I forgot to mention earlier that I treated myself while in Louisville. I went shopping and got the new South Beach Diet Quick and Easy Cookbook. 200 recipes 30 min or less. I haven't gotten that far into it yet, but what I have seen I'm sure there'll be some posted on here!

Dinner tonight is meatloaf (a recipe the kids love because it's slightly sweet),.
I am about an hour or so to the north. If you look at the MA/CT border you will see Hartford then a little further north is Enfield. We are west of Enfield, right where there is the little notch in CT. West Suffield.
You are going to love Mystic. Make sure that you go to Abbots in Noank for a shore dinner.
Lauren- I know that you are not going to listen, but I wish you would calm down a little. You are going to make yourself ill with the worrying. I wish that you had answers about your Mom, the waiting must be awful. The rest is going to fall into place. I don't know how it happens, but it does. Meatloaf is a guilty pleasure of mine! I love the stuff, I think it reminds me of my childhood!!Pam's Meatloaf
1 1/2 pounds ground beef
1/2 cup brown sugar
small can tomato sauce
one sleeve Ritz crackers, crushed
medium onion, chopped
1 tsp Worcestershire (sp?) sauce
2 beaten eggs
salt and pepper
Optional: spread top with tomato paste in the last 20 minutes of baking
Mix all ingredients together and pour in loaf pan. Bake at 350 for 45 minutes-1 hour.

Corn and Cheddar Cheese Chowder
1 large potato, peeled and diced
2 cups chicken stock, hot (I also add a boullion cube)
1 bay leaf
1/4 tsp. dried sage
1/2 tsp. cumin seeds (I almost never have these, so I just use ground cumin)
3 tbsp. butter
1 onion, finely chopped
3 tbsp. flour
kernels from 2 ears of corn (the original recipe calls for two cups of corn...it took three ears today)
1 1/4 cups heavy cream (I used a combination of light cream and milk. Light cream into the flour mix, then milk to thin)
4 oz. sharp cheddar cheese, grated
salt and pepper to taste (didn't need salt with the boullion)
1/2 cup white wine (I only used about 1/4 cup wine)
Chopped parsley
Chives, for garnish
Boil the potato in the stock with the bay, sage, and cumin until just tender, about 15 minutes. Remove the bay leaf. In a seperate saucepan, melt the butter and then saute the chopped onion until softened. Add flour and stir for two minutes. Add the cream or milk, and whisk until the flour isn't lumpy and the mixture has thickened. Add to the stock and potatoes and stir until smooth. Add the corn and the chopped parsley. Thin with milk if necessary. Gently simmer 10 minutes. Add the wine and the cheese and stir until cheese is melted. When ready to serve, pour into bowls and top with chives.

It was really good, although I was kind of wishing it was an appetizer before a main course of a crab cake or a lobster roll. Of course, we can't have those because Liam is severely allergic. However, this soup was crying out for shellfish tonight.
What other egg-free recipes do you have? I'm always looking for great tasting egg-free recipes since I developed an egg allergy a few years ago. If only you could make an egg-free pound cake.![]()
It looked so yummy, but with lobster "anyway", roll, steamed along side it would have been heaven!![]()
