Hi All!

I am picking up my baby today!!! :cool1: :cool1: :cool1: :cool1: :cool1:

Then we are heading up to North Jersey to go to my sister's house for my neice's bday party. I think sis said she is having lasagna...which I can't eat so hopefully she'll have a nice big side salad!!!

Have a great day...I am running with my 4 legged baby (Nikita 1 year old Siberian cat) to the vet...she woke up with something wrong with her eye...let's hope its just a cold.
 
Good Morning everybody!

I am fixing a chicken pot pie with cranberry sauce. I checked the freezer to see what I had and was surprised to see that with the exception two roasters, a little package of ground beef and one big turkey I have managed to get through the meat I had on hand. This is huge because I always am trying to use it up but then get caught up in a sale. Really stood my ground here :thumbsup2.

Now I have to be a bit more vigilant in the pantry.......
 
Lauren - I'm so happy for you!! That should be one happy reunion.:love:

Nancy - I have to start clearing out my freezer as hurricane season is approaching.:sad2: DH never wants to go through what he did after Katrina again. DS & I were still in Texas, where we evacuated to and DH came home to one nasty freezer full of blue & green stuff!!:eek:

My DIS is running unbelievably slow this morning! Aaagh!

Lauren, hope your cat is okay! I know you'll have a good day though, you get your baby boy back today!!!

Nancy, Good for you! I'll have to make sure & use all of the seafood I had stocked the freezer with for Lent.

Kathy, you read my mind on that one! Last year I hardly put anything in the freezer, but I've fallen back into my pre-K habits with shopping. Gotta start using it all up. I never want to smell rotten seafood EVER AGAIN!!!

But I really feel like having some meat tonight! I think I might do some filets with a Chimichurri Sauce. Just have to figure what to have with that.
 

Kathy- I never gave the hurricane season a thought, I'm embarrassed to say. I cannot imagine what you and Sheryl, along with the others who came home to freezers full of :scared1: had to deal with. I was simply tired of tossing food out because it had drifted to the bottom.

Lauren- how did your kitty make out? And a happy reunion with your DS!

Sheryl- I am looking forward to beef. My DD won't eat it so I rarely cook it, but I promised Daniel a prime rib when he comes home. I honestly don't know why he wants it, the chef where he works keeps him in food that I rarely can justify, maybe he misses Mom's cooking a little?
 
Morning, everyone! It's a cold day with snow showers forecast for this evening. So, I'm making a white chili with chicken. I'll probably also make some cornbread and a large salad. Got to run to the store for cucumbers!!!

I also have to make a batch of cupcakes for DD to take to a church activity, so I'll probably make a double batch so my family can have some, too!

Don't be concerned about not thinking about hurricanes. I know before the big one hit, we never believed it either! We are used to having to evacuate for a couple of days, but to be kept out for weeks was a shocker to us too!
My home actually had very little damage compared to most around here. But 2 fridges sitting unopened for weeks is so unbelievably nasty, you can't imagine! Ugh, never want to go through that again.

TigerKat, Funny you mentioned clearing out your freezer. I was just thinking about that yesterday. Two years ago, we were without electricty for 10 days due to a Hurricane in South Florida. :eek: I've gotta use up some stuff!
 
Lauren, glad to hear your baby is coming home, but quite frankly my dear, if you can watch your family eating lasagna and just eat salad, you have more willpower than I will ever have. (Which may explain how I found those pounds you lost).

Kathy, we all loved the pork tenderloin last night. I made more than the recipe called for so DH could take some to his Mom and Stepfather. She is still recovering from her foot surgery and doesn't need to be on her feet cooking. She called me last night and said the dinner was wonderful. DH asked whose recipe it was while I was cooking it and I said "Kathy's" and he wanted to know "That good shrimp Kathy?" (Velvet Shrimp). He said "well I'm sure it's going to be good then."

Tonight will be take out. I am waiting on a FedEx package with the tax information for my last straggler. I will need to complete that return and FedEx it back out tomorrow so he will get it on Friday before they go out of town. This is the last return thankfully, so I should be back on track by tomorrow.

We had a fridge and a chest freezer for the big K. And the freezer had frozen escargot. Needless to say DH was a wonderful (still is!) man and cleaned it all out!:love: Although I was regaled with stories of snails re-animating. :snail: :crazy2: Coulda done without that!

Yesterday Sheryl mentioned the crepe recipe. I found it if anyone wants it. It's from a New Orleans restaurant- Muriel's at Jackson Square. I use premade crepes though.

Muriel's Crawfish and goat cheese crepes

Makes 3.
Crawfish Sauce
1 oz yellow onion, diced
1/2 oz bell pepper, diced
1 oz tomato, diced
1/4 tsp garlic, chopped
1 tsp Creole seasoning
4 oz Crawfish tails
1 oz white wine
1 oz unsalted butter
1 Tbsp oil
salt and pepper

Crepe filling
3 oz goat cheese
2 oz cream cheese
1/2 tsp shallot, chopped
1/2 tsp chives, chopped
1/4 tsp salt
1/4 tsp pepper

For crepes: Mix all ingredients together, pipe into three crepes and roll.
For sauce: Place oil in saute pan over medium high heat. Add onions and peppers and saute until softened. Add tomato, garlic, and Creole seasoning, saute 30 seconds. Add crawfish, saute 30 seconds more, then add white wine. Reduce slightly, then add butter. Adjust seasoning with salt and pepper and pour over warm crepes.

Whoa! - last minute change in dinner plans. DS just told me he's pitching tomorrows varsity game so Easter leftovers will be tomorrow night. Now I'm doing an Italian Sirloin & Penne Pasta dish, peas and a salad. Better get a move on........:moped:
 
DH is staying at work due to the approaching snow storm--so take out! :woohoo:

Jean, It's hard to believe that it's still Winter for a lot of you. Stay warm. Our weather is back up into the 80's today. Although we did have sleet here on Saturday! But that was a VERY unusual occurence here in the deep south.

Sheryl - can you share the recipe for the potato salad? And do you par-boil the artichokes before grilling them? I've never grilled them before, but I have had them and they are delish!!
