Sheryl - I have printed the recipe and I'm going to try it this weekend. I wasn't going to ask for it because I figured it would be too labor intensive. But that looks like something I can manage within my time schedule.

Tonight I ended up making Wendie's ranch onion pork chops. They were delicious. And easy. My favorite two things. Kenny is taking the leftovers with him for lunch tomorrow.

Kathy - I don't have any shrimp stock and don't have any coming in the near future. When you said you used clam juice, did you mean the bottled kind? (Sorry for the dumb question).
 
Janice, here is the recipe. I just improvised on the sauce, so feel free to add or subtract to your taste.

Flounder with Tomato/Herb Cream Sauce (serves two)

For Sauce:

1-2 tbsp olive oil (or butter)
1/2 medium onion (Mine was a young red), finely chopped
8 cherry or grape tomatoes, quartered (or one regular tomato, chopped)
1/4 c chopped herbs (I used parsley and basil)
1/4 c light or heavy cream (I used heavy because that is what I had)
salt and pepper to taste

Heat olive oil or butter in pan. Add onion and saute for a couple minutes until it starts to soften. Add the tomatoes. Cook for 3 minutes, or until you can break the tomatoes apart to form a sauce. Add the herbs and then the cream. Stir until heated through. Add salt and pepper to taste.

For flounder:

1-2 tbsp butter (depending on the size of your pan...you want it to be well-oiled.)
1-2 tbsp grapeseed oil (substitute olive oil if you don't have it)
buttermilk or milk
flour (I season mine with salt and pepper)
4 flounder fillets

Heat the butter and oil in a skillet until hot. Dip the flounder in the milk, then dredge in flour. Add to skillet and cook 2-3 minutes per side depending on thickness. (Mine was fairly thin, so once I cooked it on one side, it only took enough time to brown on the other side for it to be done.)

To serve, place sauce on plates and put two flounder fillets per plate on top.

Homemade hot fudge sauce too?? Do you ship? :)

Hmmm. Never thought about it.

My parents used to host a banana split party every summer for the theater company that my dad produces. Mom would make all the hot fudge and caramel sauce. I remember our house smelling like an ice cream shop for days beforehand. I learned to make those sauces as a child!
 
Tonight, sadly, was a tostada and bean burrito from Taco Bell. I have logged 13 hours of work so far today and have another couple more before I can retire just to start all over again tomorrow. I hate VBS. I honestly do. I can't WAIT to board that plane next Fri night and head to Florida. IF I can make it until then.

I do have plans to cook; maybe tomorrow night...
 
Sounds yummy to me!

I was going to make flounder with a jalapeno cream sauce. However, when I started cooking, I discovered that I didn't have any jalapenos and my cilantro looked barely alive, so I changed the sauce. Instead, I made a tomato/herb cream sauce. It was really good. I also made eggplant sticks instead of salad.

Laura, that looks great! I'm really interested in that jalapeno cream sauce, I've never made anything like that one. When you have time would you post that recipe too! Since I've been finding wild alasakan frozen flounder filets at a cheap price, I'm sort of hooked on it. So easy, we would occasionaly get a whole flounder from fishing friends & I love that too, but not so easy.

Sheryl - The last time I made an etouffee I was out of shrimp stock and I used clam juice - it was great!

Kathy, That was a good last minute decision! I did see that boxed seafood stock at Breaux Mart, I think it was. I'm gonna have to pick up some, cus I'm almost out of my homemade one & don't plan on restocking until you know what season is over!

Tonight I am making my chicken Provencal soup with garlic bread. I am adding kale to it and see if it's any good.

ETA: Thanks to all those with advice about kale. I watch Rachael Ray all the time, that's where I got the idea to try it :) I was Googling kale recipes and realized I have had before in an Olive Garden soup. I can't wait for dinner tonight!

Lindsay, the Olive Garden soup you had is DD's favorite.

Glynis- homemade ice cream and sauce as well? Can you share the recipes, I haven't made ice cream in years and will probably not make any until I can let Kady have some, but I have no problem making sauce...she wouldn't touch it anyway so her feelings would not be hurt.

Laura- that flounder looks so good and is something I think I can manage. Thank you.

Kathy and Sheryl- Years ago I used to watch Justin Wilson every time he was on TV. Your meals look so much like that food that Buddy and I used to drool over every Saturday. Between his show and Julia's, I learned some of the basics about making a roux and adding layers of flavor. As much as DH whines about me "Nanatizing" his meals, he is always inviting someone to have dinner here, so I guess I learned enough to get by :lmao:.

Homemade shrimp stock? I thought I was doing well to make vegetable and chicken stocks. I never make any other kind.

Aimeedyan- Hope you get to slow down, and don't feel badly about dinner. You cannot be in two places at once, so Taco Bell sounds like a good treat when you are busy.

Well, last night we ended up finishing all of the leftovers I had. DH did not know if we had help last night to top and he won't let Risa weed so we just waited to find out. I had more left than I thought.

Tonight I am going to make my version of the summer stew posted on page one and chicken salad for the finicky people in my family who won't touch it .

Not a dumb question!! Yes it was the bottled stuff, works very well.:thumbsup2

I grew up watching him and I have an old cookbook of his!

The shrimp stock is so easy to make. The next time you have shrimp put the shells in a pot with water, onion, celery, carrot, bay leaves & peppercorns and simmer for hours.
 
Morning all--not much to report from me. Last night's dinner was pretty much a bust and tonight I'm working so it'll be frozen pizza for the family--I'll probably eat chex mix at the pharmacy.

Morning all--

Today Ross and I are going over to visit my Martyr in Law....first time in over a month (we had an grandparenting issue with Ross' play, {I didn't bother you all with} that has made me peeved at them, I didn't want to have a huge blow up with them as it wouldn't do any good, so staying away until it didn't matter worked best). We will visit for a few hours, or until my tongue can't take me biting it anymore.

Gretchen--glad you liked the pork chop recipe....I think it tastes good because it is so easy to do, lol. Anxious to hear how your chicken recipe turns out....I love chicken recipes as it is our favorite and I cook it 3-4 times a week.

That being said---Boneless chicken breasts with SBR for supper tonight along with cukes and rice. Simple as Ross has grappeling class until 6:30.

Update on my mother.....Thank you for the prayers and thoughts.....my brother got things taken care of, and figured out last week when he went down.....she has now been moved to a rehab floor in the hospital, and should be moving to a rehab center in the next week or two for more therapy.
Long Long story short..........My mother has had some mental issues over the years, and eating disorders as well........put that together with her and my father not getting along with each other for 44 years, (they have the most awful marriage, and we were the kids that would cross our fingers that they would get divorced and not stay together, lol.) and she basically had given up and in to it all. When my brother got there she weighed 83lbs and was in a severe depression.....by the time he left she weighed 110 and he had gotten a psych evaluation on her, and they put her on some anitdeppresents. He had a looooong talk with my father to smarten up.....he is playing bad cop to him, and I am playing good cop.
It is sort of strange to all of a sudden be the ones parenting them.......full circle I guess......
 
Good luck with the martyr in law today, You can vent here anytime, it may keep your poor tongue from bleeding.

I hope that you are feeling a little better about your Mom's health, now. It does go full circle and it seems to creep up so that you don't even realize that your parents stopped making decisions and that you are making them in the way you think is best. It must help that you have your brother to share this with, I don't know what I would have done if Gail was not there to share the decisions for my Mom.

With that said, you cannot be responsible for their behavior. You and your brother can steer them as you are now, but that really is all that you can do, so try not to take all of it to heart. I think that you both have done wonders in improving their circumstances. :grouphug:

I will post the recipe for the fudge sauce and the caramel sauce later today. Trying to pack and load the car for my weekend with my daughter. I promise I'll get them to you, though.
 
Dinner tonight will be a new recipe: Curry Cajun Chicken. It sounds yummy! I think I'll make some coconut rice to go along with it. Something fresh from the garden, too. Squash or cucumbers or something!

I'll be gone tomorrow through Saturday night. Taking DD to celebrate her birthday with her best friend. We are going to the Utah Shakespearean Festival to see some plays. They are so excited!

When I fix old fashioned cajun food is when my DH really gets impressed! The man just likes the foods he grew up on! My DD came by for lunch & loved it too! She doesn't usually like etouffee's either, after eating that one, she changed her mind & wanted the recipe!:goodvibes

I do try to pop in on this thread every day, I really enjoy reading what all of you make for dinner, and I LOVE the pictures too! :) Our two DD's are older now (22 & 20), so I don't seem to cook as much these days. Our youngest DD will be a Senior at LSU this year, it's hard to get motivated to cook when it's just the two of us at home. I used to take pride in the fact that I cooked a home made meal almost every night of the week when they were growing up, so it's hard to cook for 2 when I wish I was still cooking for 4. :ssst:

Tonight we are having stir fried chicken with spinach and fried rice with shrimp. Both DD's will be here tonight! :goodvibes
