Hi Y'all,

Haven't been on here in a while. My computer was in the shop cus I gunked up the keyboard using it while cooking! (My backspace key was sticking so I took it off & couldn't get it back on, but the whole keyboard had to come out to get cleaned! No computer for 2 days!) DH had ordered an inexpesive wireless keyboard for me to use!


I haven't had time yet to read back on everything I've been missing. I did check out Becky's beautiful food though!

Becky, As usual I'm just amazed at how you can do so much food at the same time & have it all look like it just came out of a 5 star restaurant!:thumbsup2

I haven't done to much cooking lately. I did fix this sometime during the week.

Panko breaded Flounder Filets with an herb-pinenut-limoncello butter sauce, sauteed garlic spinach & parsley cajun boiled potatoes.

When I got back on the dis yesterday I saw the Food & Wine event schedule was out! :banana: :cool1: So DH & I have been trying to plan for our Oct. trip. So much food & so little time!

Don't know what's for dinner tonight, maybe burgers or pasta.

Hey Guys! Taking a break from painting to say hi! We decided to paint the stairs and the balasters...what a tedious (sp) job but it is looking nice.

We are having grilled ham steaks with Saucy Suzie :love: :love: :love: , baked sweet potatoes and green beans.

Right not we are taking a break with a VERY strong vodka and Fresca so please don't mind me if I am acting a little loopy!!!

Janice the recipes sound great!

Yes, Dh's friends were here a couple weeks ago. They were nice enough, and the dinner went well, although I didn't really like what I made. I just am a little uncomfortable around people I don't know, and they knew me much more from DH, so it was a little awkward. They thought I was quiet, but that was mostly because my FIL drank almost an entire bottle of wine and blabbed the whole time. Anyway, I survived.

Laura - Great news that DH will be home in two weeks, the kids must be so excited!! Anything planned for the homecoming?

My food budget quadruples; he and Liam are going to a Red Sox game together; I am sure I will have more IL obligations than usual, and Becky will make some awesome dinners. He will also be home for Caili's first day of Kindergarten. Other than that, nothing too exciting. When DH is home, we try to make things as normal as possible, so he feels more like part of the family than a guest. He appreciates the down time and just having time to play with the kids. Maybe I'll slip out one night and go to dinner with Becky and BIL, if that can be managed.

I too love indian food. trader joes has a good vegetrian somosas if you have one close by.

I've heard good things about Trader Joe's frozen Indian food. In fact, Becky was eating naan from them this afternoon. We have one not too far away, so maybe I'll stop in sometime when I am in that area.

I think we are going to have tomato sandwiches tonight. We have a lot of food left from last night, but DD and I went to the Garlic Farm for fresh garlic and she had her heirlooms ready. I would walk away from the best steak for these sweet things.

I love heirloom tomatoes. They aren't in here yet. Maybe this week.

Today, my 10 year old DD and I had a mother/daughter day. It was time for the "facts of life" talk with her. It went well, and then we spent the rest of the day shopping for school clothes, and going to lunch at a local buffet. It was nice, and she took "the talk" quite well. Glad I don't have to give it again for another 5 years!!!

I'm not looking forward to that. I'll have to talk to Liam next summer because the school system does "The Talk" in fourth grade. I'm not letting them tell him before I do.

I have never understood why people think a woman who stays home to care for the family doesn't work!!!!!!!

DH admits that his Army job is a lot easier than mine. The people who think that being a SAHM is easy or isn't work are the people who have never done it.

I ate with my parents today (Becky was off to her ILs) so we had grilled cornish hens with peach salsa, beans with thyme, cumin corn and skillet potatoes (very garlicky. No vampires tonight!) My mom insisted on doing everything despite walking around on a pinky toe that she discovered yesterday is broken in two places. The food was yummy.

This was one of those things I came up with when channeling Emeril! :laughing: I fixed it before without the pine nuts to top pan fried chicken breast. Instead of wine to deglaze the pan, I thought the lemony sweet taste of limoncello would go great with the fish (& it was really yum). Let's see if I figure out something that resembles a recipe.

Limoncello Pinenut Sauce for Fish

Pinenuts
Limoncello
Chopped Herbs (parsley, basil & sage)
Chicken or Seafood Broth ( I used chicken but I think seafood would be better)
Butter
Zest of half a large lemon
Juice of half of lemon
Fresh ground black pepper
Salt


Pan fry the fish in butter & olive oil, remove fish from the pan. In the same pan, toast the pinenuts, until lightly browned. Deglaze the pan with a good size splash of limoncello and seafood/chicken broth. Add whatever herbs you like and the lemon zest of half of a large lemon and lemon juice. Taste for seasoning & add salt/pepper. Add a dab of butter to get it creamy and top the fish with the sauce.

To lighten this up, you could top grilled or baked fish too. And leave out some of the butter.
 
Hello all---

I am watching a friends daughter for the day so her folks can get some time away, she is 2 years older then Ross, but they get along great, and are good friends. We went to the movies already, and might go play putt putt later on if the storm passes.
Ross' play went suberb yesterday...he was a riot, he had a whole part to himself on the stage and did A+!!
Ruby Tuesday's was good as well.

Laura- I am so glad to hear that DH will be home soon!! Thanks for sharing him with our country!!

Nancy- Please know that Timmy, and your whole family will be in my prayers! Thanks to all of you as well for sharing him with us!

Lauren- I get a few remarks from people about being a SAHM...I always say..that I haven't quite figured out the whole "stay at home" part to the name, as I am on the go all the time, as I am always getting comments on the lines of "must be nice to not have anything to do all day"
As for your sister....she doesn't sound like she is going to change, so I would just brush it off, and talk to her on your terms! Vent to us when needed!!

The last one was last week, when he asked what a virgin was.....talk about the perfect place to start the conversation. I talk until his eyes glaze over, and then I let it go until the next time. Though he did give me one time a few weeks ago...."I know that part of it, I watch the health channel".....this was after a neighbor girl was dressed in "not much" with her boyfriend around, and I said she will be preg. by 16 and used this as a opening for part of the talk and peer pressure etc..................there are a few topics though that I will let Kris handle over the next year or so......

Wendie, Don't I wish!!;) :laughing: We did go to the cabinet shop on Friday, to get going on picking out the vanity for the bathroom. It's going to have to be semi-custom or totally custom to make it handicap accessible for DH, so we want to give them plenty of time to get it done. Still waiting on everything to get approved with the state. Mario is going to have to purchase more insurance before they will give him final approval, so we are probably still quite a way from getting started on the remodel.

Your a better woman than I am, I'd have hit the ceiling over the comment that "it must be nice not to have anything to do all day"!!! The nerve of some people & yeah it's usually other women! I did the SAHM thing as much as I could when I my DD was young & I'm happy to be here for Alexis & DSIL. Since she's unable to be the SAHM, Alexis at least gets a SAH Nana.

Lauren, don't let your sis get under your skin! You & A certainly deserve this opportunity after all you've been through & done!

Poor Alex had "the talk" too. His father talked to him after his class went to this center were they take all the kids to for a mass talking. I tired to talk to him too but he said he was all talked out.

I had a change in plans I making the potatoes and grilled chicken breasts with a salad. I got to involved in cleaning my kitchen cabinets. A word of wisdom for all of you don'tt get white cabinets.

I had off-white cabinets before Katrina, they were SO hard to keep up. Now I have Golden Oak - much better.
 
Well, dinner was...edible. It was haddock all right, but that was all it was. Plain, broiled haddock. No sauce, no spices, nothing! But, I ate it with a smile and said it was delicious. Maybe the food was not so good, but the company was priceless. I really do love my in laws. (I just wish they would let me cook for them! :rotfl: )

So, the bread. That bread is my "cheaters garlic bread" and it is really simple. We have a special name for it but it's a little goofy so I can't put it on here. All I do is slice bread, then microwave half a stick of butter, stir in a teaspoon of garlic powder, salt and pepper, then distribute that equally. Top the bread with thinly sliced mozzarella, and for extra salty yumminness, thinly sliced haloumi, then bake at 400 degrees for about 15 minutes, until the cheese is browning and the bread is toasty.

Our dinner was yummy tonight!

We grilled burgers but I tried stuffing mine with gorgonzola - OMG. I could have eaten them for days. DH refused to stuff his with anything so his loss. I adore gorgonzola and beef together. YUMMMMMMMMM!

With it I fried thinly sliced sweet potatos. Now, neither of us like sweet potatos usually but I know they are healthier for you (is the healthy part canceled out when you fry them in oil?) so I gave them a shot. I have to say they were pretty darn good! I sprinkled them liberally with salt so they had that sweet/salty/greasy thing going on that was delicious.

They are healthier than fried salted russet potatos, right?

Anyways, I was a happy camper with my burger.
 
Yes, I survived. Of course, Katie put 2 and 2 together when she remembered that I just had a miscarriage, and then I got the Ewwwwww look from her!

Tonight I am taking a stab at Rachael Ray's "Sloppy Joe Dimaggio's" tonight. I will post the recipe if it turns out good. We're having onion rings with it.

Sheryl- Your plates show that yo are no slouch in the kitchen! Your meals are put together beautifully .

I looked at the schedule as well and now I wish we could stay longer! There is going to be so much to do! We will probably just tour the countries becasue none of us will leave Kady behind and she would not enjoy the events. We'll see.

I cannot believe how much good food costs lately, and anytime a special meal or extra guests are around it adds up, but what are you going to do? Your family seems to be a lot like mine, lots of people around and then you all celebrate around food.

It is so nice that your DH is going to be home for the first day of school, such a special day for everyone. I do hope you all get out for a nice dinner together.

I was a SAHM and I got a lot of little comments that would make my eyes fry. Your most precious gifts, entrusted in your care and the you are talked about as if all you do is watch soaps and Oprah!

I'm glad that the play went well! I love his Health Channel comment! They know so much more than given credit for, don't they?

I'm with you on the at home part as well, this summer I feel like a taxi cab! I am home so I take the boy down the street to camp as well as Kady's activities and that trip seems to put me over the edge. I cannot wait for next week so that we don't have anything else we "have" to do.

There is nothing better than a being a SAHN! My DD needs to work as well, she has the best benefits so they do what they need to do. There is something about Nana's and their precious grandchildren that while not the same as Mom, is pretty darn good! We are Nana and Pa to all of the kids and I think it is a wonderful gift for us, we just enjoy and don't have all of eh day to day worries that a Mom and Dad have. Mom and Dad go to work knowing that their children are in hands that love unconditionally.

I have my Dr. appt with my orthopedic to get the MRI results from my wrist this morning, and figure out what we do next, then Ross has rec this afternoon, and karate demo team practice this evening.

Dinner tonight will be Roast beef grinders......roast beef, cheese, onions, green peppers, and pizza sauce on bulky rolls hot under the broiler, and then I top them with shredded lettuce and toms.....quick, easy, and sooo yummy!
 
Hey all! Our weekend trip to Branson was fun. The food was nothing to write home about, but we had a great time. Found some great deals at the Disney outlet--got started on some bday shopping for DD! Tonight will be something quick and easy--pasta and meat sauce probably as we have to go pick up DH's car from the shop this afternoon.

Oh, and you mean a SAHM doesn't get to sit around and watch soaps and Oprah all day?????;) Geez! I honesty think that's what DH thought I did for a while--now he has a greater appreciation for me staying home with the kiddos when I pick up a weekend to work and he has them both by himself for two days. :thumbsup2
