I forgot to mention earlier that I treated myself while in Louisville. I went shopping and got the new South Beach Diet Quick and Easy Cookbook. 200 recipes 30 min or less. I haven't gotten that far into it yet, but what I have seen I'm sure there'll be some posted on here!

WFD? Grilled chicken, Rachael Ray's Thanksgiving mushroom stuffing and canned cranberry sauce on the side. I don't know why, but that is what I was craving and it turned out very yummy.
 
I am about an hour or so to the north. If you look at the MA/CT border you will see Hartford then a little further north is Enfield. We are west of Enfield, right where there is the little notch in CT. West Suffield.

You are going to love Mystic. Make sure that you go to Abbots in Noank for a shore dinner.

Lauren- I know that you are not going to listen, but I wish you would calm down a little. You are going to make yourself ill with the worrying. I wish that you had answers about your Mom, the waiting must be awful. The rest is going to fall into place. I don't know how it happens, but it does. Your wedding will be lovely, you will be gorgeous the men in your life handsome and adoring, and your Mom will have a dress. :hug:

Well I bettter get to figuring out what for dinner.
 
Dinner was okay this evening. I got the recipe for the roast pork off of Allrecipes and ended up running out for apricots. We liked it but not enough to add it to my rotation.

We had mashed potatoes with olive oil and chicken stock, brocolli with garlic and olive oil, corn and a sauce made with the drippings and prunes and apricots.
 
Pam's Meatloaf

1 1/2 pounds ground beef
1/2 cup brown sugar
small can tomato sauce
one sleeve Ritz crackers, crushed
medium onion, chopped
1 tsp Worcestershire (sp?) sauce
2 beaten eggs
salt and pepper

Optional: spread top with tomato paste in the last 20 minutes of baking

Mix all ingredients together and pour in loaf pan. Bake at 350 for 45 minutes-1 hour.
 
WFD-chicken wings with a made up sauce(we'll see how it turns out then I'll tell ya!), rice w/ butter and herbs, celery to dip into made up sauce!

Meatloaf is a guilty pleasure of mine! I love the stuff, I think it reminds me of my childhood!! :)

Is your chowder recipe posted here?

DSis posted it a while ago, but I make some changes. In red.

Corn and Cheddar Cheese Chowder

1 large potato, peeled and diced
2 cups chicken stock, hot (I also add a boullion cube)
1 bay leaf
1/4 tsp. dried sage
1/2 tsp. cumin seeds (I almost never have these, so I just use ground cumin)
3 tbsp. butter
1 onion, finely chopped
3 tbsp. flour
kernels from 2 ears of corn (the original recipe calls for two cups of corn...it took three ears today)
1 1/4 cups heavy cream (I used a combination of light cream and milk. Light cream into the flour mix, then milk to thin)
4 oz. sharp cheddar cheese, grated
salt and pepper to taste (didn't need salt with the boullion)
1/2 cup white wine (I only used about 1/4 cup wine)
Chopped parsley
Chives, for garnish


Boil the potato in the stock with the bay, sage, and cumin until just tender, about 15 minutes. Remove the bay leaf. In a seperate saucepan, melt the butter and then saute the chopped onion until softened. Add flour and stir for two minutes. Add the cream or milk, and whisk until the flour isn't lumpy and the mixture has thickened. Add to the stock and potatoes and stir until smooth. Add the corn and the chopped parsley. Thin with milk if necessary. Gently simmer 10 minutes. Add the wine and the cheese and stir until cheese is melted. When ready to serve, pour into bowls and top with chives.

Serves 4

It was really good, although I was kind of wishing it was an appetizer before a main course of a crab cake or a lobster roll. Of course, we can't have those because Liam is severely allergic. However, this soup was crying out for shellfish tonight.

It was really good, although I was kind of wishing it was an appetizer before a main course of a crab cake or a lobster roll. Of course, we can't have those because Liam is severely allergic. However, this soup was crying out for shellfish tonight.

It looked so yummy, but with lobster "anyway", roll, steamed along side it would have been heaven!:cloud9:
 
What other egg-free recipes do you have? I'm always looking for great tasting egg-free recipes since I developed an egg allergy a few years ago. If only you could make an egg-free pound cake. :rolleyes:

I can't give you a pound cake recipe, but here's one for apple cake:

Dairy Free Apple Cake

1/2 cup vegetable oil
2 cups sugar
1 cup applesauce
2 3/4 cups flour
1 1/2 tsps baking soda
2 1/2 tsps baking powder
2 tsps ground cinnamon
2 tsps vanilla extract
3 apples, peeled, cored and chopped

Preheat oven to 350. Butter and lightly flour a 12 cup Bundt pan. Tap out excess flour.

In large bowl with wooden spoon, stir in one at a time oil, sugar, applesauce, flour, baking soda, baking powder, cinnamon and vanilla. Fold in apples one at a time until completely mixed. Batter will be very thick.

Spoon batter evenly into pan. Bake 50-60 minutes until brown on top and tester comes out clean.

In general, I have found that eggs can be substituted in a number of recipes by a Tbsp of oil. I've had pretty good success doing this with cookies, and I also do it if a recipe calls for dipping something in egg before breading. I just dip it into a water and oil wash.

Lobster does make everything better. I can't believe we live in New England and my son is allergic to lobster. I guess I'll have to try to get out to eat sometime this summer to have it. I'll even change my clothes before hugging him.

Nothing too exciting, but it was yummy.

Thanks for the updated recipe & all of the "real life" tips! It sounded so good I should have known it was one of your sis's recipes!!!! I have a hard time giving out recipes that I've used because I just can't follow the recipe either cus I don't have the ingredient or it just doesn't taste right, so I add this or that! It does sound like it would be extra special with some crab or lobster on top, but definitely wonderful without it!
