hey ya'll! I have been a cooking fool this summer-made lasagna, roast rice and gravy, pork chops with potatoes and onions, shrimp fettucini,etc. During the school year I just lack the oomph to do all this every day. I need to change my ways!! I am saving money(hardly any FF this summer at all) and eating good. We start school in 2 weeks!

Hotdogs and chili tomorrow!

Wow! You start school early!!! We start on Aug. 29! Are you a teacher? I know during the school year I only had time to prepare Lean Cuisine dinners, frozen pizza and macs and cheese!

Tonight we are going to a family cookout (my side). All 4th food: hamburgers, hot dogs, baked beans, homemade ice cream.

Today we're grilling burgers & ribs (with Sweet baby Rays, thanks Wendie), potato salad, baked beans and corn on the cob!!!!

We are having the usual fare ribs potato salad beans.
 
My MIL is an okay cook, though she really excels at desserts. I don't really enjoy desserts much, especially if it has fruit in it, which is her favorite to make. So, she usually does the dessert and I do the meal. Works well!

We are going to a friend's house for a lunch - I'm bringing the ranch potato salad (potatos are boiling right now!). I hear they are making bbq chicken and everyone is bringing sides.

Tonight we'll have sushi! The tray of california rolls looked too good to pass up while at Costco last night. YUM
 
Happy 4th everybody! It sounds like ther are wonderful plans going on and they all include some amazing food!

We are going to my sisters later on and are also having all kinds of picnic foods. Yummy I love summer food, I just hope that the rain holds off.

I haven't posted in a while. Just haven't felt like cooking, but I am back. I am recently divorced, but still have to live with ex until the house sells:headache: . I realized I still need to make nice meals for dd, so I am cooking again. He ate some of the chicken I made last night in the crockpot and then complained it was dry........:sad2: He is off to the girlfriend's for the weekend so dd and I are having Omaha Steaks Filet Mignon on the grill, Omaha steak au gratin potatoes (she loves these), maybe some corn or green beans. I bought mini cupcakes decorated for the 4th and ice cream at the grocery this morning. So an afternoon in the pool, grilling by the pool, and sitting under the tiki hut tonight watching all the fireworks. Should be a nice night for dd and me.:thumbsup2

Welcome back! It sounds like a tough living situation, but at least tonight will be a good night with dd. The tiki hut sounds awesome - a house with a tiki hut has to sell fast, right? :)

It is storming here and my street is flooding, good thing we weren't planning on grilling until this evening. I love to DIS on a rainy day!:cloud9:
 
Happy 4th Everyone! DH and I ran a 5K this am and then we're headed to our neighbor's for dinner--burgers and dogs. I made Sangria (isn't that a food group??:rotfl: ) and homemade ice cream sandwiches. Love the little molds from Williams Sonoma. Hope everyone is having a wonderful day, the food sounds yummo!

The kids and I went to a barbecue at a family friend's house. They had all the usual stuff --hotdogs, hamburgers, corn on the cob, potato salad, macaroni salad -- but then they also had eggplant, stuffed shells, meatballs, chicken...t was a huge amount of food. The kids thought they were in heaven when they saw the dessert table -- cake, ice cream cake, cannoli, decorated cookies, pizzelles, and my raspberry tart, which disappeared very quickly. If anyone wants the recipe, let me know and I'll post it. It was very easy.

After all that food, I don't think we'll be eating again until morning.
 
Okay, Kathy, here it is. This really took me about a half hour to do, and I had Caili helping me.

Raspberry or Berry Tart

Graham Cracker Crust:

To make it even easier, you can buy a premade one. I made it myself:

20 graham cracker squares (finely crushed)
1/3 c butter, melted
3 Tbsps sugar

Preheat oven to 350.

Combine ingredients in food processor or in bowl. Pour mixture into pie plate or tart pan, and press into pan.
Bake 10 mins in oven and let cool on rack.

Filling:

8 oz mascarpone cheese
1/2 c heavy cream
1/3 c powdered sugar
1 tsp vanilla
1/4 tsp almond extract (can be omitted for allergies)

Put all ingredients in a large bowl and beat until stiff peaks form, about 2 minutes. Keep refrigerated until ready to use.

Berries:

2-3 cups raspberries, blueberries, strawberries, blackberries or a combination -- washed, drained (quartered if using strawberries)
2 tbsp sweet orange marmalade
2 tbsp dark berry liqueor (I substituted 2 tbsp raspberry jam this time. The liqueor tastes good but I knew my kids would be eating it today, and I wasn't sure they would like it.)

In small saucepan, simmer marmalade and liqueor until reduced to 3 tbsp. Pour over berries and stir with a rubber spatula to coat evenly.

Assemble tart by pouring filling into graham cracker crust. Spread to edges and smooth. Then put berries in circles on top. Tart can be assembled the night before. Cover and refrigerate. Take out about 10 minutes before serving.

Hopefully this arrangement is short lived. It has to be hard. I too am divorced luckly my ex was not a horse's backend. :hug: Hope you and your daughter are having a great 4th.

We are having grilled steaks, grilled shrimp, Ceasar salad with homegrown cukes and cherry tomoatoes and hash browns. I wanted to do corn on the cob too but the store didnt have any.
 
I think I'll keep cooking on my resume. Electronic's and I don't get along. I tried to hook up a dvd/vcr combo myself and let's just say it won. :confused3 I can change out a toilet, replace a garbage disposal, change a faucet but change a dvd/vcr thingy I flunk.:mad:

Sorry to here it's rain by some of you. It is very humid here it rained very early this morning and is overcast but no more rain for now.
