Looks like I'll be making some kind of pasta and meat sauce tonight. DH (aka Mr. Unreliable) probably will forget that he said he'd get the propane tank filled, so no fajitas again.
 
Jeez, the DIS is slow today!

I have country style ribs in the crockpot...I parbolied them yesterday in vinegar and water and marinated them. I just poured bbq sauce on top. I found a great bbq sauce called Bone Suckin Sauce...its really yummy.

We will probably have salad on the side.

Wedding Update: We are meeting the pastor tonight for pre marriage counseling...he may not want to marry us seeing we are crazy!!! :joker:

Kathy, The Velvet Chicken was great! I even messed up the recipe by not putting the green onions...I bought them but I think I left them at the store!!! They somehow disappeared! :confused3

I think my DH is right there with yours. I asked him to do 2 things for me this morning before he went to work and guess what? Neither one got done!:rolleyes1

I found a low salt muenster...it was really really good...I can't wait to try it with the green onion...I may even make 2 batches next time and do mine with the shrimp.

I am in the same boat with you and Sandy...DF always forgets to do stuff that I ask. The other day he complained that I left a couple newspapers all over the family room...I said that I will clean up my mess when you get your dirty remote control car off of my kitchen table...yes, dirty, gas drenched rc stuff all over my house!!!! I finally got him to stop using the dining room table as a work bench at least...MEN! You got me started. :)

Tonight I am making spaghetti with a sauce of roasted cherry tomatoes, roasted garlic, basil, and red pepper flakes. A big salad to go with and also a baguette. I don't know why I have to have bread with my pasta, but I just do. Total carb overload!

Shovan, I agree that brussels are best roasted. I do them at 400 for about 20 minutes, depending on their size. The outside gets crackly and brown, and the inside is tender-crisp and sweet. Yum!
 
OK gals - if any of you are into "Easy" weeknight recipes as I am, the one I did tonight is for you. I got it from the last issue of Kraft food & family magazine, it's called Pork Medallions Alfredo. It's literally done in less than 30 minutes. If you don't have the magazine and are interested let me know and I'll post it.
 
We had the Italian Drip Beef in the crockpot- wonderful on buns with french fries and lemon meringue pie for dessert.

back to the brussel sprouts, I ordered a veggie platter and dips from a catering company recently and it had brussels on there, they were lightly steamed I believe with lemon butter and they were SOOOO YUMMY!!! AT first I was like what the HECK is this and she told me just try it, you will be amazed and I totally was, everyone LOVED IT!!! She also had small tiny new potatoes, which I also thought was strange, but once again everyone loved it!

Sheryl - I always oven roast brussel sprouts with a little EVOO, salt & pepper. They come out so sweet.

Glynis - mac & cheese pizza???? Tell me more!

It's kind of a family original. I make boxed mac and cheese and spread it on a pizza plate. I bake it for a little while, and then top it with pizza sauce and pepperoni and olives. You could add any pizza toppings you want. It doesn't really hold it's shape like a pizza, but it's something my kids will eat.

I've browsed this thread many times and tonight it came in handy! I had planned on making a specific chicken dish and did not have the ingredients. I hopped on here and ended up making the Parmesan Ritz Chicken and we thought is AWESOME! Thanks so much for a wonderful thread. DH said he was marking it as his new fav chicken dish :cool1: I think I will stop around more often and get new ideas. I usually cook 5-6 nights/week and could use some new recipes!

I have tried using Splenda in a few things to cut back on the sugar, just be careful not to use to much. It has worked well, but it's easy to overdue it with the Splenda.

Since DS18 is home on spring break, I made Easter dinner for us:
baked ham (shank portion--DH loves the look of the pineapples, cherries & cloves on it!) basted with a spicy mango chutney sauce; mashed potatoes; sweet potato pie; honey cornbread muffins; assorted applesauces; Le Seur peas (DH's favorite :laughing: ) & Paula Deen's Pineapple Casserole posted by LuluLuvsDisney on page 410. and if you want to make that Easter ham later on, this is a *great* dish to do along with it.

It sounds completely bizarre, but just close your eyes and eat it with the ham and you will love it!!!

Paula Deen's Pineapple Casserole

1 cup sugar (I use 3/4 cup)
6 tablespoons all-purpose flour
2 cups grated sharp cheddar
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs (recommended: Ritz) (It comes out to about 1 "sleeve", possibly slightly more, depending on how fine your crumbs are)
8 tablespoons (1 stick) butter, melted, plus extra for greasing pan

Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish with butter.

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

I used 1 can crushed pineapple & 1 can chunks. I also threw in some homemade spicy, chunky pineapple sauce w/ minced candied ginger

Update on my shoulder: it is doing SOOOOOOOOO much better. I am actually seeing a kinesiologist. I was referred to him by a very good friend (who is also my trainer. She recognized it as a possible work-out injury and told me to give him a try). Anyway, I am doing a LOT better. The pain is not gone completely, but life is much easier now. I'm not yelping "ow-ow-ow" with every move I make :lmao: I haven't worked out at all this month. With not having a car for a few days then hurting my shoulder, I have been taking a break. I worked out with an injury for OVER a month, and by dang I am not going to cause a relapse. So I am going to speak to my boss today. Let him know I am taking the rest of April off (work-out wise, not actual work) to rest my shoulder. ETA (again): for those of you who don't know, I actually work at the personal trainer studio I train at.

Kathy- I like the Kraft magazine. There is a cake in there that I am going to try over the weekend- the one with the red jello added to the batter. It looks pretty and so ...........this is for you, Madame :worship:........EASY.

Jean- Thanks for posting the casserole here. My DD checks this thread every day to see what we are having for dinner and keeps teasing that I want to make it. I bought the ham Monday so I will have it on hand when I am ready.

Kathy, Lauren and Sandy- I am rowing in your boat as well. I have asked DH to fill our propane tanks since before the snow and now there are three empty. He also leaves his treasures all over the house but cannot understand why I would have a problem with this. After all it is only his clothes, shoes, boots, newspapers, lottery tickets, receipts, farm tool (yes I said farm tools) .....on and on and on. But God bless the man....he rinses his cup out every morning and leave it in the sink and then actually smiled like he won the lottery when a friend complimented him because he was so neat :faint:.

Back to dinner. I don't know what we are having. I should use the leftovers but I have some chicken in the fridge so we'll see.
