish (I used a 9x13). Pour pudding over the top and gently mix to coat the cake. Spread (ice) cool whip on top. Let set for a few hours. Enjoy, but not like us, who ate almost the whole thing in one sitting!!!! And that may dear friends, is why I have nicknamed my rear "Caboose"! :rotfl:

Thanks all for the superwoman comments!;) I just have to stay busy. I'm more of an on-the-go mom instead of a sahm! And 2 of my jobs, my kids are with me, so big bonus there!

Hersey and Lauren--I really like SSR--it is big, but I really like the convenience to DTD and the new Grandstand area is a big hit with my kids. We'll be back there in October for MNSSHP. We're trying out BWV in January for the marathon weekend, just gotta love the proximity to Epcot.

Tonight ended up being enchiladas. DH was happy, the kids, not so much! PB&J for them!
 
I can't believe the miners are still going through so much. To lose a coworker and friend is bad enough but then to add insult to injury and take away their livelyhood is downright cruel. =(

My dinner was interesting tonight... I ate like a bachelor. I had a bowl of warmed up spaghetti noodles with butter. Then my tummy growled an hour later so I warmed up leftover refried beans and cheese on a tortilla.

And I'm still hungry.

I haven't been to the store in weeks because of our schedules. DH is out of town this weekend and I may have to go so I don't eat out all weekend.

We love the DDE card! Even on our 1st trip alone with it, we more than made up for the cost of it. And then the trip with BIL &SIL & Alexis, WOW, we saved some big bucks on that one!!! :goodvibes

That just keeps getting sadder & sadder. What a shame for all those families.:sad1:

It started raining again today, so I didn't get out to the grocery to get all of the food. I'll see what looks good, but I'm going to look for some pork ribs & london broil steaks. I hope that will be enough time to marinate them for Sunday (decided to have our Labor Day gathering on Sunday instead.)

This company really does produce some very authentic New Orleans style food in easy box mixes. (Just my own little promo here to our region's businesses.):laughing: In fact the home office is very close to me & pretty much down the street from Kathy!!!

Hmm..i really want to cook tonight since the next two nights will be a rehersal dinner and then a wedding ( i'm in it.its my friend Meg getting married)..but Greg is craving chinese...dilemma!
OH sidenote: for sushi last night i had a cali roll, lobster maki roll ( the rolls are on the smaller 5 pcs side) and 2 pieces of salman sushi..YUM! :love:

You can tell from the lighting that we ate really late! I think it was around 9:30 PM.

No cooking tonight, but I can take a picture of hot dogs and beer for you from Fenway if you want!

This weekend is going to entail some SERIOUS cooking. Here is the menu so far....

Saturday: ANTIPASTO
arancini, fritto misto, bruschetta, olives, assorted sausages, 2 types of fritatta (leek-onion and mixed herb), proscuitto-wrapped asparagus with fontina, white bean salad, marinated mozzarella, eggplant fritters, roasted onions, arugula salad.

Sunday: CARIBBEAN FEAST
Grilled swordfish with mango-pineapple salsa, grilled caribbean rice bundles wrapped in banana leaves, coconut corn pudding, rum-soaked baked plantains, roasted cinnamon squash, and spinach provision.

I am also trying out a dessert this weekend, probably Saturday--white chocolate souffle with vanilla bean cream anglaise sauce and homemade chocolate dipped almond toffee.

I post these menus now to give Laura advance notice to come with her game on this weekend! OH, and don't forget, Laura, to bring your deep fat fryer and please also bring back the bottle of vanilla extract that you stole from me. :lmao:
