Hi again girlfriends.

Tonight's dinner ended up being amazing! When people wonder why we live here in the hurricane zone this is why!!!: DH brought home fresh speckled trout his friend at work caught yesterday afternoon! He had brought home more creole tomatoes Friday & I had grabbed some vidalia onions at the grocery last week.

So we had a layered Creole Tomato, Vidalia Onion, Fresh Mozzarella Cheese and my patio pot grown basil. That salad topped with just evoo & balsamic vinegar, salt & fresh ground black pepper to top it was just about perfection!

The trout ,I pan fried. I seasoned it with my DH's "Chauvin's Cajun Dust" and fried it olive oil & butter, pulled out the fish threw in some pine nuts till lightly browned then added some chardonnay and a bit more butter, scraped up the pan & topped the fish. Along with easy homemade garlic bread on "leftover" wheat buns, it was just the best!

I'm really not boasting about my cooking skills here, when you have the freshest & best ingredients to start with, I don't think it can be screwed up!!!
 
Tonight it a 4th cookout with y in-laws, which means unseasoned hamburgers cooked one at a time on a Foreman grill, smashed until there is no trace of moisture left in them, and hot dogs. I will be partaking in the hot dog, since I don't mind them cold and love them burnt. I am taking a lemonade cake which I switched up a little bit. Instead of making the "syrup" with lemonade, I used limeade. So it's kind of a lemon/limeade cake :)

At least I know dessert will be edible! :lmao:

I am going to my hairdresser to day to fix my silver zipper and get a trim. I may make a point to eat lunch late.

I'm trying a new Paula Deen recipe tonight - Herb & Cheese Stuffed Chicken Breasts, pasta & green beans on the side!

The pad thai last night was yummy. Not as yummy as my go-to recipe, but wouldn't you know, I couldn't find it to save my life. I've got a pic of it-will post later. Tonight will be chili--yeah, not really summertime food, but I can do it in the crockpot and it's easy.

Good Morning! Today we are going to have hamburgers on the grill and what ever I have too much of to fit in the bowls. My sister is having her July 4th cookout and we have an agreement....she does the meats and fixin's and I do the sides. If we left it to her the picnic would be "catered by Costco" :lmao:.

So far I am making Glynis's Ranch potato salad, a Shillings Pasta salad, BBQ baked beans, seven layer overnight salad, a blueberry and strawberry red white and blue jello salad, and the ice cream sandwich cake from Kraftfoods.

Whatever does not fit my family can have :thumbsup2

They also want me to make some kind of tropical punch so that we can use the Tiki drink holder that DD got from the Disney Store. I found a frozen banana pineapple slushie type thing I am going to try.

YUMMY!! I knew if I bought the tiki hut, you would make wonderful drinks!

Tonight I am making a chicken flattened and seared under a cast iron skillet, and a watermelon-feta-kalamata olive-red onion salad (sounds weird, tastes good!). We'll probably have some argugula too.
 
I have no idea what we are doing for dinner tonight - probably take-out. I think my fridge is dying. I reached in this morning for my wake up caffeine - diet coke, the breakfast of exhausted mothers and it was warm. I was not a pleasant person this morning until I got to the store for a cold diet coke.

Hubby is trying to figure out the problem, but it looks like I will be cleaning out the fridge tonight.

Have you posted the cake recipe? I haven't checked the first page yet. If not, I hope you will. It sounds perfect for summer!

Good luck with the in-laws. I HATE eating at my MIL's house. Her idea of a gourmet meal is mutton cooked to the consistency of shoe leather, served with mashed potatoes and peas cooked together. No seasoning, no flavor! It's just easier to invite her to our house. At least then I'm in charge of the cooking, and I just have to listen to her complain about how "overseasoned" my food is. Well, ya, lady! I actually use some, so I guess it tastes too seasoned for her. Oh well! She gave me my DH, so I shouldn't complain too much about her.

Dinner tonight will be Strawberry Pork Chops. We love this recipe, and since my strawberry plants are overproducing, I need to use them up! I'm thinking we'll have steamed broccoli and some kind of noodle dish on the side. Watermelon for dessert!

Still don't know what we're doing tomorrow. I was going to make American Flag pizzas for dinner with Firecracker cupcakes for dessert, but now DH is talking about taking us all up the mountain for a day of fishing (him and the kids), and reading/relaxing (me). That means he would pamper me with some Dutch Oven chicken and potatoes. I could really go for that about now! Great comfort food, and DH is great at Dutch Oven cooking!!! Either way, we'll come home for root beer floats and brownies while we watch fireworks. That's a tradition that the kids just won't do without!
 
I'm making Glynis' potato salad tonight! I'm so excited to try it. Funny thing is, I was going to make a half portion just for us to have with dinner one night but ended up buying a whole bag of potatos and ranch dressing because it's cheaper. We were invited to a lunch tomorrow for the holiday and needed to bring something so I piped up and asked to bring potato salad before anyone else took it =) And thank goodness I don't have to hit the grocery store again, either.

For dinner, we should be having pizza. I need to stop by Costco and get a rotessiere chicken. I plan on using garlic and EVOO, chicken, black olives, and smoked gouda. Yum.

Is Rick hitting the Taste of Chicago? Pretty yummy stuff. We could smell it while we were downtown friday. We went to Bob Chin's instead.

Glynis I totally understand. It is nice sometimes to hear funny stories. Sometimes a good cry can be very freeing.:hug:

Dinner is out tonight! Rick should be landing around 6. Tomorrow is a cookout at the bar across the street. Everything has too much fat in it (trust me, I looked!) so I'm taking over a couple tuna steaks to pitch on there for us while everyone else has hotdogs, hamburgers, and chicken legs.:laughing: Sounds yummy I know, but I'd kill for a yummy greasy cheeseburger right about now.(sigh):sad2:

Ok, this is me right now::blush: I got the recipe for Five Flavor Chicken from the cooking forum on the DIS, and I mistakenly thought it was from this thread. Anyway, it's so yummy, so I'm going to post it!

Five Flavor Chicken

3-4 pounds chicken, boneless
2 cloves garlic
1/2 C. honey
1 1/2 tsp. ginger, ground
1/2 C. soy sauce
3 Tbsp. sherry (or orange juice or cranberry juice)
1/2 C. crushed pineapple with juice
2 Tbsp. cornstarch

Mix garlic, honey, ginger, soy and sherry. Dip chicken into mixture. Place chicken in crock pot. Mix pineapple with soy mixture and pour over chicken. Cook on low for 6 hours. Remove chicken. Blend cornstarch into juice; cooke to thicken.

It's really good with brown rice on the side, but I bet it would be equally good with noodles!

You're right. It would be worse after a month. It has almost been long enough for me to forget how stinky the fridge and freezer were after hurricane Hugo. And we weren't gone an entire month. I can't imagine the mold and mildew and other gross things that greeted you on your return home. :scared:

Good luck with the cookout tomorrow. Our tomorrow plan is BBQ chicken made with my Daddy's vinegar based sauce so it isn't too fattening. Notice how I failed to mention the brown (greasy) rice my Mom makes or the squash casserole I'm supposed to bring. As my DSisIL says, "I love almost any food that will make my lips shiny." Maybe that is why my rear end could use its own zip code. :rotfl2:
