Thanks Nancy, I was really hoping to be able to meet up with some friends for a little food & wine. It just doesn't seem to be working out with anyone. We are missing everybody by just a day either in the beginning or the end! I am also just missing Lori aka BeadPirate & Ilovejack02 Jenny from my Nola thread. Although Lori is on the BWV waitlist!

MEN!!!! Can't live with them & can't put them in the freezer!!!:lmao:

We'll be there! I cancelled the waitlist though. I needed to bank points or lose them so I banked. We'll either be at the campground in the RV (If we get it) or at the Grovsner. Oct 24-28
 
We're at Disney Oct 26-29th! We're gonna do MNSSHP on the 28th--I think that's right, whatever date Sunday is. We're at SSR, but have waitlisted for BCV. DH and I are going to run the ToT 13K on Sat. night, can't wait!

Okay here's my food porn contribution! It was really yummy!

Spicy Basque-Style Chicken
1 tsp smoked paprika
1/4 tsp black pepper
1 lb. skinless, boneless, chicken breast tenders
2 tsp olive oil
2 tsp bottled minced garlic
1/4 cup sliced green olives
2 (10 ounce) cans diced tomatoes and green chiles, undrained
1/4 cup finely diced prosciutto
2 tbsp chopped parsley

Combine paprika and pepper, sprinkle evenly over chicken. Heat oil in a large skillet over med-high heat. Add chicken to pan; cook 4 minutes. Add garlic; cook 30 sec. Add olives and tomatoes to pan; bring to a boil. Reduce heat, and simmer 6 minutes

Remove chicken from pan. Increase heat ot med-high; cook 2 minutes stirring occasionally. Sprinkle with prosciutto and parsley. Serve with saffron rice (I used a preseaoned rice-found next to the wild rice)

laura--sorry I just noticed your post--Here's the recipe--also from Cooking Light (I'm a real fan, can't ya tell;) )

Penne with Asparagus, Spinach and Bacon

8 ounces uncooked penne pasta
2 bacon slices
1/2 cup chopped sweet onion
2 1/2 cups (1-inch) slices asparagus (about 1 lb)
1 1/2 cups fat free, less sodium chicken broth
4 cups bagged baby spinach leaves
1/2 cup shredded parmesan cheese, divided
1/4 tsp black pepper

Cook pasta according to package directions

Cook bacon in a lg. skillet over med. heat until crisp. Remove the bacon from pan; crumble. Add onion to drippings in pan; saute 1 minute. Add asparagus and broth to the pan; bring to a boil. Reduce heat, and simmer 5 min. or until asparagus is crisp-tender. Add pasta, spinach, 1/4 cup cheese and pepper to pan. Toss well. Sprinkle with remaining 1/4 cup cheese and bacon
 
Tonight we had Glynis' pot roast and it was fantastic. I was a little worried because instead of a packet of ranch dressing I picked up a packet of ranch dip. But, it still came out so good. The gravy was delish!!
 
Pizza Meatloaf Muffins have to be the #1 EASIEST recipe I've ever done. I'm the only one who has eaten yet, DH & DS won't be home until after 9.

I used 93% lean grd beef and when they were done I took one out and there was some fat there so I took them all out and drained on paper towels as recommended by someone here. They were good, but a little bland for our taste. Next time I'm going to add minced garlic to the ground beef and some fresh basil into the cheese that's stuffed in the center.

I had leftover baked angel hair pasta with parm, garlic & basil from Sunday - if anyone wants the recipe I'll be happy to post it.

Oceanannie- Thanks for posting the directions. I am going to try them!

The oriental ribs Glynnis posted were wonderful. I tripled the sauce ingredients because I had over 7 pounds of country ribs, cooked then tightly covered in a slow oven for about 5 hours. I turned them once in a while. I took the cooking liquid and reduced it, added a little maple syrup to cut the saltiness, and then thickened it with corn starch, added a little Earth Balance spread to make it shiny. Back in th oven for about an hour or so. I was not really timing it, but it was yummy!

Only Kady and I ate, everyone else is at the greenhouse pulling plants. I think they will like it as well, DD was telling me it was not fair to smell dinner and then have to leave.
 
Nancy - I haven't been around much today, just noticed the pic in your siggie. So nice to be able to put a face to my dear friend and Buddy of course!;)

Thanks, Stephanie! This sounds good. Of course, I will probably add butter or something like that...very little comes out of my kitchen that qualifies as Cooking Light. ;)

I add grated parmesan cheese, maybe that is why I have high BP once in a while...I LOVE salt! :)

Bucatni is basically spaghetti noodles that are hollow in the middle. They look like a straw :)

Morning all----I still haven't caught up on here as we ended up being called to a meeting at the nursing home for (dh's) grandma yesterday. We found out her release day,(next wed) and a few things to do with PT to help her, and also some ways to help her keep focused.....(her mind is a bit gone).
In the process of this meeting dmil proceeded to tell me that she ordered a new shower curtain for the tub (single panel as opposed to the 3 layers they had so they would have more room to get grandma in and out of the tub) and matching curtains....now I can't quite figure out how the curtains are part of using grandma's money to make her move easier?????????? argh!!!! If I bite my tongue anymore it is going to be pierced!!! I have not always kept my mouth shut in the past in other situations, but they involved me, dh, or ds in a direct way, this is a bit out of line to say to much I feel, but boy am I having a hard time, lol. Luckily I am really busy with ds's school the next few days and won't see them until Tuesday.........she (dmil) will email me 2 or 3 times a day with her new items and such..............to which I sit here and feel my blood pressure boil, then call dh and (b)witch with him on it........Oh yeah they are also going to put in a new driveway????????????? using grandma's money!!

wfd tonight.........I will probably make this super yummy easy chicken dish, with rice and corn or carrots.

EASY BAKED CHICKEN BREASTS

1/4 c. butter
3 or 4 boneless chicken breasts, split
1 can cream of chicken soup
1 can cream of celery soup
1/3 c. white wine---------------------------PLUS AN EXTRA GLASS FOR THE COOK--------------------
8 oz. grated sharp cheddar cheese

Melt butter in oblong baking dish. Place chicken breasts in butter. In a bowl, combine soups and the wine. Stir until thoroughly mixed.

Pour over the chicken. Sprinkle the cheese over the top. Bake at 275 degrees for 2 1/2 hours.
 
Tonight will be linguine with garlicky clams and peas. My kids will hate me, but oh well, I'm in a snarky mood today.:angel:

Tonight will be Paula Deen's fried pork chops, mashed potatoes and a creole tomato salad. YUM!!!!!
