ETA: No results yet but thank you for asking. I went for another blood test today and go back to the doctor next week. My sister just called and she went to the Dr today and she may have a thyroid problem as well...

Also, I sprained my foot really bad in 2004 (a sledding accident in VT)...it is still not the same. I now have scar tissue and arthristis. The cortizone does help though. I hope you make out well with your wrist.
 
Wendie- It never is easy, is it? You know that I will keep your family in my prayers and in my thoughts. It is so hard when you are so far away from family when there is an illness. Your Dad is right though, your brother is in the best position to go and see how best to help. Try to take care of yourself, you are so busy and have so much on your mind that it is easy to forget that you matter as well. :hug:

Last night's Mexican Baked Chicken was a hit with my two guys, I didn't have much of an appetite but what I tasted was great. If anyone is interested I'd be happy to post it.

Glynis welcome back...looks like the camping trip was fun....how is your daughters sunburn doing now?

My mother is now in ICU and not doing to well. No real answers yet as to what is going on...they did find 5 softball size ulcers from her stomach to her rectum which are all bleeding.....they are also causing food to not digest, and sit there and grow bacteria, basically poisoning her. They are giving her blood and meds, and she is now having heart trouble along with congestive heart failure. She weighs 93lbs, My dad is having trouble with his gout and can barely walk and is so stressed. My brother who lives in NC is going down for 5 days a week from today with his wife. He will get things taken care of, and some answers, along with a break for my dad. I can't get there as Ross' schedule and Kris' along with tickets etc. My father said to stay here until it is neccessary I go...he said that Bill's (brother) life is easier to turn upside down and leave as it is just him and my sister in law now, as the girls are all grown up. So more prayers please, as I am not ready to lose my mother and I am afraid that she is starting to get depressed and give up.

Katie's sunburn is doing just fine! She's peeling, but the pain is gone unless she raises her arms above her head. I think I'm going to invest in some rash guard shirts for my kids for next year. Being so fair, it might be a good idea, huh?

I'm sending hugs and pixie dust for your mom, your dad, your grandmother, your brother and you! Sounds like you need it. Please know that I'll keep you all in my prayers! I can totally understand not wanting to lose your mom right now. A couple of years ago, my mom's heart was giving out, and she had a 7 bypass with a new valve put in. I was terrified! Please feel free to get those feelings out here. We care about you!
 

Mexican Baked Chicken

8 pieces - breasts, legs thighs (skin removed) or boneless breasts
1/2 c. flour
3 Tbsp. olive oil
1 - 15 oz. can tomato sauce
1/2 c. water
2 crushed chicken bouillon cubes
1 - 4 oz. can green chiles, drained
1 - 4 oz. can sliced black olives, drained
2 Tbsp. red wine vinegar
3/4 tsp. each cumin and garlic powder
2 c. shredded mexican blend cheese

Coat chicken with flour; shake off excess. Heat oil in a frying pan over medium heat. Add chicken a few pieces at a time and cook until well browned. Remove and place in a 9x13 inch baking dish.

Discard oil in frying pan and wipe clean. Add tomato sauce, water, bouillon, chiles, olives, vinegar, cumin and garlic powder. Bring to a boil, reduce heat and simmer, uncovered, until thickened slightly. Spoon sauce over chicken. (At this point you may cool, cover, and refrigerate until next day)

Bake, covered, at 350 for about 1 hour. Remove cover and sprinkle with cheese. Return to oven, uncovered, for about 10 minutes more or until cheese is melted. ENJOY!!

Ross came home from his field trip today and tore all the skin off his big toe....so now we all are a complete set of boo boo's, lol. Guess he felt left out or something?!!?
No change in my mother today....I'll take that news......slow and steady......

Kathy the recipe for the mex chicken sounds delish....I plan on making it next week.

Kathy---I am sending you hugs hoping you feel better soon....what an awful time of year to have what sounds like the flu. poor you!!! I wish I lived closer to lend a hand. Get some rest!!!

Glynis-I am glad to hear that Katie is doing better....I have heard great things on the shirts with SPF in them......might be a good idea.....maybe you can pick some up at the end of the season on sale.

Yummmm. That sounds wonderful. I think I'll try it but because Kenny isn't wild about chicken or mexican food, I think I'll call it Kathy's marvelous chicken or something. :rolleyes1

That sure doesn't sound boring to me!!:)

Well, my FIL really enjoyed it. Of course, he is used to my MIL's cooking, so pretty much anything that is seasoned, cooked right, and warm works for him. Believe me, the menu sounds better than it was.

I would love the recipes. I am not sure about her dairy free butter.

Nancy, I don't think the dairy-free butter would work either. However, Fleishmann's is a dairy-free margarine, and that works for baking just fine.

I love experimenting with cookies. I figure that as long as I keep the proportions of solid to liquid approximately the same, the cookies will turn out okay. Most of the time, they do. Like in these, if I wanted to make them oatmeal cookies, I would do 3/4 c oatmeal and 3/4 c flour (more if the batter didn't seem firm enough.) If I didn't want chocolate, I would substitute raisins, and I would add 1/2 tsp cinnamon.

Here's the recipe as is:

Loaded Chocolate Chip Cookies

1/2 c dairy-free margarine, room temperature
1/2 c sugar
1/2 c brown sugar
1 1/2 c flour
1 tsp baking soda
2 tsps vanilla
3 tbsps vegetable oil
1-2 tbsps water (if needed-- you probably won't)
1 package semi-sweet chocolate chips
Optional add-ins: 1/2 c nuts or 1/2 c coconut, or both.

Preheat oven to 350.
Stir together flour and baking soda (I would also add a 1/4 tsp salt)
In large bowl or stand mixer, cream margarine and sugars until light and fluffy.
Mix in oil and vanilla just until combined.
Add flour mix and stir until combined. Fold in chocolate, nut and coconut.

Drop by spoonfuls on ungreased baking sheets spaced two inches apart. Bake for 8-10 mins. Cool for a couple minutes before transferring to wire racks.
 
Tonight I am doing something a little different. I saw it on "Everyday Italian." It's ravioli with a cheesy tomato sauce. If it's good I will post a recipe. We will have salad and bread.

I am feeling a bit better today so hopefully I'll be cooking one of Kyle's faves - Cheeseburger Noodle Casserole (not Hamburger Helper), corn and a big salad! YUM!

My guys were very happy to eat leftover Mexican Chicken last night, while I had a bowl of oatmeal.:rolleyes:

Tonight will most likely be jambasta. DH loves it, and after I tortured him with artichokes last night--he deserves to eat something he likes.

We're having what we call Asian Hillbilly.....LOL

Asian part:

Asian salad--so yummy
thai curry shrimp--new to us so don't know how good it will be
noodles with soy sauce sauteed in the wok

Hillbilly part (dd loves this so I have to make it when I do any seafood---LOL):

hushpuppies


Just me and dd as her father decided to spend the weekend out of town with the gf:rolleyes:
I am sure she will want to go into the pool after a long day at summer camp. Where do they get this energy?? Anyway not too hard for me. 20 minutes or so and it will be done.
 
Sorry I haven't been able to keep up with everything that has been happening the past couple of days. We have been crazy busy. I hope everyone is starting to feel better.

I haven't quite decided what I am making for dinner tonight, but it definitely involves brie. It's hot and sticky today, so bread, brie and salad is sounding good.

Becky also wanted me to let you know that she is off the Internet until Monday due to the Harry Potter spoilers out there. I told her the WFD thread was safe, but she isn't taking any chances. She is taking pictures of her food, and she will post them all when she is done with the book. That could be as early as Saturday night at the speed she reads.
