Thanks for the updated recipe & all of the "real life" tips! It sounded so good I should have known it was one of your sis's recipes!!!! I have a hard time giving out recipes that I've used because I just can't follow the recipe either cus I don't have the ingredient or it just doesn't taste right, so I add this or that! It does sound like it would be extra special with some crab or lobster on top, but definitely wonderful without it!

I'm definitely a this-and-that type of cook...I don't really measure, I put together dinners with whatever I have in the refrigerator, and I am not that great with menu planning for the week. (That probably explains why I spend so much time at the grocery store!) However, this corn chowder recipe is one I keep coming back to, and I think it's pretty much as good as it can be now...with the possible exception of the lobster chaser.

Oddly enough, most of the above does not apply to my baking. I am pretty careful with measuring there, although I am quite willing to make substitutions or additions as necessary...especially when it comes to chocolate and vanilla. I always add more. ;)

BTW-- I am playing around with my signature, since it was the most boring on this thread, so be patient if it keeps changing, like Nancy's. The current pic is DS at WDW a couple years ago. It won't be there long though. If I am going to have a picture of the kids, I have to have both of them.
 
Kathy - the stuffed peppers were a big hit. DH told me to put them in "the regular rotation", which is a compliment. He would have eaten the leftovers tomorrow night, but because of his reflux, I decided to freeze them for later. Thanks for the recipe.
 
I changed my mind yesterday and ended up making crockpot cheesy chicken. We will have the leftovers tonight.

I have field day this morning...doesn't it seem like the same parents do all the work with these things??? I am class mom and find it very hard getting parent volunteers. No one would supply water melon so I had to do it...along with the other stuff I had to pick up...I am venting!!!

Andrew will go to a friend's after school and then have a game...I will make a quick sauce and meatballs, salad and some whole wheat pasta.

PS: Ladies, I will calm down after today. Field day has really been stressing me...along with collecting fora class gift. Its like pulling teeth. Did I tell you guys that my BP went down? I didn't go to the dr though...been checking it at every store machine I can find. Also, they found nodules on my thyroid...I think that is pretty common though.

First, thanks ugadog, I am with Txtink on the meatloaf. I love it! It is not a favorite here though, so I tend to save it for those special occasions when Buddy is persnickety. Between the glazed meats, the meatloaf, and Mexican if I am on a roll......:rolleyes1

Laura, I added the apple cake to my folder. I am going to try that first. I have been reading about subbing eggs and saw that a ripe banana or some blended silken tofu will also work. I am going to try the banana in oatmeal cookies. Thanks for the suggestion regarding an oil wash. I was not sure how to overcome that issue.

I am not sure about dinner tonight. I need to go over the first page and find something that will babysit itself. I am determined to catch up on my ironing today!

I hear you about parent volunteers. It has been the same sine my kids were little and it will probably not change until the field trip get good. I went on more field trips that no one else wanted to go on and then as the kids got older the trips were better. Yea, I never went to New York or London they had a drawing for those :sad2:

Lauren - I hear ya about volunteer Moms. I was Kyle's room Mom all through grade school and it's very stressful. The good news is that when they get into high school it does change. I practically have to beg to help out at school! Glad to hear about your BP!!:yay:

Good morning all----I haven't been around for a few days as we have had some minor family drama going on............: dh grandmother has been in the nursing home for rehab due to a break, and will be leaving in a few days, but can't be alone anymore at night so inlaws are going to move her into their house............so we have been helping get that ready, and moving ds' room there upstairs. Yes this is very nice of them, and a huge undertaking, but it isn't 100% out of the goodness of their hearts,they can't handle money at all ( they had to borrow money from us for christmas for ds's presents, they blow all their money on pez dispensers and hotwheel cars and craft supplies) my dfil owns a small carpentry business which used to be his fathers, and he has run it into the ground which has cause one of his brothers to not even talk to him for years. (yep we acutally side with uncle on this one, in our minds not out loud lol) So to get the house ready for grandma they are using her money (not being quite truthfull to sister (dh's aunt) who is in charge of the finances, but is out of state) to get the room ready for her.....they have not been able to finish their house due to spending habits, and are now using her money to do things that just aren't quite right, and when dmil emails me, she will put somthing along the lines of .....finally going to get my tile floors hehehehe and we will have control of the social security money so that will be paying our taxes.....they took the money and bought new computer monitors because they had to rearrange their living room etc. the money was to make the room comfy for grandma....not finish their house...............there is more, but you get the idea.....so we just nod and say uh huh yep right ok.....and then get in the car and aaaarrrggghhhhhhhh, lol.
So before I end up saying somthing I shouldn't, I am taking a few days and not going over there.......I am going to run errands this morning then I am going to catch up on what I have missed here.

I hope all is well with everyone, I will post to what I have missed later this afternoon when I take some ME time.............dinners around here have been take out, and cereal.............I think tonight since it is rainy I will make sloppy joes with a side salad, and brownies for dessert. I do need to start using stuff in the freezer as we are getting new appliances this summer and I don't want to have to transfer to much over to it.
 
Wendie- I am so sorry about your DH Grandmother and the circumstances surrounding her. It is hard enough for a loved one to be dependent upon another, but to have that person taken advantage of is pretty hard to take quietly. I agree that it is better to stay away a bit rather than say things that cannot be unsaid. :hug:
 
Wendie - don't apologize for venting here, we're here for you.:hug: I agree with Nancy it's a horrible situation but you guys are handling it well.
 
I'm going to go put something in my crock pot. I'm starting a new job in 2 weeks and I need lots of crockpot ideas..... anybody got any favorites?? My new hours are 12-4 so the crockpot and I need to bond.

I meant to respond to your post earlier. I'm using my crockpot today and thought about your post. There is a great sticky thread on the creative community board (it used to be the cooking board I think) and it's all about crockpot recipes. Lots of them! It has lots of links to recipe sites for crockpot cooking too. I'll try to post the link later. HTH! :)
 
Morning all! Ugh, I hate that our laptop is still not functioning! I sure hope the new wireless card comes today so I can Dis while keeping one eye on the kiddos. Last night's dinner was really good. Pasta with asparagus, spinach and bacon.

Tonight is Spicy Basque-style chicken with Saffron Rice:thumbsup2
 
I'm following through with using what's in the freezer this month. Going to clean it out and defrost it.

Tonight we're having BBQ'ed boneless beef short ribs (in the crockpot). I'm putting a few tablespoons of salsa on top for some zip. We'll have coleslaw and baked beans with it. Maybe a pudding/ Cool Whip pie for dessert. I might make some cookies. Paula Deen made some from a cake mix and they looked really good. I'm off the South Beach diet for awhile so what the heck.
 
Wendie--it seems there is someone like you're describing in every family. I dealt with mine when my grandfather passed away. I didn't even get his hat or cane. I'm sure all the antiques promised to me will be sold. So sad. This is definitely the place to vent.

Anyhoo...I"m going to look thru the recipes here and pick one for tonight. It's a busy day with only a few more days of school. DS6 was Wilbur in a Charlotte's Web play this moring. Oh, he just cracks me up! He was there doing the "peace out" thing....he's a little freckled, red(ish) head...it just doesn't quite look right when he does it! :rotfl2:

Morning Y'all,

DH loved Glynis' Roast! DD hasn't tried it yet, her sweet DH was trying to help out & "cooked" spaghetti (out of the jar of course!) But she was thrilled to have me freeze it for her to not have to cook later in the week. She still sounds super-stressed & I now realize I could have been helping her more by freezing some dinners for them. I feel like a rotten Mom not to have realized it sooner. :sad2:

Glynis' roast was delicious & I really wished I had made mashed potatoes instead of rice. But then I would have eaten myself sick on it for sure!

Lauren, I can see I'll be complaining with you about school volunteers! It's really hard not to do too much, but when you know it won't be done if you don't do it... Like today. DS10's class wanted some snacks to take outside while they get their class yearbooks. I was ready to send in one thing, until I knew no one else was sending anything. So....raced to the store this morning..

Thankfully, our Field Day and Fun Day are over. School's out on Friday, but I'll still be complaining all summer, since I'm PTA co-pres next year. I'm thinking there will be something I have to do over the summer.
