Last night's dinner was amazing Kathy! Even my low-fat version was wonderful. I have to be completely honest, when I removed the chicken from the oven to add the artichoke hearts for the last 5 minutes of cooking it smelled so good I almost plated it right then. Kenny loved it and that really saying something for a chicken dish. We are having the leftovers tonight.

What really does tick me off about all of this is the last tenants were paying $1800 bucks a month for that house! This is a good neigborhood! One neighbor said he thought these people were paying about $1500! So as long as the owner gets the rent they are happy! Things like this just don't happen in our neighborhood, ever! It's really disturbing & sad.:sad2:

I was hoping that since my neighbor is asking $1900 a month for rent it would keep the "undesirables" out, but it's been for rent for three months now, he's probably going to take what he can get.:scared1:

Tonight is going to be the Queen's Easy Royal Chicken. The roast chicken last night was yummy--so good infact that my lovely poochie ate half of it when I turned my back. So much for leftover!:sad2:

I do the low-fat version as well and love it. It does make a lot of sauce that is good over pasta without the chicken, in case there is no leftover chicken. Tell Kenny "The Queen" is a very happy woman today knowing that she helped him to love his chicken!!:rotfl:

Tonight will be "EASY" - Cajun pork tenderloin with garlic/butter sauce, dirty rice and lima beans.

I started working on our costumes for the release party Friday night. Dh is going as Hagrid and I haven't figured out for me yet. There aren't alot of adult female characters to choose from really-Molly Weasly, McGonagal, Aunt Petunia(blah!). Any ideas ya'll?

Dinner last night was chicken/turkey and dumplins. Prolly the same tonight since I'm sewing everything by hand....the hints of a new sewing machine have fallen on deaf ears so far apparently.
 
Laura- I want to make her some oatmeal cookies and read that I could substitute silken tofu for the egg. Would you do that or would you use a banana? Or would you add a little extra shortening? My recipe calls for Crisco so I am not sure if it would be too much and I am afraid to use her Earth Balance for the butter.

Nancy, I usually substitute a tbsp vegetable oil for each egg, although I usually use butter. Could you use the dairy-free margarine instead of Crisco and then use the oil for the egg? I have a couple cookie recipes that I can post later if you want. I take cookie recipes and swap ingredients in and out all the time, so maybe these would give you something to start with.

Sorry I am just checking in really quick here, since I didn't even get here yesterday. I hosted that dinner for my husband's friends and my FIL. It went okay, but I thought the food was boring: calypso chicken, jasmine rice, cumin corn, and green beans with almonds.

I'm not cooking today because Caili has a party for her skating team, and there will be food there. Liam is eating with my parents.

I will try to catch up with everyone this evening.
 

Morning everyone. Last night's dinner was a success with Alan and the kids. For me, though, it was a bit bland. The recipe needs some tweaking!!!

Not sure WFD tonight. Tacos sound good, though, Lindsay! Maybe we'll do that. I've got all the fixin's so I won't need to go to the store. Hmmm, I guess that's what's for dinner.

The kids are all off to birthday parties this morning, so I'm doing some cleaning, and then rewarding myself with a batch of Mystery cookies! Yummo!!!

I would love the recipes. I am not sure about her dairy free butter. I use it in vegetables and it seems to break down a bit, kind of watery. It also gets a little "oilyish" when I used it in place of butter in my potato packets on the grill. It won't hurt to try it though, my family will eat the cookies anyway unless they really turn out terrible, and I've managed to ruin more expensive recipes than cookies before :rolleyes1.

I have not even touched the iron yet. This is why I am always behind....I take too long to get started.

Feeling really out of sorts today. We had a very disturbing incident yesterday. I doubt the owner will evict them either, as long as she gets her rent she doesn't care about the neighborhood..

Don't know what's for dinner, I'm just so weirded out by all of this!

WOW!!! :scared1: i would have certainly freaked out at that! sounds like a scene from Cops!
 
We're having Taco Bell tonight - what a gourmet meal! I work late (until 8pm) and it's right on the way home (plus it's cheap) so that's what we're having.
 
Gina, welcome to the thread. I have to tell you, Great Hill Blue is one of my favorite blue cheeses! Yeah, I buy lots of different kinds, but to be honest, I am a bit of a wimp when it comes to blue and my standby is always Great Hill. The only one I've found that I like a little more is Humboldt Fog. I love Great Hill in salads, or stuffed under the skin of a chicken breast, etc. Yummy! Tell your BF's folks I love their cheese! :)

Actually i should have used different abbreviations, its actually my boyfriend's family ( not that it matters, best friend/boyfriend..same thing,,,sorta :rolleyes: ) I love that cheese too..i also love the humbolt fog and saga..have you tried a little great hill blue with raw honey comb as an appetizer..YUM..or even melted a little on filet..its VERY good :)
I'll pass on the cheese love to Greg's family :)

So I'll just say that tonight's dinner is going to be moroccan seasoned lamb chops & I'm going run to the vegetable stand, so we'll what else looks yummy.

Kathy, you can be sure it will include creoles!

Hi!

I regret that I'm not on more to get to know everyone! But I did make some really good scones this morning....had to, since I found clotted cream at Wegman's!....so I thought I'd share. As long as I've been baking, I've never used a grater on the butter before, but it worked really well!

Scones

2 cups all-purpose flour
1/3 cup sugar
1 t baking powder
1/4 t baking soda
1/2 t salt

8 T butter, frozen
1/2 c raisins (chips, etc)
1/2 c sour cream
1 large egg

Preheat oven to 400'

In a medium bowl, mix flour, sugar, baking powder, baking soda and salt. Grate butter into mixture ;use fingers to work in the butter. (Should resemble coarse meal), then stir in raisins.

In a small bowl, whisk sour cream and egg until smooth.

Using a fork, stir sour cream mixture into dry mixture until dough clumps. Use hands to form a ball.

Place on a lightly floured surface and pat into a 7-8" circle about 3/4" thick. Sprinkle with 1 t sugar. Cut into 8 triangles;place on cookie sheet 1" apart. Bake 15-17 minutes until golden.

I finally found a spare moment to get on here....Wow what a lot of reading I had to catch up on!!
Glynis welcome back...looks like the camping trip was fun....how is your daughters sunburn doing now?

Kathy- Glad that your boy is back home! Hope you start to feel better soon!!

Lauren- any word on the test results yet?

Ross' boot camp weekend was fun....all the kiddos were on their best behavior...not a single problem with any of the 38 of them!!
We didn't sleep over but we "pseudo" camped...we only went home to sleep for 3 hours.....we had a blast around the campfire once the kids were tucked into the tents....adult time....drinks, stories, and friends....nothing better then that!! we laughed so hard our backs and heads hurt!!

My mother is now in ICU and not doing to well. No real answers yet as to what is going on...they did find 5 softball size ulcers from her stomach to her rectum which are all bleeding.....they are also causing food to not digest, and sit there and grow bacteria, basically poisoning her. They are giving her blood and meds, and she is now having heart trouble along with congestive heart failure. She weighs 93lbs, My dad is having trouble with his gout and can barely walk and is so stressed. My brother who lives in NC is going down for 5 days a week from today with his wife. He will get things taken care of, and some answers, along with a break for my dad. I can't get there as Ross' schedule and Kris' along with tickets etc. My father said to stay here until it is neccessary I go...he said that Bill's (brother) life is easier to turn upside down and leave as it is just him and my sister in law now, as the girls are all grown up. So more prayers please, as I am not ready to lose my mother and I am afraid that she is starting to get depressed and give up.

We were supposed to go away for a long weekend to bar harbor, but the weather isn't going to be that great, and Kris' bursitis is flaring up to the point he can't ignore it, as it has swollen down his knee to his calf...not quite hiking mode. if he had treated it a week ago when it started it would have been better within 3 days..he will listen next time,lol. so we rescheduled it for the
end of August.

I had my appt with the orthopedic today to find out what is going on with my wrist I sprained a year ago....she thinks I have TFCC. torn cartilage in my wrist that will be confirmed in a MRI I am having friday, and then I see her for the results on the 30th. If it is that I will either have surgery or maybe just a cortisone (sp?) shot to calm down the flare up if it isn't a severe tear.

What a mess we are, lol.....my93 yo grandmother is the best one of the bunch with her broken toe, lol.

Dinner tonight will be roast tips in gravy, fresh green beans, and mashed taters! It is drizzly so comfort food is in order.

I am off to take Ross to karate...he just got back from hiking, and panning for gold an hour ago......

Gretchen, I've been DISing all day, here ya go:

Mexican Baked Chicken

8 pieces - breasts, legs thighs (skin removed) or boneless breasts
1/2 c. flour
3 Tbsp. olive oil
1 - 15 oz. can tomato sauce
1/2 c. water
2 crushed chicken bouillon cubes
1 - 4 oz. can green chiles, drained
1 - 4 oz. can sliced black olives, drained
2 Tbsp. red wine vinegar
3/4 tsp. each cumin and garlic powder
2 c. shredded mexican blend cheese

Coat chicken with flour; shake off excess. Heat oil in a frying pan over medium heat. Add chicken a few pieces at a time and cook until well browned. Remove and place in a 9x13 inch baking dish.

Discard oil in frying pan and wipe clean. Add tomato sauce, water, bouillon, chiles, olives, vinegar, cumin and garlic powder. Bring to a boil, reduce heat and simmer, uncovered, until thickened slightly. Spoon sauce over chicken. (At this point you may cool, cover, and refrigerate until next day)

Bake, covered, at 350 for about 1 hour. Remove cover and sprinkle with cheese. Return to oven, uncovered, for about 10 minutes more or until cheese is melted. ENJOY!!
