Jenny -- another congrats to your son. I hope you have a great summer!

Well, we did hit the Farmer's Market, and I bought a quart of strawberries, which is now completely gone. They were moan-inspiring good. For dinner, I had chicken salad on fresh greens and native tomatoes and this awesome fresh-baked bruschetta bread (from the market) with an olive oil dipping sauce.

And now for the funny story: the kids and I were coming back from my dad's and they were talking in the backseat. I don't know how it came up but here's the transcript:

Caili: I'm living in Mommy's house when I get big.
Liam: I'm living next door, and you can't live with Mom.
Caili: YES I CAN!
Liam: Uh, no you can't. You have to have your own house when you get big.
Caili: No, I don't! Uncle Bob [my brother] still lives with Mommom!
Liam: Um, yeah, but he didn't get married.
Caili: I don't want to get married.
Liam: I'm going to get married.
Caili: You are?
Liam: Uh, yeah...I don't want to clean the house.

WTH??? I always knew Liam liked Cinderella, but I didn't know that the attraction was due to her housekeeping and cooking abilities. If he wasn't eight, he would be mopping the floors tonight.
 
Hey all!

I know I may forget something but wanted to check in...I am sitting here suckin' on Crest Whitestrips, itchin' up a storm and now I have a nice big cat scratch on my arm. The rocket scientist that I am, decided to have the cats groomed today (shouldv'e waited til after next) but one of those mobile grooming places. They normally do do not groom cats but with the owners help they will do what ever they can...well, both Niki and Sasha were horrible. Sasha went first and was bad but Niki was worse...was only groomed for about 5 minutes before we had to stop but after she got my arm!!!

Anyway, we loved the Stromboli. Thank you Jenny for sharing the idea. Next time I will try different variations too. :thumbsup2

Evening, friends! I made my own loose translation of Giada's Italian Baked Chicken and Pastina My changes: I don't really measure anything, I doubled this recipe and put it in a 9x13, I used a pound of pasta, diced tomatos with garlic and herb seasonings, I heavily seasoned the chicken with italian seasoning, plus I added fresh mushrooms and sliced black olives. We served it with garlic cheesy bread.

I took a picture of it and will post soon!

Italian Baked Chicken and Pastina Recipe courtesy Giada De Laurentiis

1 cup pastina pasta (or any small pasta)
2 tablespoons olive oil
1/2 cup cubed chicken breast (1-inch cubes)
1/2 cup diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5-ounce) can diced tomatoes with juice
1 cup shredded mozzarella
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup bread crumbs
1/4 cup grated Parmesan
1 tablespoon butter, plus more for buttering the baking dish

Preheat the oven to 400 degrees F.
Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until just tender, stirring occasionally, about 5 minutes. Drain pasta into a large mixing bowl.

Meanwhile, put the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more. Put the chicken mixture into the bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt, and pepper. Stir to combine. Place the mixture in a buttered 8 by 8 by 2-inch baking dish. In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake until the top is golden brown, about 30 minutes.

Today I'm having pork ribs that I cooked in the croc pot with bar-b-cue sauce, onions, brown sugar and a little bit of orange juice!
 
Yesterday while at the grocery store I stocked up on everything I thought I needed for Glynnis' pot roast. Guess what, I forgot the meat!:rotfl2: Yup I go back to the store again and probably spend $50.00 on the meat and other things I forgot I forgot to get. I even had a list this time.

liamandcaili Your kids are so funny. Alex says something similar He thinks his wife and he are living with me:rotfl: I told him they will not want me around but they can come visit.

I finally have a recipe to share

Artichoke Bruschetta
1 6.5 oz jar marinated artichoke hearts,drained and chopped
1/2 c grated romano or parmesan cheese
1/3 c finely chopped red onion
5 tblsp mayo
1 french baquette cut into 1/3" slices

preheat the broiler. in a medium bowl mix artichokes, cheese, red onion and mayo. top the bread slices with equal amounts of the the mixture. place on a baking sheet. broil in preheated oven 2 minute or until topping is bubbly and lightly browned.

You can added chopped tomato and spinach too.


I could eat that stuff with a spoon
 
After starting this tracking I started looking up the things I love to eat:scared1: and you wouldn't believe it! I've probably been eating more than 4000 calories!:eek:

Oh well, I guess I should be telling this to the WISH board, but I know ya'll too well.:grouphug:

We had burritos tonight. I made a double batch of sloppy joes so I had enough to make the burritos.

I am holding this thread responsible for any cleaning I don't get done! I would blame it for not getting dinner cooked but then I would have to clean :lmao:

I was thinking about turkey burgers but now I am hungry for burritos.

I'm really proud of him..His grades were not great this year,but he spent the whole year spending recess and free time working with special needs kids and the special needs teacher was going on and on today about what a great job he did.


Jenny- it is not all about grades. Your DS spent a year learning how to extend himself to others. It is one thing to test well, it is another to put all of those lessons to the test.

Whew---I just did a quick read through on what I missed yesterday.....I am heading up to school for the last day events....step up, class awards etc etc School is out at 11am so it is a hustle bustle morning there, lol.

Last night I ended up grilling chicken thighs, portobellos, eggplant & bell peppers. I coated the veggies with olive oil, chopped garlic & salt & pepper. I marinated the thighs in Morrocan type seasonings. Very yummy.

Tonight I'm going to do Ropa Vieja & serve in tortillas with some black beans, guacamole & salsa.

The contractor is coming tonight to sign the contract. We have decided to cut the kitchen renovations way back for now. We're going to fix the fridge problem, change the wood to tile floor, tile the backsplash & change the ugly light. No furdown or cabinet removal for now anyway. The price is finally a lot better. Around $6500. Should be easy as far as renovations go anyway!

Thanks for the well wishes, everyone. Still feeling funky, major sinus headache today.

Jenny - I'm sure you must have been really proud. Good grades are nice, but are absolutely no competition for good citizenship. It speaks very highly of both you and your husband for your son to volunteer like that during an age where peer approval is so very important.

Lauren - Lock yourself immediately in your room and do not go out of it until Sunday! Do not leave the house. Do not turn on the stove. Do not touch the cats. For heavens sake woman, be careful. You have spent so much time, energy and money planning this wedding, it would be terrible for you to look like a war refugee in the photos.

Well, today is getting hair dyed, A's hair cut, packing up the candy buffet to bring to the hall and writing place cards...so we are having hotdogs and I have no idea what else. Andrew loves those NY onions so maybe them....:)

Actually, I'm really fortunate to have a good husband who feels that I shouldn't have all of the household responsibilities. He can't cook, and he loves to eat, so he was glad to agree to dish duty if it meant a home cooked meal for him.

Gretchen, I really appreciate hearing that you like the kitchen! It helps to not feeled bummed about not doing more.

In fact, Everyone's comments has really helped DH & myself realize that with other remodeling expenses looming, we only need to be fixing what's broken not what ain't!!!:grouphug:

BTW, Here is a pic Alexis took of me talking with the contractor. Because the kitchen is a small job & he does the tile himself, he'll be doing all of the kitchen work himself. So as y'all can see, I don't think I'll be too miserable with this guy working in my house! :rolleyes1
